The original Painkiller cocktail recipe is truly a tropical cocktail, hailing from the famous Soggy Dollar Bar in the British Virgin Islands. Bartender Daphne Henderson was working in the early 1970s at the little bar overlooking White Bay. Customers had to swim up to the beach as there is no dock for their boats!
Looking for a way to cure what ailed her customers She came up with the Painkiller, a creamy, citrusy riff off of another coconut cocktail, the pina colada.

It depends on your preference! I personally like the flavor of dark rum better than white, but white rum is better for if your drink is light in color and you want it to stay that way.

Three Dots And A Dash
This cocktail is an absolute tiki classic. Invented by Donn Beach, the name means Victory in morse code. Its also the namesake of the incredibly popular tiki bar in Chicago.
It contains three types of rum, so might be a tough one to make at home. But take a closer look at the garnish: three maraschino cherries and a piece of pineapple. Its a symbol of the drinks namesake.

How To Make Mimosas
I usually fill my champagne flute about two-thirds full with champagne and top off with about one-third of the mango nectar. I like to garnish my mango mimosa cocktail with a strawberry slice and a mango slice, just because.
You can also make pitcher mimosas if youre serving them for a brunch event or party. Just use the same bubbly to mango nectar ratio. Cheers!

The 3 Sheets To The Wind
Dont be alarmed, theres no rum in this drink. Crazy I know, but Mexico also borders the Caribbean and I think its only right we toss some tequila into this party.
The 3 Sheets To The Wind is named after both that famous state of mind when one has a little too much cocktail fun, and one of my favorite old cable shows, 3 Sheets, starring Zane Lamprey. The show, as you can probably guess, was about a guy traveling the world while enjoying the local drinking customs. Tell me thats not a bad gig!
- 2 oz. Tequila
- 1 oz. Lime juice
- ½ oz. Agave nectar
Mixing Instructions: Add all ingredients into a mixing glass with ice. Shake well. Pour into rocks glass with ice, rimmed with salt. Raise glass and toast.
Tips For Making The Best Mimosas
Since there are so few ingredients in this mimosa drink, its important that you buy a decent quality bottle of prosecco or Champagne. I totally understand if you dont want to splash out the big bucks, but its worth the few extra dollars to buy a nicer bottle of bubbly.
Mango nectar or mango juice can be found at almost any grocery store alongside the other juices.
If making a mimosa pitcher, wait until your guests have arrived to quickly assemble the cocktails as the prosecco loses its fizziness over time.

Variations On The Malibu Bay Breeze
There are lots of variations on the Malibu Bay Breeze, and a few other tropical cocktails and beach drinks that use similar ingredients! Here are a few more to try:
- Try the famous Sea Breeze with vodka, cranberry and grapefruit juice
- Opt for a straight-up Bay Breeze with vodka, cranberry and pineapple
- Go for a Madras with cranberry, orange, and vodka

Rum & Coconut Iced Coffee
One Grande Carmel Frappuccino, hold the whip please. Im no coffee drinker. That foo foo frappuccino is about as close as I come to coffee drinks.
But the Rum & Coconut Iced Coffee is a new best friend. Even the name has a smooth and delicious sound. Hold on to your flip flops because it tastes even better than it sounds.
The recipe consists of coffee, coconut sugar, rum, coconut milk, with optional coconut cream and toasted coconut shavings. I told you this was going to be good! For the rum, Papas Pilar dark works well. Its smooth rich flavor compliments the coconut milk and coffee perfectly.
- 1 ½ oz. Shot of good rum
- ¼ Cup coconut milk
- 2 Tablespoons toasted coconut
- Whipped coconut cream
Mixing Instructions: Brew coffee and stir in sugar as needed. Set it aside to cool slightly. Fill a large glass with ice and add rum. Add the coffee and the coconut milk or non-dairy beverage. Top with whipped coconut cream if desired and then sprinkle with toasted coconut. Raise glass and toast.

Pia Colada Jello Shots
Jello shots are a fun variation on cocktails, and coconut rum makes fantastic jell-shots because it blends so well with the various flavors of gelatin. Blending it with pineapple gelatin and pineapple juice makes a tasty Piña Colada flavored version. This makes 12 shots.
- 1 box pineapple flavored gelatin
- 1 cup coconut rum
White Russian With Coconut Rum
Of course, I always think of the Big Lebowski when I drink a White Russian. Which is crazy since I havent seen that movie in about 100 years.
So I decided since I was using coconut rum in my cocktail, that I would turn it into a Vegan White Russian and use coconut milk too.
Now the recipe is non-dairy and has this lovely touch of coconut flavor but has that great coffee flavor from the Kahlua.
It is really SO simple. And only needs these three ingredients!
Over the years Ive made lots of variations of White Russians. Be sure to try them all!
Of course, you can just call this a Coconut Rum White Russian. But sometimes I like to give my drink recipes a name.
I call this one, The Little White Lie. Because it looks just like a regular old iced coffee. But its not. Its more awesome.
And its perfect for brunch.
To be clear, I would not drink this and tell my kids it was iced coffee.
If I am responsible enough to drink a cocktail I am responsible enough to have those conversations with my kids.
And quite frankly, I dont drink a lot of brunch cocktails because when you get old like me, they just make you sleepy.
