Sipping straight spirits on the regular may not be everyones plate of poutine but Beehan insists theres a serve for all.
Yielded in a Whiskey Sour or Whiskey Smash, the additional sugar and citrus of those drinks help tame ryes rougher edges. The Whiskey Smash is such a beautiful drink, he says. If you muddle the lemon, you get the oils and the juice. Add some mint in there: Its fresh, its lively, and a really nice way to start appreciating rye.
But Beehan remains a cocktail classicist at heart, and for his loonie, theres nothing as magical as a Manhattan. Theres the historical connection to start, with the golden age of cocktails coinciding with an earlier boom in rye production, he says. Then theres the Manhattans adaptability as a template.

How Rye Is Made
For a spirit to call itself American rye whiskey, it has to conform to a strict set of legal regulations. First, the mash has to be made up of at least 51 percent actual rye grain. The bill’s remaining 49 percent usually winds up being a blend of corn, wheat or malted barley.
Second rule: Certified rye whiskey’s initial booze content can’t be any higher than 160 proof . After all that sweet, sweet liquor has been extracted from the fermented wort, it gets diluted down to no more than 125 proof, or 62.5 percent ABV. Then the liquid gets piped into charred , new oak barrels and left untouched to age.
For straight rye whiskey, you’re looking at a minimum of two years maturation time, though many distilleries choose to let it sit around a little longer for a richer, more complex product. Whiskey writer Clay Risen was having a discussion with his publisher about the look of his upcoming book, a study of rye whiskey, due this fall. His previous volume about American whiskey had had a black cover. A subsequent book on Scotch had a blue cover. What shade should the rye book be?
When I was talking with the book designer, there wasnt much discussion, says Risen. The book cover was going to be green.
Risen and his publisher were only following the lead of nearly every rye producer who has launched a bottle during the great rye whiskey revival of the past decade or so. Stroll down the rye aisle at any liquor store in America and youll be seeing green. The labels of Bulleit, Woodford Reserve, George Dickel, Jack Daniels, Michters, Knob Creek, Crown Royal, Elijah Craig, Hudson Whiskey, Ezra Brooks, Wild Turkey, WhistlePig Farmstock, Basil Hayden are all either full-on green or have a signifying touch of green somewhere in their design. Even old rye brands, like Jim Beam, which used to have a yellow label, have gone green. And the trend has crossed the ocean. When Johnnie Walker recently came out with its High Rye blended Scotch, the company took green as its color.
Its become sort of associated with it, says Noah Rothbaum, a spirits writer, whiskey expert, and the co-editor of the recent Oxford Companion to Spirits and Cocktails. Rothbaum notes that there is little to no historical precedent for this modern phenomenon.
