I use the bigger Spanish Queen pimento-stuffed olives. The smaller manzanilla olives are a good stand by, if you cant find the big Spanish ones. If you are feeling extra daring and want to really dirty things up, remove that pimento, and hand-stuff some bleu cheese into those Spanish olives!

This is a bianco vermouth, which is a dry vermouth with just a hint of sweetness added not so much that it becomes a sweet vermouth, but not bone dry, either. This hint of sweetness brings balance to the olive brine in a dirty martini while its citrus notes and aromatics work well with the profile of the Drumshanbo gunpowder gin for a beautifully balanced and aromatic dirty martini. A wet martini, on the other hand, is equal amounts of vodka and vermouth, but Im not fond of the wet martini.
You will see in the recipe, and especially in the photo, how little vermouth I use. And that amount is for 2 cocktails. Sometimes, if I want the barest minimum, I pour a tad in the martini glass, swirl it around to wet the sides and dump the vermouth in the sink.

Sure that Ina Garten martini glass is impressive, but a smaller martini glass is a better choice. The small glass helps to keep that martini chilled longer. Also, chill the glass first.
