Its a great appetizer for those just venturing into the world of mezcal. Fidencios Clásico, however, is a more potent version made in the traditional manner, with its agave hearts first roasted in underground pits. Its distilled to proof at around 46% ABV. Made from organically farmed agave like its smoke-free counterpart, Clásico takes on a peppery, spicy minerality that gives it a lovely complexity. Drink it neat, or let it really punch through and announce itself as the backbone of a citrusy cocktail.

Unlike the wider mezcal category, which encompasses spirits made from upwards of 30 different types of agave, tequila can be made only with blue agave in just five Mexican states. Production methods differ as well. Whereas the agave for tequila is steam-roasted, agave for mezcal is often pit roasted, giving it a smoky flavor.

Located about sixty kilometers from Guadalajara in the state of Jalisco, Santiago de Tequila is where much of the original distillation of the blue Weber agave plant took place, and centuries-old distilleries are still in operation there today. The town is also the location of the Museo Nacional de Tequila , and is the hub of most of Jalisco’s tequila-based tourism.

Tequila is a distilled alcoholic beverage made from the blue agave plant in Mexico. According to Jewish law, alcohols that are distilled are not kosher for Passover. However, there is a debate among rabbis as to whether tequila is considered distilled. Some rabbis argue that tequila is not distilled because the agave plant is not a grain, and therefore the alcohol produced from it is not considered distilled. Others argue that tequila is distilled because the process of distillation removes impurities from the agave plant, making the alcohol purer. Ultimately, the decision of whether to drink tequila during Passover depends on the individuals rabbinic authority.

To Consumers: Be Alerted Reposado or Anejo type tequila that expressly states on the label that this product type cannot be used without certification and clearly states, on the label, whether 100% Agave or 100% Blue Agave. Some tequila brands that can be used in kosher establishments include 1800 Anejo, 1800 Reposado, and 1800 Reposado.

For the Passover holiday, it would appear that tequila is kosher because it is made of Agave. To be eligible for Passover, a spirit must be carried a seal or symbol that certifies it has been prepared under supervision to ensure that it does not contain any grains alcohols or flavorings derived from prohibited foods.

Tequila Mezcal is a little different from your ordinary tequila. Mezcal can be made with any of the eight approved kinds of the agave plant, unlike regular tequila which is only made of blue agave. Mezcal has a noticeably smoky flavor like the aged tequilas but with more of a twist in the way its produced.

Traditionally, mezcal is home-grown by small-scale producers in Mexico. A small town of mezcal production can contain as many as a dozen production houses, called fabricas or palenques.
