Tequila may have a wild and crazy reputation, but this unique spirit is created according to strict guidelines, guaranteeing authenticity and consistency. Its distilled from the fermented juice of the Weber blue agave plant, and comes only from a specified region of Mexico, centered around the western state of Jalisco.

Tequila production begins with the agave plant, cultivated in Mexicos desert regions. Early civilizations believed agave was a gift from the gods, which they used as a source for food, fibers and building materials. They would cut off the top of the plant, and the remaining stump filled with a liquid called aguamiel that would ferment into a cloudy, low-alcohol drink.

Spain lifted the ban for good in 1792, and in 1795 gave a license for the production of tequila to Jose María Guadalupe de Cuervo, maker of what is now the worlds best-selling tequila, Jose Cuervo.

A tequila labeled simply gold or joven is unaged, possibly with caramel coloring or other sweeteners added.

What About The Worm

Remember the worm we talked about in the opening section? As it turns out, worms have nothing to do with tequila. The worm in the bottle trick is often used by mezcal producers as a gimmick of sorts to draw attention to their product. In fact, the law says that tequila may not contain a worm or scorpion.

If a bottle is con gusano , then it is likely a mezcal and not a very good one at that. The worm is actually the larva of a moth that infests agave plants. An infested plant is the sign of a bad agave product. Proceed with caution.

How Is Patron Tequila Made

Patron tequila is made by fermenting the fruit of the blue agave plant. The plant takes a long time to mature, taking nearly eight to ten years to reach the perfect level of ripeness.

For this reason, Patron is often considered a premium spirit because of how difficult it is to produce large quantities. Once the plant has grown to produce fruit with optimal sugar levels, the fruit is then harvested.

The piña is then chopped up and placed in a brick oven to cook evenly on all sides. This allows the sugars in the fruit to break down more easily, which will make it easier for the production of alcohol levels.

The chopped piña is then crushed and ground up. The pulp is left for three days to ferment, and is then distilled in handmade barrels for a minimum of two months. The oldest tequila offered by Patron is their Añejo 7 Años, which is aged for seven years.

How Patrón Makes Its Tequila

This is the patrons most common bottle, available at $37.99-$56.99 for a 750ml size. A standard Blanco, bottled at 40% ABV. The Patron Silver is well made, but doesnt take any risks with its flavor. It is smooth and not aggressive with agave or grassy flavors that other Blancos often have and that many tequila aficionados seek out. This is a good tequila to try if youre just getting into drinking tequila. It makes a solid mixing tequila and is widely available at most bars.

  • Patron Reposado

The Reposado from Patron is similarly inoffensive, designed to appeal to the widest possible audience at a price range of $42.48$59.99.

  • Patron Anejo

Whats Worth The Splurge

I dont drink only cheap tequila, of course, especially when Im writing about some all-inclusive resort and its an open bar. If you want to know my favorites if money is no object, those would be Don Julio 1942 and Clase Azul in the nice porcelain bottle. The 99,000 Horas from my home state of Guanajuato is quite good too and is a terrific value. Cuervos Reserva de la Familia makes a great gift because the artistic box changes each year and it is consistently good, but I personally would have trouble parting with a hundred bucks to purchase it myself.

Despite what the marketers want you to believe, there is very little correlation between price and quality. This is very clear every time you see the winners from spirits competitions where there was a blind taste test. If you see a bottle at the duty-free shop thats $250, you can bet that $200 of that is usually going to marketing and packaging. Those bottles seldom rank the highest in judging competitions. You can often do just as well by spending far less.

The Blue Agave Problem

Tequila is a member of the larger family of spirits mezcal. Mezcal is produced from any agave plant, however, tequila has a strict ingredient requirement: it must be made from blue agave. Obviously, this limits the availability of ingredients, which in turn drives the cost.

The limited availability of blue agave combined with an increasing demand for the popular spirit has created a significant supply issue for tequila producers.This lack of supply has allowed the increase in cost of the plant, to the tune of six times what is cost just a couple of years ago. As you can imagine, this cost is passed on to the consumer down the line.

    Review: Deleon Tequila Reposado

    Hey, remember P. Diddys blanco tequila, DeLeon? Well, now weve got the next step DeLeon Reposado. This expression spends eight months in ex-bourbon and former French oak wine casks before bottling.

    Its a bit darker than most reposados due to the somewhat longer aging cycle, and the nose offers a light smoky character that you dont often see in reposado tequilas. Theres lots more going on in that nose, which layers in notes of citrus, green banana, and lumberyard, with some tart and a bit off-balance vinegar character.

    The body adds more complexity, but again its a touch out of balance. Notes of vanilla and oak are countered by some petrol overtones and an awful lot of acidity, again with notes of white wine vinegar. The overall character is peppery and punchy, which isnt typically what I like to see in a reposado, where the wood should be holding its own against the agave.

    Its a curious and unique tequila that fans of the Mexican spirit should try, but the Platinum bottling is more assured.
