For this recipe, I used 100% cranberry juice to help balance the sweetness out. If you prefer a slightly sweeter drink go ahead and use cranberry cocktail juice!

How To Make An Electric Smurf Drink
Step 1: Fill a cocktail glass with ice.
Step 2: Add one shot of Malibu Coconut Rum.
Step 3: Add 2 ounces of Pineapple Juice
Step 4: Add approximately 1 ounce of Blue Curacao .
Step 5: Top with 2 ounces of Lemon-Lime Soda.
You can use Sprite or 7-up, whichever is your favorite.
This drink is already sweet from the pineapple juice. I find 7-up to be less sweet than Sprite, so I prefer 7-up for this cocktail.
A slice of pineapple or orange along with a few Maraschino cherries.
And I think every blue drink should come with a brightly colored drink umbrella!

Blue Curacao is actually an orange liqueur with a slightly bitter finish. Its not as sweet as other orange liqueurs because its made from the Laraha orange. The Laraha orange is a bitter fruit and for the most part, inedible.
Blue Curacao is actually made from the rinds from this bitter orange along with a variety of spices, sugar and alcohol.
The blue color comes from food coloring. It was added as a marketing tactic to sell more bottles and more drinks at the bar. Its a great liqueur without the color, but its so much more fun when youre sipping on a blue drink!

To Make It Youll Need:
1 large mint sprig to muddle¼ oz. coconut sugar1 ½ oz. coconut rum¼ oz. OrgeatCrushed ice is best½ oz. dark rum float on top
Take the mint sprig and muddle along with the sugar to release the oils. Then add the coconut rum as well as the Orgeat to your Julep cup filled with crushed ice. Finally, float the dark rum on top and garnish with a few coconut flakes and mint sprigs. Sit back, relax, and watch the ponies go.

For the coconut milk, you want to use the kind in the can. It has a creamy thickness to it that coconut milk in a carton just cant match. Its also super easy to find, so you dont have to go searching everywhere for cream of coconut.
If youre wondering about substitutions, you can make the drink with a few other options but a can of coconut milk is best. If youre near a Trader Joes, we like their organic coconut cream in a can.
You can use coconut milk in the carton, if you need to. It doesnt have the creaminess of the canned version, though so it will alter the taste. If you do make this substitution, also add 1 tablespoon of heavy cream to give it that richness.
If you like your Pina Colada to be a bit chunky, you can use fresh pineapple instead of juice. Itll be a smoother blend with juice.

I used MALIBU Caribbean Rum for the Coconut Rum Punch because it has a fresh and vibrant coconut flavor without overpowering the rest of the drink. Ive tried this recipe with coconut milk and coconut water and found that the coconut milk was overpowering , while the coconut water was very understated.
You could try adding a good-quality cream of coconut or a coconut extract if you want to stick to plain rum , but I havent tried that substitution yet.
To avoid this drink watering down, you can make your ice cubes with juice, or even freeze some coconut rum punch into ice cubes.
This cocktail adds a splash of Caribbean summer to your day .
Can I make this coconut rum punch ahead of time? Yes! The flavor will still be the same, but as this cocktail sits the layers will mix together, so just be aware that you wont have that pretty ombre effect in your cocktails.
Can I add more rum? Absolutely! I kept the rum in this recipe very light to make it perfect for casual summer sipping or entertaining, but you can reduce the juice and add in more rum. If you are serving a higher strength alcohol drink to guests, make sure that they know how much alcohol was added especially with this drink because even when the rum is increased, its still very easy drinking and easy to overdo.
