How Did I Learn To Make The Best Mojitos
My easy technique comes from a bartender I met when we were on vacation in the Caribbean. He showed me that they prep a mojito simple syrup with mint and lime which ups the flavor in mojitos. You still muddle together some fresh mint and lime the old fashioned way, but adding in that mojito simple syrup elevates the flavor to a new level!

T: Briefly, can you talk us through your preparation again and maybe a little bit more about ice? I feel like this is a drink that I worry about being overly diluted. Thats the one thing I worry about if I order a Mojito, is that it might be watery. That ties into ice, so can you tell us about that?
T: Are you not topping with soda? I know thats optional. Some people are doing that, but youre not.
Y: I dont. I think that crushed ice has no business talking to Mr. Soda.
T: I agree with you there. Again, its more danger of dilution. That is one thing Im trying to avoid all the time. In terms of glassware, does pulling that out the fridge, cold, help? Do you have time for that, given how many you might sling on any given Saturday night?

The whole thing with the Mojito in Cuba is theres no simple syrup, says Paul Menta, the owner and distiller of Key West First Legal Rum Distillery. Menta, a chef who teaches a Mojito class six days a week in his tasting room, has even scored time behind the stick at Havanas La Bodeguita del Medio, the bar that claims to be the Mojitos birthplace .
