The piñas are then harvested and cooked in traditional clay kilns before being crushed to a pulp. The juice is double distilled in copper pot stills, a process that removes impuritiesand any other components that might cause a throbbing head the next morning.

How To Make Coconut Lime Margarita Cupcakes

  • Preheat the oven to 325°F and prepare a cupcake pan with liners.
  • Sift the flour, baking powder, and salt together into a medium mixing bowl.
  • Place the butter and sugar in the bowl of a mixer and beat together until creamed, about 4-5 minutes.
  • Once the butter and sugar have become light and fluffy, add the egg, milk, coconut extract, and tequila and continue mixing.
  • Zest the lime and then juice it. Measure 1 tbsp lime juice and lime zest and add to the batter and mix in.
  • Add the flour mixture to the butter mixture, 1/3 at a time, and mix in by hand using a spatula or spoon until just mixed in.
  • Scoop the batter into the prepared liners and bake for 22-24 minutes or until a toothpick comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring to a cooling rack.

    This is a superbly smooth Tequila that produces a wonderfully neat and clean flavour profile. The agave used for 1800 is Mexican, bearing the blue agave varietal. It is a dry Tequila, and the delicate, lemony notes have a long, lingering finish.

    The colour has been manipulated beautifully by the inclusion of the burnt oak colouring elements, which, along with the copper and gold flakes that is used, adds an extra depth and richness to this drink.
