My mom just bought me some vanilla beans from Tahiti and said that the person she bought them from suggested using rum to make an extract. What type of rum should be used, white or dark rum, and is there a certain alcohol content that is needed to keep the extract stable and safe at room temperature?

I’ve been making rum-based vanilla extract successfully at home for years. Here are my recommendations. Your basic ingredients are 80 proof rum, sugar and vanilla beans. At the recommended proportions, the rum and sugar are plenty effective preservatives.

Your basic recipe will use a fifth less about a 1/2 cup of rum, four vanilla beans and 1/2 cup of organic sugar. We’ll go through that first, and then talk about variations.

    About Rum Punch A Little History

    So I really love to dance Zumba and SocaFit, and many of my classmates and teachers are from the Caribbean islands.

    Every party we have, someone brings their version of rum punch. And there are thousands of versions. When I decided to make my own version, I wanted to know more about the history of rum punch.

    Basically, when the English were sailing around the world being jerks as part of the British East India Company, they drank a lot of beer on the ships.

    Like 11 pints a day per person. And, they were on the ships for a long time.

    Berry Infused White Rum Mojito

    Starting off this list is a sweet and berry-filled variety of fruit infused rum. You can even take it a step further and turn your infused rum into a mojito if youre feeling it.

    The main ingredient of this particular recipe is obviously the rum, and youll want a clear rum thats either white or silver, and is at least 80 proof. Since the flavors will be masked by the fruit, you dont have to buy the really pricey stuff just dont settle for cheap either, or youll regret it.

    Using berries such as blackberries and raspberries, you can then infuse the rum in an airtight glass container. You can even experiment with other berries such as strawberries or blueberries if you prefer those flavors too.

    Running Your Pot Still

    Its now time to fire up that pot still! Ensure that your still is properly set for this step.; Secure all clamps and domes and make sure condensers are properly attached, as well as any hoses.; Next, youll turn on the heat source and start raising the temperature of your rum wash.; Youll want to run the rum wash through two separate distillations.; During the first, youll collect the entire distillate without separating the heads, hearts and tails.; That will be done during the second round of distillation.

    If using a condenser, turn on the water when the boiler reaches 130;°F.

    At about 168 °F the still will start producing. Increase the temperature to keep producing distillate.

    Stop collecting distillate after it measures less than 20% ABV which you can measure using the hydrometer.; Be sure to hold on to the remaining contents of the still as youll be adding it back in with your second distillation.; This will add to the final flavor of the product.; Dilute the first round distillate by 20% with water.; Stir the mix thoroughly and add back into the still.; Begin your second round of distillation.
