While you may not have heard of this drink, it’s one you won’t forget. Every time you make one, you get to say “Yaka Hula Dickey Dula,” and that alone is a reason to mix it up. The taste is pretty amazing, too. It’s a fascinating combination of rum and dry vermouth accented with pineapple. That’s a bit unusual, but the pairing works very well.

Fruity Punch Long Drink Mixed With White Rum

Fruit goes well with white rum. For a savory-fruity cocktail, mix 2oz of white and dark rums, each, in a tall glass, along with 1 oz of mixers of your choice . To this, add 2½ oz of each of orange and apple juices, along with a dash of peach schnapps. Serve with cherries and ice cubes.

The Best Rum For Daiquiris According To Top Bartenders

This post is part of our Rum Hub.

In bars all across the world, the word Daiquiri is often proceeded by strawberry, and the cocktail is served frozen and comically large. But the classic Daiquiri, which traces its roots back to Cuba,;is a simple rum sour composed of just three partsrum, lime, and sugarthat is shaken and served up. Today, its a popular tipple among aficionados and novices alike, and it remains a staple on cocktail bar menus, where it often acts as a benchmark for the bar in question. If you can get a good Daiquiri, youre in good hands.

Though a Daiquiri is just three simple ingredients, the rum you choose can make all the difference, which means theres still plenty of room to experiment. Opt for a clean, white rum, and youll get a bright and easygoing Daiquiri. Choose something darker and richer, and youll get a Daiquiri with some heft to itpossibly even some oak notes. And those are just two options of many.

So to see what the experts prefer, we polled some of the best bartenders around and inquired as to;which rum they prefer in their daiquiris. This is what they said.

What Type Of Rum To Use When Making Vanilla Extract

My mom just bought me some vanilla beans from Tahiti and said that the person she bought them from suggested using rum to make an extract. What type of rum should be used, white or dark rum, and is there a certain alcohol content that is needed to keep the extract stable and safe at room temperature?

  • 2I have absolutely no expertise in this area so that’s why i’m not making this an answer but I would actually lean towards a high proof, very neutral vodka but that’s my choice. If your sold on rum I would stick with white so you avoid muddying the vanilla flavor with the molasses notes of dark rum.Feb 2 ’13 at 3:39
  • 2You can use any type of booze you like, as long as it is at least 80 proof . If it’s at least 80 proof it won’t go bad, and as long as it’s not the cheapest rotgut, it should be fine. I don’t use sugar at all. I have liked the result of using both vodka and rum, but the resulting flavors are somewhat different.Feb 6 ’13 at 6:24
  • I use vodka so no flavors are added to the vanilla.

I’ve been making rum-based vanilla extract successfully at home for years. Here are my recommendations. Your basic ingredients are 80 proof rum, sugar and vanilla beans. At the recommended proportions, the rum and sugar are plenty effective preservatives.

Your basic recipe will use a fifth less about a 1/2 cup of rum, four vanilla beans and 1/2 cup of organic sugar. We’ll go through that first, and then talk about variations.

The ingredients in this marinade draw out the spice, caramel and citrus notes in an aged or dark rum. Even scaled down, this still makes a rather large batch; feel free to mix the dry ingredients separately and keep them in a container in your spice cabinet until ready to mix with the jalapeño and garlic. Or make the entire recipe and freeze it in plastic bags or containers so its ready for you to fire up the grill.

What Do You Need To Start Making Rum

Rum is aged in oak barrels or combined with oak chips to give it its distinct smokey flavor, often for more than one year.

But since this is a homemade rum, we have no time to mess around with oak chips and other recipes that use that.

Instead, lets focus on the essentials. Sugar and molasses make up the wash that you will be using as the foundation for your rum.

Luckily, regular places have these readily in-stock compared to oak barrels.

Rum production is also, surprisingly, a fairly simple process, so we will walk you down through what youll need and the step-by-step recipe.

    Overview

    • Colour: Clear

    Review

El Dorado 3 Year Old White Rum source their molasses from the local sugar factory. Once fermented and distilled, the resulting spirit is then aged at their Diamond Distillery in small ex-bourbon American oak casks for 3 years. It is then charcoal filtered to remove any impurities, but lock in the inherited flavours.

This is an award-winning rum that has taken Gold at the International Review of Spirits and Silver at the International Wine and Spirits Competition.

On the nose: Nutty, butterscotch and sweet citrus of pineapple.

On the palate: Begins smoothly with the dark sweetness of burnt sugar. Coconut and juicy pineapple are also in ample supply. Soon becomes more creamy chocolate-like. The finish is long, with a bitter-sweetness that becomes drier as the taste tapers off. Delightful.

Presented in an eye-catching ballooned bottle with an oversized circular base and neat label.

    Summary

El Dorado 3 Year Old White Rum is a light, delicately flavoured spiced rum that deserves to be enjoyed neat. Try drinking fridge chilled but allow to acclimatise first for 10 minutes in a non-chilled glass with no ice.

I love to cut my Daiquiris with the Plantation Pineapple and the Banks 5 Island. The Plantation Pineapple is amazing in a Daiquiri, but I like a little funk in mine, so I cut it with Banks 5 to get some cool, funky, over-ripe fruit notes in it. I also like my Daiquiris on the dry side, so amping up the lime juice and cutting down the sweetener balances this out nicely.

About Rum Punch A Little History

So I really love to dance Zumba and SocaFit, and many of my classmates and teachers are from the Caribbean islands.

Every party we have, someone brings their version of rum punch. And there are thousands of versions. When I decided to make my own version, I wanted to know more about the history of rum punch.

Basically, when the English were sailing around the world being jerks as part of the British East India Company, they drank a lot of beer on the ships.

Like 11 pints a day per person. And, they were on the ships for a long time.

Towards the end of their trips, the beer was rancid and flat. On the return home, they needed a new alcoholic beverage to drink- so they used what they found at their destination.

In the East Indies and the Caribbean, those ingredients were rum, fruit, and spices. a mix was made for the journey home, and rum punch was born.

Today rum drinks are a popular part of mainstream culture throughout the Caribbean islands, and there are as many rum punch recipes as there are families.

    Berry Infused White Rum Mojito

Starting off this list is a sweet and berry-filled variety of fruit infused rum. You can even take it a step further and turn your infused rum into a mojito if youre feeling it.

The main ingredient of this particular recipe is obviously the rum, and youll want a clear rum thats either white or silver, and is at least 80 proof. Since the flavors will be masked by the fruit, you dont have to buy the really pricey stuff just dont settle for cheap either, or youll regret it.

Using berries such as blackberries and raspberries, you can then infuse the rum in an airtight glass container. You can even experiment with other berries such as strawberries or blueberries if you prefer those flavors too.

After infusing the rum, you can choose to turn it into a mojito with muddled mint, syrup, and club soda. A few simple additions to the rum can turn it into a delicious cocktail.

    History Of The Daiquiri

    White Rum Sangria

Although the Daiquiri originated in Cuba, cocktail lore attributes the rum sours creation to Jennings Cox, an American mining executive working near Daiquiri, Cuba at the turn of the 20th century. The exact details of the drinks origin are as cloudy as a blended cocktail but the recipe has stood the test of time.

Over the years, countless drinkers have succumbed to the charms of the simple Daiquiri both within Cuba and beyond the Caribbean countrys shores. Ernest Hemingway, no stranger to a good drink, imbibed so many double Bacardi Daiquiris at El Floridita in Havana that the prolific writer acquired the nickname Papa Dobles and inspired a variant known as the Hemingway Daiquiri.

After making the short journey from Cuba to the United States, the Daiquiris popularity spread across America. The drinks sweeter, slushier frozen counterpart may have overshadowed the original but true cocktail connoisseurs prefer the gentile charm of the original concoction.

    Running Your Pot Still

Its now time to fire up that pot still! Ensure that your still is properly set for this step.; Secure all clamps and domes and make sure condensers are properly attached, as well as any hoses.; Next, youll turn on the heat source and start raising the temperature of your rum wash.; Youll want to run the rum wash through two separate distillations.; During the first, youll collect the entire distillate without separating the heads, hearts and tails.; That will be done during the second round of distillation.

If using a condenser, turn on the water when the boiler reaches 130;°F.

At about 168 °F the still will start producing. Increase the temperature to keep producing distillate.

Stop collecting distillate after it measures less than 20% ABV which you can measure using the hydrometer.; Be sure to hold on to the remaining contents of the still as youll be adding it back in with your second distillation.; This will add to the final flavor of the product.; Dilute the first round distillate by 20% with water.; Stir the mix thoroughly and add back into the still.; Begin your second round of distillation.
