Whiskey Sour Classic Cocktail
The Whiskey Sour is an enduring cocktail recipe because its just so reliably delicious. It blends bourbon whiskey with lemon juice, sugar and optional egg white.
The recipe for the this cocktail has evolved a little over the years. For a long time, bartenders made it with bottled sour mix instead of fresh-squeezed lemon juice.
Bottled sour mix gave it a taste more like candy than a refreshing beverage. Now were returning to the old-fashioned way of making this drink, with real lemon juice. The only change I make is to use simple syrup instead of sugar because it mixes so much more easily.
This version also calls for just enough egg white to thicken the drink a little so you can savor it. Egg whites can also minutely improve the flavor of the really cheap whiskey, but theyre mainly there to mellow all the flavors and meld them into one.
Thats the best version of this drink, in my humble opinion. But dont worry, I included a no egg white version, too. Youll notice that it calls for sugar instead of simple syrup. Thats a way to get back some of the texture lost with the egg whites.
However you make your Whiskey Sour, its flavors are tart citrus with just a touch of sweetness to take the edge off. Better quality whiskeys will reward you with a smoother, deeper flavor .
There are so many variations on this recipe, and you should feel free to play with it. You may want to add just a touch of orange juice to the mix that rounds out the flavor considerably.

Should I Add A Raw Egg White
You can make a perfectly lovely Whiskey Sour by sticking to the original recipe of just whiskey, lemon juice, and sugar. These three ingredients balance each other beautifully.
But if you want to take your Whiskey Sour to the next level, add an egg white. This will not, in fact, make your cocktail taste like egg. Instead, the egg white will add texture, richness, and a particular creaminess that will make it seem almost like a whiskey milkshake.
Now, I know what youre thinking: What about salmonella?
Your chances of getting salmonella from raw eggs are pretty low. The CDC estimates that only around 1 in 20,000 eggs are contaminated with the bacteria, and even if you do get a contaminated egg, as long as the egg is kept refrigerated below 45 F, the bacteria will have no chance to grow.
If youre still worried, you can purchase pasteurized eggs, which are heated for a period of time to eliminate bacteria. You can also use pre-packaged, pasteurized egg whites like Egg Beaters, which will also save you the trouble of extracting the egg white from the yolk.

What Alcohol Goes In A Whiskey Sour
Traditionally, an 80-proof bourbon is used as the basis, which lends a hint of vanilla and wood to the drink without dominating the sweet vs sour battle that is taking place in the glass. We used Basil Haydens 80-proof whiskey to make our traditional Whiskey Sour, but any mid-range, 80-proof bourbon would suffice.
Harlem Standard American Whiskey
Though it seems like a distant time ago, while waiting to be sat for dinner, my cocktail of choice is almost always a sour. In a whiskey sour, the dram is just as important as the egg . In addition to the beauty of this cocktail, the whiskey sets the tone for this experience from the moment it touches the lips to the lingering finishes it leaves on the palate, which delightfully encourage another sip, bartender Kiki Clarkson of Her Name Was Carmen in NYC tells The Manual. As for her chosen spirit for a whiskey sour, Clarkson insists that Harlem Standard American Whiskey is my absolute favorite and a hidden gem among whiskeys. Its perfect for a whiskey sour because Harlem Standards delicate maple and vanilla notes add depth to the cocktail without overpowering it. Also, the vibrant lemon juice in the cocktail is heightened by the Harlem Standards citrus undertones. The finish reminds me of a refreshing, perfectly chilled lemon meringue pie.

Whats The Difference Between An Old Fashioned And A Whiskey Sour
Whats the difference between a whiskey sour and an old fashioned, you might wonder. Despite the fact that each of these traditional beverages contain whiskey, the other components are not same. An old fashioned is made with whiskey, bitters, and a sugar cube it does not contain fresh lemon juice or an egg white, like a whiskey sour does instead, it is made with simple syrup.
Egg White Is Optional But Classic
Now, you dont have to make an amaretto whiskey sour with an egg white: but we highly recommend it! Bartenders have been adding egg whites to cocktails since the 1860s. The texture and flavor that an egg white adds cant be beat! Why? Two things an egg white adds:
- Frothy texture to the surface of the drink, making it more fun to drink
- A creamy rich flavor, making it taste more delicious
If youre worried about the safety of raw egg whites in cocktails, the risk of salmonella is very low. In fact: melons, salad, and peanuts, have more of a threat for salmonella than eggs! Heres how to safely store and use eggs to minimize risk .

How To Make The Whiskey Sour Cocktail
The way you make and shake a whiskey sour will depend on whether you use egg white or not, so well cover both bases, starting without the egg white.
If you do want to use egg white the steps are as follows:
This method can be switched around if you prefer. Some bartenders will recommend shaking with ice first, straining the cocktail back into the shaker without the ice and dry shaking. Its said this method will produce a larger, fluffier foam.
Egg Whites In Your Whiskey Sour
Yes, you read that correctly. If you want to elevate your whiskey sour, an egg white is a way to do it! Oh no, you say, is this a repeat of eggnog?!
No, I promise its not. First of all, the egg isnt one of the main ingredients. There is usually less egg white included than anything else. Really all it does is add a touch of binding and frothing power to the drink.

Strain into coupe or martini glassitll come out white at first, and the color will emerge over the course of a minute under a paper-smooth head of foam. Express a lemon peel over the top of the foam for aroma and discard and decorate the foam with a few drops or dashes of Angostura Bitters.
The smoothest and most elegant way to make a Whiskey Sour is to make it with egg white. Now, if you were disinclined to try it before, I doubt I just sweetened the pot with the promise of a raw egg, but hear me out: Just like when you eat them, egg whites dont taste like anything really, but serve here to give the whole cocktail a velvety texture, a pretty white head, and most importantly, to bind to the tannins in the spirit, smoothing out the rougher edges of the whiskey.
A necessary note: egg whites are largely safe, but if youre nervous or immunocompromised, feel free to use in-shell pasteurized eggs. If youre vegan, you can use aquafaba, which functions more or less identically. If all you have is a carton of pre-cracked, pre-separated egg whites, perhaps consider making it as below.

How To Make A Classic Whiskey Sour
joshpuffpuff on Flickr
A classic whiskey sour is prepared in two steps: first, make the sour mix, and then the drink itself. The sour mix is generally comprised of two parts water, one part lemon juice, and one part white sugar. If you’re taking your time with it, you can boil the water and sugar first to create a simple syrup. Otherwise, thoroughly mix all three ingredients together, preferably in a cocktail shaker.
Once you’ve made the sour mix, pour two parts of your favorite whiskey over ice, and top with the sour mix. Garnish with a maraschino cherry or a slice of fresh citrus fruit. I like to use ‘drunken cherries’ that have been previously soaked in liquor to add an extra kick to the drink.

The History Of The Whiskey Sour
CharlieOnTravel on Flickr
The oldest known mention of a whiskey sour dates back to a bartending guide from 1862, though it’s thought to have existed for at least a century before that. This drink has been popular for so long because it requires only four ingredients: whiskey, lemon, water, and sugar. . However, half a decade later, many bartenders were once again ditching the pre-made sour mix in favor of fresh lemon juice. Today, some people prefer that the simple syrup be prepared ahead of time, claiming a smoother mix.
Despite its simple ingredient list, a perfect whiskey sour can be elusive the drink is easily put off balance by a poor ratio of its components. Too much syrup and the drink tastes too sweet like a sour candyand the taste of the whiskey itself is overwhelmed. Because of this, a well made whiskey sour is often considered a sophisticated drink choice, while a poorly made version of the same drink is more commonly associated with rowdy young drinkers.
