We use Fever Tree at the bars. We use it because its a great all-purpose tonic. I think that there are certain tonics that go better with certain gins, and we have used a different tonic for specific cocktails, but Fever Tree is very balanced with a wide range of gins, as well as other applications. The only other one I would consider is East Imperial, which is delicious and has an amazing texture. Flavor-wise, they both have a strong quinine component, a nice level of sugar, and hold up to big flavors.

What Does Seedlip Taste Like
There are 3 Seedlip spirits, and none of them have juniper in them. This means none of them are going to taste like gin and therefore cant be called gin substitutes. However, they are made with some interesting ingredients and each blend has a distinct flavor profile.
Below are some first impressions and tasting notes, in addition to what Seedlip mentions in their FAQ. I am not a sommelier, just your average cocktail enthusiast and hobby mixologist trying to make sense of these new beverage options.
Seedlip Grove 42: First impression orange water. Smells like sweet orange, and tastes like the rind. Seedlip Grove seems delicate, yet the orange essence is really powerful. Seedlip lists lemon, ginger, and lemongrass in addition to 3 types of orange, but orange is all I taste. Initially, Im not feeling inspired by this, but it deserves to be explored in some mocktails where one would want to taste the orange grove in their drink. Full review
Seedlip Garden 108: Very herbal, grassy, dry. I think I taste the peas. Seedlip Garden has peas, hay, spearmint, rosemary, and thyme in it. The blend tastes sophisticated. How Is Gin Made
Wondering how gin is made?
Any gin starts life as a neutral spirit. Its essentially pure ethanol, and then flavours are added through a process called re-distillation. Gin can be made in a column or pot still.
We like to think of gin as vodka steeped in an aromatic tea bag. Expert distillers essentially heat pure alcohol so it passes through a large tea bag filled with unique spices, herbs and citrus peel. When the pure alcohol comes in contact with this bundle of flavourful ingredients it takes on a unique gin flavour.
The flavourings can be steeped for as long as 48 hours, although some producers will distill the liquid almost immediately. Once completed, water is added to reduce the distillate to bottling strength.
So what are the most common ingredients in gin?
Gin derives its predominant flavour from juniper berries, also known as juniperus communis.
Other popular botanicals or flavourings used in gin making, besides the required juniper, often include citrus elements, such as lemon and bitter orange peel, as well as a combination of other spices, which may include anise, angelica root and seed, orris root, licorice root, cinnamon, almond, cubeb, savory, lime peel, grapefruit peel, dragon eye, saffron, baobab, frankincense, coriander, grains of paradise, nutmeg and cassia bark.
The different combinations and concentrations of these aromatic botanicals in the distillation process cause the variations in taste among different gin brands.

Some time ago, we had the gigantic joust of the gins. Now, at long last, its time for the titanic tiff of the tonics.
Oh, fuck, how much of a wanker does that pair of alliterations make me sound? DONT ANSWER.
Todays mission, then, is to find out which tonic makes the best gin and tonic. The deal here was pretty much the same as with the gins: taste em blind in one joyously ginny lineup. The gin used was my favourite common brand, Tanqueray.
And I make no apologies for the fact that the lineup includes no slimline tonic varieties whatsoever. Because slimline tonic is the corrosive piss of satan.
Anyhow, here from worst to best are the results
Fentimans Traditional Tonic Water
For a while, it was next to impossible to find Fentimans in the USA. Now it is available again at various grocery stores. However, the formula seems to have changed, and not for the better.
Fentimans describe their tonic as The worlds first botanically brewed tonic water is made with a blend of herbal infusions and lemongrass extract which results in a unique, refreshing and distinctive citrus flavor.
Ingredients < 2020: carbonated water, sugar, citric acid, tonic flavor , quinine.

It is also the most expensive of all the standard store brands, and we didnt feel it was worth the extra cost.
