Kentucky Bourbon Whiskey, also called Kentucky Straight Bourbon Whiskey when aged for two years, must be produced in Kentucky. About 95% of the worlds bourbon supply is made in Kentucky, so when you open a bourbon, it is very likely to have come from Kentucky.

Bourbon Is Made With At Least 51 Percent Corn
What makes bourbon distinct from other whiskeys is the way it is manufactured and aged. All whiskey is spirit made from fermented grain and then aged in barrels. But the kind of grain and the kind of barrels determines the variety of whiskey. Per the American Bourbon Association, in order to be classified as bourbon, a whiskey needs to be distilled from a mixture of grains, or mash, that’s at least 51 percent corn. That corn gives bourbon its distinctive sweet flavor.
Bourbon Has To Hit Certain Abv Marks
When bourbon is barreled, it also has to hit a certain proof, or alcohol content in the spirit. The mash must be distilled at 160 proof or less, and aged in barrels until it is no more than 125 proof or less. Before bottling, bourbon is filtered and diluted down to no less than 80 proof . Other whiskeys have different ABV standards for barreling and distilling. The minimum bottling strength for Scotch whiskey, for example, is also 80 proof or 40 percent ABV, but there is no maximum or minimum ABV for the distillate.

What About The Age Statement
Bourbon gets its flavor and color from the barrel its aged in, so naturally, the longer it ages the better right? Not necessarily. All whiskey is made with the heritage and pedigree that established what we consider the best alcohol brands of today, but the climate of Kentucky is very different of that of Scotland. 40-year-old Scotch made with decades of relatively minimal temperature changes? Sign us up. 40-year-old Bourbon with the way Kentucky temperatures fluctuate? Yeah, were still gonna drink it but were probably not going to like it as much as the Scotch.
Yes, the age statement absolutely makes a difference, but theres a limit. Having tried all the Pappiez, Wellers, and a couple different bottles of Overholt Rye more than twice as old as I am from the Mellon Estate sale, I can tell you definitively that older isnt necessarily better. Its all about flavor profile and respective value. Do you want a bottle of Pappy Van Winkle 23 to display on your bar cart, laud over your friends, and probably never open? Sure. Should you buy that over Pappy 15? Absolutely not. The 15 isnt over-oaked, is a much smoother pour, far more drinkable , and infinitely more accessibleand Im not just saying that because were giving away a bottle of Pappy 15 here.

The definition that matters the most is the American one because bourbon has a long history in the deep south of the United States. Distilleries have been making bourbon in Bourbon Country, Kentucky since the late 18th Century after distilling was brought to the region by European immigrants.
The Americans mastered the production of bourbon so much that it is considered the birthplace of the spirit. In fact, the name Bourbon is thought to have come from either Bourbon Country or from Bourbon Street in New Orleans.
So what is American bourbon whiskey? It is a whiskey that is:
- Made in the United States
- Made from a mash that contained at least 51% corn
- Aged in new, charred oak barrels
- Distilled to no more than 160 proof
- Placed into the container for aging at no more than 125 proof
- Bottled at 80 proof or more
There is no minimum aging period for bourbon, so it can reside in a cask for as little a couple of months before being bottled. The exception is straight bourbon whiskey, must be aged in a charred new oak barrel for at least two years. Straight whiskeys must not contain any added flavoring, coloring, or other additives. Any bourbon that is aged for less than 4 years must specify so on its label.

Most people think bourbon has to be made in Kentucky to be called bourbon but that is not true. To earn the designation of bourbon, it has to be made in the United States of America bourbon doesnt have to be made in Kentucky.
You can use the same process to make bourbon but if its done in Canada, for instance, it cant be called bourbon. It would just be whiskey.
Why is most bourbon made in Kentucky?
Now it is true that most bourbon is made in Kentucky. Kentucky happens to provide the perfect environment for making great bourbon which is why most bourbon distillers are located in Kentucky.
Kentucky has a limestone bed in most of its water supply which is a perfect filtering system for water used to create bourbon. The Kentucky limestone removes iron which can give a bitter taste. The Kentucky limestone beds also add calcium which adds to the sweet taste of bourbon.
The Kentucky weather climate also has the perfect conditions for the aging process of barrels done over multiple years for the creation of bourbon.
According to the Kentucky Distillers Association, there are more than 7 million barrels of bourbon aging in Kentucky which is almost twice the entire population of the state at 4.5 million people.

This might be common knowledge for some, but it’s worth a refresher before you go out and buy a bottle. Let’s start with a burning question we answered back in 2008: what makes a whiskey bourbon?
The law. While knocking back a dram of bourbon is a decidedly carefree exercise, making it is exceedingly technical and requires that the whiskey meet a rigid set of criteria. The Federal Standards of Identity for Bourbon stipulate what is and what isnât bourbon. For a whiskey to call itself bourbon, its mash, the mixture of grains from which the product is distilled, must contain at least 51% corn. The mash must be distilled at 160 proof or less, put into the barrel at 125 proof or less, and it must not contain any additives. The distillate must be aged in a new charred oak barrel. If you distill a whiskey in your kitchen that meets all of these standards, congrats, youâve made bourbon. Also, youâve broken the law the ATF is probably outside your house right now.
