What Is The History Of The Painkiller
The true original recipe isnt truly known as Daphne Henderson didnt share her exact proportions. One of her good friends and fellow bartenders decided that he had a version that was close enough. After winning a taste contest versus Daphne, he took his recipe on the road to try to earn some money from his new found fame.
He soon sold his recipe to Pussers Rum who soon trademarked the recipe. They did gave Daphnie Henderson the credit while letting the rest of us know a recipe!

For our version of the Painkiller cocktail recipe, the Coconut Rum Painkiller, we decided to embrace one of the tiki techniques. We layer two different types of rum into a single cocktail. Mixing two different types of rum gives a cocktail a more complex flavor and uses the different rums to bring the best of each style to the drink.
In the case of our Coconut Rum Painkiller, we combined the rich caramel flavors of a dark rum with an equal part coconut rum. AKA why this is the Coconut Rum Painkiller! This brings a tropical warmth to the cocktail.

If youre anything like me, you dream of mesmerizing remote islands full of white sand beaches and swaying palms under an impossibly blue sky. And what might I ask goes hand in hand with this alluring and seemingly far-off image that only comes to life in the back of your head? Well, rum and coconuts, of course. What Rum Is Best For Pina Colada
Malibu rum is the brand that I use. It adds an extra tropical flavor to the drink that white rum doesnt. However, white rum is typically what is used in a Pina Colada, so you can use either.
I choose Malibu because it has a natural coconut flavour and a smooth and sweet finish. Ive tried other coconut rums before and some have a more manufactured taste that doesnt do well in this cocktail. If you want a really tasty pina colada, just stick with the Malibu.

If you cant find a pineapple-orange juice blend at your local grocery store, youre welcome to buy them separately and combine them in this Malibu drink. Equal parts orange and pineapple juice should work, but play around with the ratios to find a combination you love.
I always eyeball the amount of grenadine I use in this Malibu rum drink, and I encourage you to do the same. Just be careful not to stir the tropical drink after youve added the grenadine as its meant to settle on the bottom of the glass!
If making a larger batch of Malibu sunset, you may want to omit the ice and instead pour the rum mixed drink over ice. This way, your cocktail doesnt get watered down as it sits there.

How To Make It Step By Step
Making this drink is extremely simple. Just add equal parts of Malibu liquor, pineapple juice, and cranberry juice cocktail into each serving glass or into a large pitcher. Stir and serve with ice.
How to layer the drink :
Dont stir! Carefully add a couple of ice cubes to the drink. Its ready!
You can garnish the drink with pineapple wedges. Maraschino cherries would also be a lovely addition.

Surprise! There really isnt one glass associated with a frozen daiquiri. We have seen them made in martini, pina colada and margarita glasses most often.
We chose 12 oz. Margarita glasses and the size is PERFECT. You will get two completely filled margarita glasses.
However, any tall tom collins, cocktail, pina colada or martini glass of the same size will also work for this recipe.
The coconut rum with the lime and strawberries is a wonderful flavor balance your mouth is gonna love.

Per their website, Malibu Coconut Rum is distilled from fermented molasses and blended with coconut and sugar. The brand is owned by one of the worlds largest spirits producers, Pernod Ricard. Currently produced in Canada, Malibu Coconut rum was originally made in Curaçao from fruit spirits flavored with coconut and rum.

What Kind Of Coconut Milk To Use
For the coconut milk, you want to use the kind in the can. It has a creamy thickness to it that coconut milk in a carton just cant match. Its also super easy to find, so you dont have to go searching everywhere for cream of coconut.
If youre wondering about substitutions, you can make the drink with a few other options but a can of coconut milk is best. If youre near a Trader Joes, we like their organic coconut cream in a can.
You can use coconut milk in the carton, if you need to. It doesnt have the creaminess of the canned version, though so it will alter the taste. If you do make this substitution, also add 1 tablespoon of heavy cream to give it that richness.
If you like your Pina Colada to be a bit chunky, you can use fresh pineapple instead of juice. Itll be a smoother blend with juice.
If you have leftover pineapple or pineapple juice, you should definitely use it to make these Pineapple Rum Runners or these Pineapple Rum Slushes. So good!
