Rum is sweet and distilled with sugar, so rum pairs well with sweeter cheeses as well as with cheeses that are typically served with sweet condiments. This includes hard, aged cheeses, like Gouda, Havarti cheeses and even blue cheese.
A good rum has a broad spectrum of flavors, from caramel and vanilla to smoke and earth. This is what we refer to as white rum, the preferred rum for mixed drinks. Dark rum, its counterpart, maintains more of the charred flavor and works best neat or with a glass of ice.
Captain Morgan White Rum is much sweeter and softer but with a little less structure than Bacardi Superior. Bacardi’s finish is a lot drier and more acidic, but the flavors in Superior taste more true to the base molasses, and Superior also has a superior mouthfeel.

On the nose: This rum is sweet, fruity, and slightly caramel-like.

Coquitos are often referred to as the Puerto Rican eggnog but they are actually quite different.
The best rum for coquitos is usually a white rum with some spice, but of course, there is room for personal preference and experimentation. Even with dark rums, however, some spice is usually desired.
Coquitos come from Puerto Rico, where they love everything coconut. Coconut drinks, snacks, and meals are common and recipes are often memorized and repeated. Its no surprise, then, that coquito translates to little coconut and coconut is the main feature in this sweet cocktail.
Coquito is made with a base of either coconut water, milk, or cream. The one you use is based on your own taste and texture preferences. The main differentiator when it comes to rum is the use of either cane sugar juice or molasses. This choice determines the resulting flavor profile, texture, and ultimately, the price.
