Scotch, however, must have an ABV of less than 94.8 percent and is aged in used oak barrels, including those that previously stored Sherry, beer and, yes, bourbon.

The country is currently seeing a shortage of Malt Whisky, and as such, Grain Whisky has had to pick up some of the slack. Suntory is experimenting with Grain to see what flavor profiles they can build. They are using different casks for maturation and trying out different strengths to see what they get.

Bourbon Is Whiskey Scotch Is Whisky
The whiskey spelling is used for American and Irish spirits, including bourbon. Conversely, whisky is used by the rest of the world, including Europe, Australia, Japan and, of course, Scotland. Regardless of spelling, all whiskey or whisky must be distilled to a minimum of 40 percent and a maximum of 94.8 percent alcohol by volume .
Why Is Canadian Whisky Called/labelled Rye
Along the way, someone decided to spice up their whisky by adding a small amount of rye grain to it and a distinctly Canadian whisky style was born. This tangy new whisky packed more flavour than common wheat whisky and almost everyone preferred it. Customers started demanding rye wheat whisky with a small amount of rye grain added. Eventually, the word rye entered the Canadian lexicon as a synonym for whisky.
But, as soon as rough land became tilled fields, farmers switched from rye to more bountiful wheat, and eventually in the 1950s corn, there was less rye grown and thus, distillers stopped using rye grain, except in small amounts for flavouring.
When corn is fermented it produces large amounts of alcohol. 14% alcohol is the norm in a corn mash but often it goes higher. Rye on the other hand produces in the range of 8% alcohol, often less than that. So a mash of 51% rye and 49% corn is still producing a lot more corn whisky than it is rye. Thus, Canadian distillers who blend at the liquid stage rather than as dry grain get proportionally more impact from the rye grain they use. Canadian distillers buy 320,000 metric tons of corn annually and are the 4th largest buyer of Ontario corn.

They Come From Different Places
Contrary to popular belief, bourbon can be made outside of Kentucky. However, to legally qualify as bourbon, it must be made in the United States. To be known as Scotch whisky, a mash of cereals, water and yeast must be distilled and matured in Scotland for a minimum of three years in oak casks.
There are two main types of whisky produced in Scotland: malt whisky and grain whisky. All whisky begins its life as the product of a single distillery so these products are known as single malt or single grain.
Single malt whisky is made in a traditional batch process using a copper pot still. According to the Scotch Whisky Regulations 2009, to be classifed as a Single Malt Scotch Whisky it must be “produced from only water and malted barley at a single distillery by batch distillation in pot stills”.

This might be common knowledge for some, but it’s worth a refresher before you go out and buy a bottle. Let’s start with a burning question we answered back in 2008: what makes a whiskey bourbon?
The law. While knocking back a dram of bourbon is a decidedly carefree exercise, making it is exceedingly technical and requires that the whiskey meet a rigid set of criteria. The Federal Standards of Identity for Bourbon stipulate what is and what isnt bourbon. For a whiskey to call itself bourbon, its mash, the mixture of grains from which the product is distilled, must contain at least 51% corn. The mash must be distilled at 160 proof or less, put into the barrel at 125 proof or less, and it must not contain any additives. The distillate must be aged in a new charred oak barrel. If you distill a whiskey in your kitchen that meets all of these standards, congrats, youve made bourbon. Also, youve broken the law the ATF is probably outside your house right now.

Scotch Malt Whisky must use 100% malted barley and be distilled in a pot still. Preferred barley varieties are those which produce high alcohol yield, easy and consistent processing, no glycosidic nitrile and high enzymes for grain distilling malts. Barley for pot distilling requires a high starch content . A nitrogen level of about 1.5% in the barley is considered optimum and will be the maltsters target, if the crop quality allows. Malt specifications are agreed upon by distillers and maltsters on an individual basis and are subject to change as a result of commercial trading issues, availability and harvest quality.
Grain Scotch Whisky is normally made from unmalted cereals with the addition of around 10 % high DP malted barley and is typically distilled in a continuous column still. High DP barley will normally exceed 1.80 % nitrogen to achieve the required level of enzyme activity for conversion of the whole mash to fermentable sugars. Grain whisky is most commonly used as a component part of blended Scotch Whisky, which accounts for around 90% of all Scotch Whisky sales.
Sustainability has increasingly become a major consideration for distillers for both grain and malt distilling.
