For those of us looking for slightly higher SPF, er ABV, with our Caribbean sunshine, the good folks at Malibu went ahead and created Malibu Black, a 35-percent-ABV rum-based liqueur . Its a mix of dark rum and coconut-flavored, rum-based liqueur, proportioned such that the sugar content that caws like a shore bird in Malibu original is hushed here, with most of the flavor coming in as dark, chewy, and hot, like a melted Tootsie Roll that will get you buzzed.

Making The Coconut Syrup
Now you’re going to make the sugar syrup. If you really don’t want to add sugar to the recipe, you don’t have to , simply divide the coconut into the two jars and pour on the rum. Sugar syrup, I’ve found though, is the way to go with these for ‘sweet’ infused spirits .1. Combine the sugar and water in the medium saucepot if you haven’t already2. Put on stove over medium high heat. You’re going to want to stay put and watch, as it’ll go fast. You want to completely dissolve the sugar into the water, then simmer away some of the water. It will get cloudy then go clear. 3. Let simmer about two minutes. You do NOT want it to start turning brown a little color won’t hurt it, but that’s not what we’re going for.4. Add the coconut and stir to combine. It’s going to look pretty ‘dry’ since there’s more coconut than syrup, but it will cook down a little. I had a particularly high yielding coconut so it almost didn’t look like enough, but your mileage may vary. 5. Let simmer another couple minutes then remove from heat.6. Let cool a bit before proceeding…sugar is VERY hot.

Its no shock that we love Malibu as much as we do. The coconut Caribbean rum is popular by name alone. Its always been one of my favorite drinks for cocktails and mixed drinks during the summer. Then again, I do have a bit of a bias for coconut-flavored anything . Malibu loves to incorporate other fruity flavors into their coconut rum as well, and have even released their own line of sparkling cocktails.

The original Painkiller cocktail recipe is truly a tropical cocktail, hailing from the famous Soggy Dollar Bar in the British Virgin Islands.
