A Glass Of The Tropics In My Midwest Kitchen
Im not a big drinker so when I do go out with friends for drinks I never know what to order. A friend of mine is a major social butterfly and always in the know with regard to the latest popular drinks. A few years ago when we were out celebrating a milestone at work I asked her to order something for me that Id like. She brought back the most delicious drink Ive ever had which I have since recreated at home lots of times. It was simply two shots of Parrot Bay rum in a glass of pineapple juice over lots of ice and it was delightful! I was surprised that I was drinking rum as Ive never been a big fan. My sister in law drinks rum and Diet Coke which Ive tried and hated. But this tastes nothing like plain old rum. Its coconut! In fact it tastes so good and coconutty that I could probably drink it straight or over ice and really enjoy it. Id be on the floor in an hour, but Id really like it. The rum. not being on the floor.Parrot Bay is perfectly clear like water so when mixed with orange or pineapple juice it doesnt change the color much. At home I add 2 shots to a glass full of crushed ice then pour in a six ounce glass of pineapple juice, mix well and enjoy. It has become my signature drink when I have guests over and everyone really enjoys them.
What Is The History Of The Painkiller
The true original recipe isnt truly known as Daphne Henderson didnt share her exact proportions. One of her good friends and fellow bartenders decided that he had a version that was close enough. After winning a taste contest versus Daphne, he took his recipe on the road to try to earn some money from his new found fame.
He soon sold his recipe to Pussers Rum who soon trademarked the recipe. They did gave Daphnie Henderson the credit while letting the rest of us know a recipe!
- Orange Juice
For our version of the Painkiller cocktail recipe, the Coconut Rum Painkiller, we decided to embrace one of the tiki techniques. We layer two different types of rum into a single cocktail. Mixing two different types of rum gives a cocktail a more complex flavor and uses the different rums to bring the best of each style to the drink.
In the case of our Coconut Rum Painkiller, we combined the rich caramel flavors of a dark rum with an equal part coconut rum. AKA why this is the Coconut Rum Painkiller! This brings a tropical warmth to the cocktail.

These are actually wonderfully easy to make.
First, put 1/2 oz of the strawberry puree into the bottom of each glass.
Second, in a cocktail shaker mix together 4 oz mango puree, 4 oz pineapple juice, 4 oz Malibu pineapple rum and 4 oz Malibu coconut rum.
As you can tell, the math is really hard here. Use 1 oz of everything, per person, to change the cocktail recipe size.
With the orange layer mixed together, slowly pour it into the glasses, so it sits on top of the red layer, creating the nice sunset look.
Finally, top off with soda water and a beautiful skewer of bright fruit.
Serve to very appreciative guests, with a smile on your face because it looks so good.

How To Make This Pineapple Rum Cocktail
This pineapple rum cocktail is like a cross between a mojito and a Hemingway daiquiri. The elements of a mojito? Youll muddle fresh mint to infuse fresh flavor into the entire drink. Other than that, its as easy as shaking it up in a cocktail shaker. Heres what to do:
- Muddle the mint with sugar and lime wedges in a cocktail shaker. Muddle simply means to gently mash. Mashing the mint leaves releases their oils and adds a mint perfume to the drink. If you dont have a muddler, you can use a wooden spoon. See more at How to Muddle Mint.
- Add pineapple, rum, and Maraschino and shake. Add a good handful of ice, then shake the drink until cold. Strain it into a glass.
- Shake with bitters . Adding a few shakes of cocktail bitters adds nuance and intrigue to the flavors. This is especially important if youre using white rum.
Thats it! We hope you love our pineapple rum cocktail, aka the Cuba Connection!
What Rum To Use
This cocktail uses white rum, which is typically what youll use in a rum cocktail. However, you can mix things up and use a dark rum or a coconut rum instead, if you want.

What Rum Is Best For Pina Colada
Malibu rum is the brand that I use. It adds an extra tropical flavor to the drink that white rum doesnt. However, white rum is typically what is used in a Pina Colada, so you can use either.
I choose Malibu because it has a natural coconut flavour and a smooth and sweet finish. Ive tried other coconut rums before and some have a more manufactured taste that doesnt do well in this cocktail. If you want a really tasty pina colada, just stick with the Malibu.
Here are a few other options for coconut rum that you can order through Saucey, Malibu rum included .
You can also use a light or dark rum , if you cant find Malibu or just want to use what you have on hand. It will still be delicious.

Types Of Rum To Use: In Order Of Preference
You can use any type of rum in a Cuba Libre! While we like it best with a golden or aged rum, it can work with any variety. Here are the types of rum to use in a Cuba Libre drink, in order of preference:
- Golden or aged rum : Aging rum gives it a complex flavor. Golden rum can have undertones of vanilla, coconut, almond, citrus, or caramel. The aged rum that we used here was Brugal Añejo Rum .
- Dark rum: Dark rum has a dark color and a rich, developed flavor with caramel, brown sugar, and vanilla notes. It works well here, and makes a vibe similar to a Dark and Stormy .
- Pineapple rum: Pineapple rum is a popular flavored rum thats distilled with fresh pineapple. If you have some on hand, it makes for a killer drink recipe.
- White rum: White rum is clear in color and has a straightforward flavor. Its great in a Cuba Libre, but it makes it a little less interesting than the types of rum above.
