Tequila prices at the San Diego bar and restaurant can change every five minutes based on demand. If more people order one tequila brand, the price of another might drop. Software, created by Los Angeles-based The Drink Exchange, tracks what drinkers buy and flashes the changing prices of more than two dozen tequila brands on TV screens hung on the bars walls. On a recent night, a shot of Espolon Blanco tequila was $7.75 one minute and fell 50 cents to $7.25 a few minutes later. At the same time, another brand rose a dollar to $12 a shot.

The quick change in prices is known as dynamic pricing. Its a strategy airlines have used for years, charging more for flights on summer weekends or ahead of Thanksgiving and other busy holidays. Cab hailing app Uber does it, too, raising fares when more people need a ride. Now other industries are doing it, including zoos, sports teams and producers of live shows, and even more will likely join them thanks to software that can crunch data and tell businesses when prices should go up or down. The software companies say they have seen rising demand for their services. The Drink Exchange, for example, is in more than 20 restaurants or bars.

Besides more money, businesses say dynamic pricing has other benefits, such as controlling crowds.

Expect the same cooked agave and grassy notes as the blanco, with the addition of oak, vanilla and butterscotch. It is bottled at 40% ABV after being aged for two months in American white oak barrels. Its great for sipping neat or for mixing in cocktails.

Reposado Chardonnay

Double barrel aged in both American oak and French chardonnay barrels, the Reposado Chardonnay is a nontraditional reposado. It has strong notes of vanilla and cooked agave, as well as orchard fruits like pear and apple, and a hint of celery. It is aged for two months in American oak and one month in Chardonnay barrels.

Anejo

Designed as a sipping tequila, the Espolon Anejo is aged for 11 months in American oak barrels before being aged for an additional month in Wild Turkey Bourbon barrels. It is distilled at or near bottling proof, meaning there is minimal adjustment after distilling, other than the aging process. Bottled at 40% ABV, you can expect notes of dried fruits, bourbon, oak, caramel, vanilla, cinnamon, cooked agave, black pepper, and butterscotch.

Tequila is a member of the larger family of spirits mezcal. Mezcal is produced from any agave plant, however, tequila has a strict ingredient requirement: it must be made from blue agave. Obviously, this limits the availability of ingredients, which in turn drives the cost.

The limited availability of blue agave combined with an increasing demand for the popular spirit has created a significant supply issue for tequila producers.This lack of supply has allowed the increase in cost of the plant, to the tune of six times what is cost just a couple of years ago. One, the DJ añejo consistently displays no alcohol burn, with a nip in the Avión. Everything is bright, lightly spiced, rich and smooth, and you dont forget the agave presence in the Don Julio.

Second, the DJ has a consistently minimal tinge of American oak residue when the añejo hits your mouth. On the other hand, the Avión has an up-down presence of oak in the taste, which was a turn-off for some.

Casamigos añejo is neck-and-neck against Don Julios añejo in terms of pricing.

    1800 is not a bad Tequila, but I wouldnt call it anything special either. Its fine for a night out on the town, or in a cocktail or two if thats whats on the menu, but there are many alternatives that are higher quality for similar prices. Ill introduce a few of those brands below.

    First off, I have to mention Patron. Owned by Bacardi, Patron is probably the second most widely recognized name in Tequila . Bottled at 40% ABV, Patron is similar to 1800 in many other ways as well. First off, both are marketed as top-shelf Tequilas, both are at least partially made using diffuser methods, and both are surpassed in quality by lesser-known and less expensive brands. As with 1800, you could do a lot worse than drinking Patron in your margarita, and at many bars Patron or 1800 may simply be the best available option for Tequila. However, there are better buys for your home bar if youre willing to search for them.

    Espolon is one of those better buys I mentioned earlier. Its usually priced a few dollars cheaper than Patron or 1800, yet is not made using a diffuser and is similar or even superior in quality. Espolon is made with 100% Blue Weber Agave. It is owned by the Campari Group, bottled at 40% ABV from NOM 1440 in Los Altos, Jalisco, and available in Blanco, Reposado, Anejo, and Anejo X bottles.
