In the business of booze, its usually craft beers, frosé, and Instagram-worthy cocktails that get all of the buzz.

With a food cost percentage of 5%, well drinks actually have a higher profit margin than any other beverage or dish on a restaurants menu. The lower the food cost percentage, the higher the profit margin. The average food cost percentage of food at a restaurant is 25% to 40%, while beer and wine have food cost percentages of 20% to 40% and 30% to 50% respectively. Because theyre made with simple, low-cost ingredients, well drinks have the highest profit margins on the menu.

Another benefit of well drinks is that they are quick and easy to produce. In the time that it would take a bartender to make one $16 cocktail, your bartender could crank out eight vodka cranberries for $64 at $8 each no shaker needed! Have your bar manager conduct pour tests every once in a while to make sure that bartenders arent overpouring.

High profit margins and quickly produced in high volumes? Cheers to that!

To get you started, here are a few tips to boost your cocktail-making confidence:

  • The key to making drinks is the balance between sweet and sour/bitter. Try not to let one element overpower the other
  • Taste your drinks before you serve
  • If serving over ice, fill your glass to the top with it
  • Ensure your garnish is fresh and stacked close to the straws
  • Remember that we drink in three steps: with our eyes first, then with our nose and finally with our mouth

As a general rule, we recommend using 50ml gin for each cocktail unless otherwise stated. If using a liqueur, reduce this to 40ml gin and use 10ml liqueur. Balance 20ml fresh citrus juice with 15ml sugar syrup thats been made from equal parts sugar and water .

How To Maximize Your Well Drink List

Give your well drinks some TLC to turn them into money-making machines. Here are four ways to make the most of your well drinks list.

1. Give your well drinks special names. A vodka tonic could be Spiked Soda while a Tequila Sunrise could be Cancun in a Cup. Rebrand your well drinks with memorable names to make them seem like more than well drinks. This means that you can get away with charging more for them while still keeping prices below premium craft cocktails on your menu.

2. Dress them up. A drink in a plastic cup isnt as memorable! Make your well drinks stand out by giving them garnishes like mint leaves and citrus wedges, pouring them into special glasses , or using fresh squeezed juices. Make sure to hire a barback to assist bartenders and keep garnish ingredients fresh no one likes wilted herbs in their drinks!

3. Happier hour. Pair your well drinks list with premium food items during happy hour to upsell more expensive items on your menu. For example, your restaurant may charge $8 for a well drink and $15 for a premium sushi roll. The premium rolls have high profit margins for your business, but theyre rarely ordered because your customers choose cheaper options. During happy hour, you could pair a well drink with a premium sushi roll and offer both for a discount both for $20 instead of $23. This kind of promotion gets customers to try more expensive items on your menu in the hopes that theyll want to pay full price next time.

What Kind Of Gin Should I Use To Make A Gin And Tonic

When making gin and tonics, choose a gin that is mid- to high-shelf. A London dry gin , Plymouth or Bombay work well. London dry gins will be more straightforward in flavor while Plymouth gin will be a bit more aromatic. Weve also used Bombay Sapphire and loved it, but we really enjoy Sapphires extra spiciness.

I prefer the tonic water sold in the smaller, single-serving bottles. The tonic will be fresh and you wont lose any fizz. A lot of people swear by Schweppes, but we cant say we have noticed a difference enough to specify on that one. We particularly enjoy the Fever Tree and Q tonics.

For a lower calorie cocktail, you can use light tonic. Light tonic doesnt have as much flavor as regular, but it does help to lower the calories. You can also water regular tonic down with a little seltzer water or club soda.

Lemon Juice Or Lemonade

The choice between these two comes down to whether you want a sweet drink or not. If youre looking for something simple, citrusy, and bitter, go for the lemon juice. If its a hot day and youre going to be sitting on the porch with an aunt who never knows when to shut up about, well, everything, then go with the lemonade. The lemon smell and the sugar content will cover up the gin and youll be able to get through every tangent your aunt has on every topic from aardvarks to the inevitable heat death of the universe.

What Is The Best Ratio Of Gin To Tonic

A gin and tonic should be crisp and refreshing, never boozy or heavy. After doing some research, ratios can vary. Some enjoy equal parts gin to tonic, others reduce the gin and double the tonic. For us, we liked it right in the middle, which kept the drink light and crisp, but still aromatic from the gin.

I dont like to play favoritesexcept when it comes to spirits. In that case, gin is the clear frontrunner: It’s light, yet interesting. Refreshing, yet 80 proof alcohol. It plays well with seltzer, but mixes nicely with stronger flavors like ginger.

Those who work intimately with this spirit will tell you that, when it comes to cocktails, it’s all about keeping things simple so the gin itself can sing. If you’re a gin drinker, you definitely know what you like you tend to stay with the classics, says Linda Bassina, who runs the bar at the distillery Copper Crow in Bayfield, Wisconsin, a Native American-owned distillery that opened after a 184-year ban on Native American distilling was lifted in 2018. And, and then just kind of play with your add ons, your fruits, your botanicals, your herbs, your herbals and then your mixers. They need to be high quality and pure.

The easiest way to start mixing? We turn classic cocktails that sprung up around the globe over the years and have stood the test of time. Gin has deep roots, reaching back to the 11th century, when Benedictine monks in Salerno, Italy, whose monastery grew lush with juniper trees, distilled something similar for medicinal purposes. In more recent centuries, we associate gin most closely with England, where gin production surged during the mid 18th-century during the Gin Craze. Suffice to say, there’s plenty of inspiration to find across the globe.

A Classic New York City Martini

No offense to vodka, but in my mind, the gin martini is the only martini. This iconic cocktail is said to have originated in the Knickerbocker Hotel in New York City in 1906, served by a bartender named Martini di Arma di Taggia, to John D. Rockefeller. For such a famous cocktail, there are quite a few ways it can be made. Shaken or stirred? Dry vermouth or sweet? Olive or lemon twist? Most martini drinkers have their preferences, but you can also just follow the Knickerbocker’s original recipe: Combine two ounces of Tanqueray 10, ¾ ounces of dry vermouth and a ½ ounce of sweet vermouth in a mixing glass, then add two dashes of orange and citrus bitters. Add ice, stir, garnish, and serve.

There is a great range of orange sodas from Fanta , the French Orangina and a firm favourite of many San Pellegrino.

When combined with gin, it makes a drink that is delightfully summery. I would recommend serving it Gin Tonica style with plenty of ice and a fresh citrus garnish youll feel like youre sippin on sunshine!

Other citrus sodas include Fanta Lemon, which is notably popular as a gin mixer in Spain and the Balearic Islands it also mixes wonderfully with sloe gin. The Double Lemon from Double Dutch has a similar character, but with the added bitterness of quassia bark. Finally, there is Ting, a grapefruit-flavoured soda that comes from the Caribbean.

Mix it up: What makes a good gin and tonic?

Talking about the Aromatic Tonic Water, that actually takes me back to when I first started bartending. If I can recollect, I think pink gins, back in the days, actually stemmed from maybe the 60’s and 70’s. When I first started bartending in the 90’s, pink gins were all about your standard gin, with an addition of tonic Angostura bitters added in. And that’s why Fever-Tree launched their Aromatic Tonic Water. Obviously, Angostura is in there. So this tonic water is designed to go more with your robust and juniper kind of gins. Opihr, being a big one that I serve that with, is some kind of heavy gin. There are also the likes of Sipsmith, normal Tanqueray. Specifically, these are my favorites because I’m Cornish- I really love putting that with Tarquin’s as well. And that is that about the Aromatic Tonic Water.

That is all about Fever-Tree’s flavoured tonic waters. In the next video, Ill check in and I’m gonna be focusing on Double Dutch. So if you’d love to take a listen, then stay tuned to the couple of time, couple of days time because Double Dutch Flavoured Tonics are gonna be rolling out.
