Preheat your pizza oven 850°F/450°C.

Lightly dust your pizza peel with flour and place your pizza crust on it .

Spread pizza sauce evenly on your pizza crust leaving a half inch border.

Drain your fresh mozzarella cheese and either slice or tear it and place it evenly on the pizza sauce.

Using the pizza peel, place the pizza in the Ooni oven and cook for approximately 2 3 minutes, turning every 20 seconds to ensure it cooks evenly.

When cooked, remove from the oven and garnish with fresh basil leaves, kosher salt, and red pepper flakes.

Serve immediately and enjoy your Margherita pizza!

How To Stretch Pizza Dough

  • Working on a floured surface, with floured hands, softly pat down the risen ball of dough into a circle, rotating it as you do.
  • Using the tips of your fingers, push down gently around the perimeter of the pie, rotating it as you do, to create the edge.
  • Pick up the dough and lightly pass it back and forth between your palms, trying to rotate it each time you do, using gravity to help the dough stretch. At about 12 inches in diameter, the pizza is ready to go.
  • Return the pizza to the floured surface, making sure that the side that you first pressed down on remains facing upward, and gently slide the pie back and forth a few times to make sure that it does not stick. Add a little more flour to the surface beneath the pie if it does.
  • Gently slide a lightly floured pizza peel beneath the pie, or place it carefully on a floured cutting board or the back of a baking pan. Make sure again that the dough can slide back and forth. If it does, the pie is certified for topping.

    The time has come! Ive been teasing you on for weeks, and I sincerely apologize. I was busy eating this margherita pizza.

    Ok, so let me be honest. I rarely ever, EVER tell you that a recipe is the best of anything. Let alone, put it in caps! Sure, Ill say that something is delicious, but declaring such bold statements generally makes me extremely uncomfortable.     Im not an authority on homemade pizza by any means, but Ive definitely eaten my share of pizza, both excellent and not so great.

    The best margherita pizza that Ive ever eaten in my entire life was in Naples, Italy a few years ago during our trip to the Amalfi Coast. We stood in line in a cobblestone street just off of Via Tribunali in the historic neighborhood , and snagged a table at the famous Gino Sorbillo.

    Oh, but it was glorious. The pizzas cost only three euros and arrived flopping off of the plates. Literally, flopping. They were huge. I ate every last bite of that pizza and came back for another one the very next day.

    How To Make Margherita Pizza

    Before you get started, make sure you use the best homemade pizza dough! < < That recipe is quick and easy, tried and true!

  • Place a pizza stone in the oven. Preheat the oven to 500 degrees F, allowing the stone to get hot.
  • Shape the pizza dough on a floured surface into an 8-inch round, making it 1/4-inch thick. Transfer it to a pizza peel lined with parchment paper. Reshape if necessary.
  • Gently brush the dough with the olive oil, then evenly spread the marinara sauce on, leaving a 1-inch border around the edge. Sprinkle the garlic over the top. Top with the mozzarella slices and tomatoes, leaving space in between.
  • Slide the parchment with the crust onto the heated stone. Bake for 8-10 minutes until crust is golden and cheese is melted and bubbly.
  • Remove from oven and sprinkle the basil over the top, along with 1-2 grinds of fresh black pepper.
  • Cut into wedges and serve immediately.

    For the best margherita pizza, you will want to preheat your oven to the highest temperature possible. For my oven, that is 550 degrees Fahrenheit. I allow my baking steel to preheat for at least 30 minutes . The higher the temperature the better.

    This recipe makes two 10-inch pizzas, and they should be able to properly cook in 7 to 8 minutes at that temperature.

    Modification For Indoor Oven

    If you do not have a pizza oven that can get a stone to 700 degrees, the next best option is to use your oven and a pizza stone. This method is inspired by Ken Forkish, a legend in wood fired pizzas.

    Total cooking time : 8 minutes

  • Position your pizza stone to the third slot from the broiler . Preheat your oven and pizza stone to 550 degrees F for 30 minutes.
  • Then put the broiler on high for 10 minutes. This adds more heat to get the pizza stone to 600 degrees F. You dont want the stone on the top slot as the amount of heat may crack the stone.
  • After 10 minutes, turn off broil and adjust the heat back to 550 degrees F and then place the pizza directly on the stone. Cook for two minutes, and then rotate the pizza 180 degrees using a turning pizza peel or tongs.
  • Let cook an additional 4 minutes and then turn the broiler on high. Cook an additional 2 minutes under broiler or until you see the mozzarella melted and the base of the dough cooked.
  • Remove, add finishing salt and then serve.

    In lieu of fresh Roma tomatoes that are traditionally used on a Margherita pizza, I substituted some cherry tomatoes since there is no such thing as a fresh Roma tomato in Wisconsin this time of year. This proved to be an incredibly flavorful switch. My 500-degree oven effectively roasted these little cherry tomatoes, causing their skins to split, quite literally, making this pizza Margherita burst with flavor.
