Flavored And Spiced Rum

The myriad types of flavors and spices infused into rums offer a wide range of interesting and multifarious variations of spirits, both full proof and limited potency liqueurs and creams. Spiced and flavored types of rum offer unique flavors to cocktails, rum cakes, holiday libations and many other uses, bringing decidedly tropical flavors to the palate.

Spices are generally derived from the seeds, dried fruit, root, leaf or bark of edible flora. These aromatic and pungent vegetal substances often provide excitement and zest to sweeter liquids. Many popular spiced concoctions were originally devised and distilled as medicinal cures and treatments for a laundry list of ailments known to plague modern society in the post-industrial generations. Many popular drink ingredients in the category of bitters evolved from such intendedly curative mixtures.

Roots of ginger, seeds of vanilla and allspice, bark of cinnamon or cassia and buds of clove are commonly used as flavoring agents for spiced rums. Fruit extracts of citrus, cherry, mint, black currant, coconut, mango, pineapple, banana and other tropical plants and trees bring luscious tones to flavored rum varieties.

Rum creams combine rum flavor with rich and decadent dairy textures to create dessert-like mixtures suitable for after-dinner libations or as a creamy base to other spirited drinks.

Rum Begins With Sugar Cane Which Is Pressed To Extract The Water And The Sugar Juice

Some producers use this sugar cane juice as the base of their rum while others boil the juice further to create either a cane syrup or molasses. The juice, syrup or molasses is combined with water and yeast and fermented for as little as a day to upwards of two weeks. Then Magic! The yeast eats all the sugar leaving the producer with pure alcohol. The alcohol is then distilled and aged. Its the blending process that can cause some skepticism on whether the rum is truly sugar free. If the producer is going to add sugar or additives, it will be at this time.

Unfortunately, most producers are not forthcoming as to whether they add anything back into the rum during the blending process becausewe put simply, they are not regulated by their country to do so. Regulations run the gamut from zero requirements to requiring minimum aging time. Jamaica is one of the few countries where its illegal to adulterate rum without the permission from the government.

Plantation Xaymaca Special Dry

This special Barbados rum is the creation of Alexandre Gabriel, who grew up working hard, tending the land, and learning from his grandfather. He went on to earn a degree from Macalester College in Minnesota and soon began working at Maison Ferrand a well-respected cognac house in France.

Plantation Xaymaca Special Dry is distilled from sugar cane that is crushed immediately after harvesting. This minimizes the deterioration of raw sugar. Once crushed, its fermented and distilled through a combination of column and pot stills, each of which produces a different type of rum.

The column still gives a light, sweet rum while the pot produces a heavier and more viscous rum. These two are combined to create a traditional, delicious, Jamaican-style rum with a complex profile.

On the nose, you get flambeed pineapple and black banana followed by fruity, smokey notes on the front of the palate. Youll also notice a mixture of sweet banana, citrus, vanilla, more pineapple, exotic fruits, and a touch of roses. The finish changes it up yet again with notes of coconut and baking spice.

About Rum Punch A Little History

So I really love to dance Zumba and SocaFit, and many of my classmates and teachers are from the Caribbean islands.

Every party we have, someone brings their version of rum punch. And there are thousands of versions. When I decided to make my own version, I wanted to know more about the history of rum punch.

Basically, when the English were sailing around the world being jerks as part of the British East India Company, they drank a lot of beer on the ships.

Like 11 pints a day per person. And, they were on the ships for a long time.

Towards the end of their trips, the beer was rancid and flat. On the return home, they needed a new alcoholic beverage to drink- so they used what they found at their destination.

In the East Indies and the Caribbean, those ingredients were rum, fruit, and spices. a mix was made for the journey home, and rum punch was born.

Today rum drinks are a popular part of mainstream culture throughout the Caribbean islands, and there are as many rum punch recipes as there are families.

Rums link to pirates and sailors hasnt given the spirit a particularly refined history or reputation. Still, all of this seems to be changing. Rum can now be seen in many cocktails, ranging from the simple to the complex, the fun to the refined. At the same time, there are many rum mixers to choose from.

Rum mixers allow you to enjoy all the delicious flavors that rum has to offer, without creating complex cocktails. Instead, youll just need the rum itself and one other ingredient. A squeeze of lemon juice or lime juice often helps too, but even this isnt essential.

As with other spirits , the best mixer is going to partly depend on the rum that you choose. This choice is especially important for rum, as there can be major differences between different rums.

The variation is partly because rum is just defined as a spirit created from sugar. Most rum is made from molasses, but cane sugar can be used instead and is in some cases.

There are three main types of rum light, dark, and spiced. Dark rum has been aged, which gives it a more complex flavor profile, while light rum hasnt been through much aging. Spiced rum, as the name suggests, has spices added in.

Youll also find variations in other areas. For example, Jamaican rum is likely to be dark or golden, with fairly intense flavors, while Cuban rum is often lighter. There isnt a single best type of rum, but the rum that you choose will influence the taste of your drink.

    Courtesy of Total Wine

Region: Jamaica | ABV: 63% | Tasting Notes: Stone fruit, Banana, Cake

Wray & Nephew Overproof Jamaican Rum is a great one to have around, says Cory Mendonca of Main St. Provisions in Las Vegas. Mendonca likes to making cocktails with this rum by splicing it with other rums or spirits as the base he also uses this rum in small amounts as a modifier.

It lends this fiery, sort of old world, eau-de-vie intensity and earthy rum funk that can really add some curiosity to a cocktail, he explains.

Use it in a Piña Colada to really add intensity of flavor, along with a boost in ABV, which will dilute nicely when mixed with the other ingredients.
