Now, for the differences between Scotch, bourbon, and rye. Back to Encyclopedia Britannica:
Scotch is a whisky that gets its distinctive smoky flavor from the process in which it is made: the grain, primarily barley, is malted and then heated over a peat fire. A whisky cannot be called Scotch unless it is entirely produced and bottled in Scotland.
Bourbon, a whiskey that was first produced in Kentucky, U.S., uses at least 51 percent mash from corn in its production. It also uses a sour mash process that is, the mash is fermented with yeast and includes a portion from a mash that has already been fermented. U.S. regulations specify that in order for a whiskey to be called bourbon, it must be made in the United States.
And rye whiskey? Its a whiskey that uses a rye mash or a rye and malt mash. In the United States, regulations stipulate that the mash must be at least 51 percent rye in order for it to be called rye whiskey. In Canada, regulations do not specify a minimum percentage of rye.

A Little About Bourbon
Bourbon is a whiskey that is made from a mash that is at least 51% corn. A whiskey can only be called bourbon if it is made in the United States. There are some other things that are characteristic of a bourbon. For one, the liquor cannot have a higher alcohol content then 62.5% when it is added to the wooden cask to age. There is no minimum age requirement for bourbon, but to be called straight bourbon it does have to be aged for at least two years.
What Does This Mean For Your Cocktail
Many classic whiskey cocktails, such as the Manhattan, old fashioned, and whiskey sour, were originally designed to be made with rye. However, most bars will use bourbon for these drinks nowadays because of its booming popularity and drinkability.
The proper whiskey for your cocktail comes down to one question: do you want sugar, or spice?
The sweetness of bourbon usually goes well with whiskey sours and summertime drinks. Manhattans, on the other hand, will benefit from the dryness of rye. If your cocktail already contains sugar, like an old fashioned, rye will balance it out and bourbon will make it extra sweet.

Getting Started: Picking Your Whiskey Mash Ingredients
Like we mentioned above, whiskey is a spirit which has many different varieties and styles. The biggest variations between different whiskeys lie in their mash ingredients. A whiskey mash can be made with corn, rye, wheat, oats, maize or barley. By mixing percentages of these ingredients you can create a range of different tastes and flavors. Bourbon, for example, must contain at least 51% corn in order to be called a bourbon whiskey, while Rye Whiskey must have 51% rye included in its mash to be classified as a Rye Whiskey.
For this distilling guide, and keeping with an American tradition, well be using the same mash bill that George Washingtons distillery used to create his Rye Whiskey at Mount Vernon. It consists of 60% rye, 35% corn, and 5% barley. Rye gives the whiskey a range of spicy notes including pepper, nutmeg, clove, caraway, and cinnamon. These flavors are all intensified during the aging process, which gives the whiskey its bite. Corn is responsible for the sweeter tones in the whiskeys flavor. The barley is added to the mix as a way to help convert starches to sugar for the fermentation process and also provides an underlying malty and chocolate flavor.
The 30 Best Rye Whiskey Brands
If youve only encountered rye whiskey in passing, you may still be familiar with two common descriptions of the spirit: that its bourbons spicier sibling, and that its crucial in the creation of a handful of classic cocktails. While these statements ring true, they also benefit from further elaboration.
The inclusion of rye in any mash bill indeed lends a spicy kick, but that characteristic can take on many forms, from savory spice, like caraway and black pepper, to sweet baking spices, such as cinnamon and cloves. Another distinguishing factor that defines many rye whiskeys is fresh, herbal notes think dill and mint. Though not always present, these notes complement the grains signature spice, but it would be a stretch to define them as spicy by nature.
On the cocktail front, its true that rye is vital for any properly made Manhattan or Sazerac, and competently takes the place of bourbon in an Old Fashioned or Boulevardier. But were it not for the revival of those cocktails, theres a high chance that rye would have continued down its path of dwindling popularity to reach near extinction by this point. In short: Rye is essential in these drinks but the drinks themselves are just as important in the whiskeys modern history.

Differences Between Rye And Bourbon
Rye grain is known for imparting what many call a spicy or fruity flavor to the whiskey. Bourbon, distilled from at least 51% corn, is noticeably sweeter and tends to be more full-bodied than rye. As bourbon gained popularity beyond the southern United States, bartenders increasingly substituted it for rye in cocktails such as the whiskey sour, Manhattan, and Old Fashioned, which were originally made with rye. Despite ryes recent burst of popularity, for a time it was represented consistently by only three brands: Jim Beam, Old Overholt and Wild Turkey. Then the bourbon boom spilled over into rye, and Eddie Russell stepped up rye production. With an excess of rye, he decided to let some barrels age a bit longer. The most interesting thing is that Wild Turkey only uses two mashbills and one yeast. So to taste their lineup is to taste differences that purely came from aging. Their rye is 51 percent rye, 37 percent corn and 12 percent barley, leading to a more complex, sweet and bold rye thats ideal for cocktails or sipping neat. Youll be hard-pressed to find a more consistently excellent and available product at a fair price.

Ryes rebirth is in many ways owed to the bartenders who re-popularized the spirit. I definitely think bartenders helped revive that, because its that constant search to have the cocktail the way it was originally made, says Taylor. When we go through these old recipe books and it calls for rye or it calls for a gomme syrup or this thing or that thing, we want to source it and make it the way it was originally supposed to be had.
As more bartenders began churning out old-school whiskey cocktails, rye became a frequent bar staple, and cocktails are often the best introductory tool to introduce a consumer to any kind of spirit or ingredient. It wasnt long before bar customers ordering up perfectly stirred Manhattans were also asking about the whiskey being used and then searching for it on store shelves to bring home.

What Is Rye Whiskey Made Of And How Is It Made
I know you can look up the answer on Wikipedia, but I thought Id look back in time a bit to find some explanations that are a minimum of fifty years old. Why? because I like to know how things used to be done.
Rye whiskey is made from rye and malt, and depending on the recipe smaller amounts of other grains, including wheat and corn. The addition of other grains in addition to rye appears to be a more recent addition to the standard recipe. The process begins with grinding the grains separately from the malt. After grinding, the grains are placed into a mash tank.
The next step is to prepare the malt. Barley is kept between 50 and 60 degrees and steeped in water until it sprouts. After 10 to 14 days the roots should grow between 1/2 to 1 inches long. It is then kept moist and at a temperature less than 60 degrees and aerated until the sprouts develop. It is then heated to no more than 140 to 158 degrees and 2 to 3 percent moisture. The resulting product is called maltose. After this roasting, the maltose is ground in preparation for adding it to the mash. The maltose contains enzymes which convert the unfermentable grain starch into fermentable sugar. Even at no more than 10% it can convert all of the starch in the unmalted grains.
