One of the things that sets this cocktail apart is that it is one of the few drinks people order using the name of their preferred rum, ordering it as a Bacardi Coke or Captain Coke. This is due in part to effective marketing campaigns by Bacardi and Captain Morgan and to how much the drink changes based on the rum being used.

There are four main types of rum white, gold, aged, and spiced. Each of them brings something different to the party.

Fermenting The Sugar Cane Or Molasses Wash

Now that you have your wash, youll need to start producing some alcohol. Thats where fermentation comes in, where the addition of yeast can start converting the sugars in your wash to alcohol.

It may not be the most fun part of the brewing process, but its definitely the key part in getting that iconic taste from the rums youre used to.

  • Once you have your rum wash to the appropriate 80 degrees F, you can add your Rum Turbo Yeast. This is a specialized yeast that differs from your usual bread yeast and can produce around 12% ABV in your spirit if fermented properly. You can opt for standard Distillers Yeast if you dont have this variant available.
  • Keep your drink light by aerating the mixture. You can do this by sloshing your wash between two containers for 5 minutes. Alternatively, if you have an immersion blender this can also help generate air within your wash.
  • Now you can pour your wash into your fermentation bucket. Most commercial fermentation set-ups have a cap and air-lock, as well as additional spigots for easier pouring.
  • Seal your fermentation bucker well and store it in a well-ventilated and dark place for about 2 weeks.
  • In-between these two weeks youll want to be checking the air-lock on your set-up. It should be slowly releasing the carbon dioxide from the yeasts alcohol production.

    Since our hypothetical homemade rum contains some molasses, you can expect the flavor to remain sweet despite the length of fermentation.

    How Strong Is Long Island Iced Tea

    The five liquors make Long Island iced tea seem like a strong drink, but if you do the math, it’s not terribly potent compared to other cocktails. When you pour 80-proof liquors, 60-proof triple sec, and top it with 2 ounces of soda, its alcohol content falls in the 16 percent ABV range. That is about the same as a strong rum and Coke and half the strength of a gin martini.

    Perfect Rum And Coke Ratio

    The perfect ratio of Rum and Coke is between 1:2 and 1:3. As it is a classic Highball recipe, proportions are essential for getting things right. As I said, Highballs are mixed drinks based on a spirit, lots of ice, and a filler only. Therefore, it is crucial to pay attention to every detail. Its all about choosing the right ingredients, using enough ice, and having the correct ratio.

    I suggest you start with a Highball glass and fill it up with quality ice. Pour in 2 ounces of your Rum of choice followed by 4 ounces of Coke. That means you start with a 1:2 ratio, and from there, you can gradually increase the amount of Coke until the mixture is to your liking.

    As a rule of thumb, the higher the quality of your Rum, the fewer Coke you want to use. Generally, in a recipe based on white Rum, your ratio should be more like 1:3. In a version made with aged Rum, you better aim for a ratio of 1:2. That allows the Rum flavors to create a more complex drink.

    • Feel free to go dark. I love to use light rum because its naturally sweeter and a little more subtle. However, feel free to swap it with dark aged rum or golden. Just pick something you already like.
    • Adjust the ratio. While I prefer the flavor combination of double the cola and half the rum, you may want to go with equal portions of each. Play around with the flavors until it reaches your desired result.
    • Give it a citrus twist. You could simply add the garnish and start drinking, OR you could add a squeeze of lime. The lime will soften the sweetness of the coke and give the mixed drink a little more acidity. For optimal flavor, squeeze the lime straight into the glass.
    • Stick with good quality ingredients. Its worth it to buy quality coke and rum. Using good quality ingredients will keep the sweetness and acidity ratios perfect, so the drink is more enjoyable.

    • The best rum for a rum and coke? Aged rum! Aged rum aka golden rum is aged longer than white rum, giving it a depth in flavor. It can have notes of vanilla, coconut, almond, citrus, or caramel. The aged rum that we used here was Brugal Añejo Rum.

    Whats the history behind this famous cocktail? The Rum and Coke is also known as the Cuba Libre, a 3-ingredient cocktail made with lime, cola and rum that originated in Cuba in the early 1900s. Cuba Libre means Free Cuba in Spanish. Its a rallying cry that came from the Spanish American war in 1898, calling for Cuban independence from Spain.

    The exact person who invented the Cuba Libre drink is unknown! But the drink became very popular in Cuba in the early 1900s when Coca Cola was exported to Cuba.     Process Of Wash Production

  • You start by prepping 5.5 gallons of water in your brew pot. Bring it up to 125 degrees F, essentially maintaining boiling water.
  • Now slowly stir in the raw cane sugar and blackstrap molasses until you get a nice homogenous product. This may take a while so get some music going so you dont get bored doing this.
  • Once you have your dissolved sugar and molasses mixture, add the remaining gallon of water to bring down the temperate of the hot water-sugar mix. You can even opt to chill the remaining gallon to get some cold water so the wash temperature goes down faster.
  • Use that thermometer you have to check the temp of the mixture as it slowly cools. Keep stirring the mix, around 30 seconds every 5 minutes if you can manage, until you get to a temperature of about 80 degrees F.
  • If you have an immersion cooler you can speed things up as the water mixture cool time can take people several hours to complete.
  • Compared to other alcohol brewing methods that have whole solids in their wash, you wont need to be straining this molasses and sugar water combination.

    Simply cool down the rum wash to begin the next step of fermentation.

    What Type Of Rum Should You Use

    Rum comes in many different styles from lots of different places, and just about any decent quality rum will be great.

    If you’ve never tried a Rum + Coke start of with a white rum for a crisp classic flavor and then move on from there.

    Smith and Cross is one of my favorite rums for cocktails. It’s a Jamaican overproof rum that tastes like super ripe bananas, caramel, and toffee.

    The drink is also great with dark, overproof, pot still, and demerara rums, or try it with Rhum Agricole or Cachaca for a funky twist.

    I would only suggest not using spiced rum since there are plenty of spice flavors in coke and it can make the drink come across too sweet .

    This is one of those small things that most people donât think about when theyâre mixing up a rum and coke. There are two different types of Coca-cola available in the States that have fairly different flavor profiles.

    Thereâs the everyday Coke that is available everywhere and Mexican Coke that comes in tall glass bottles and is becoming more available in grocery stores and bodegas. The major difference between them is that everyday Coke is made with high fruticose corn syrup and the Mexican Coke, named because thatâs where its bottled, is made with sugar cane.

    What Ratio Of Rum To Coke Should You Use

    Letâs be honest thereâs not a lot of technique that goes into making a this drink. There are no floats, you donât have to shake it or even run it through a blender, itâs just mixing two liquids over ice.

    The reason the ratio matters so much is because the drink is so simple. The classic ratio cited in most older recipes is 1 part rum to 2 parts coke. A number of more recent writers argue for a ratio of 1 to 3 saying its a better fit for peopleâs current preference for sweet drinks.

    For a great rum and coke, we use a ratio of 1 part rum to 2.5 parts coke, which works out to 2 ounces of rum to 5 ounces of coke in a 10-ounce highball glass filled with ice.

    The added advantage of using this ratio, if youâre using cans of coke, is you can make two drinks for each can.

    What we found in our testing is that a 1:2 ratio is very rum forward that will likely overpower drinkers who donât love the taste of rum by its lonesome. On the other end, one made with a 1:3 ratio tastes a lot like a glass a coke and feels like the bartender is skimping on you.

    While a drink made with a ratio of 1:2.5 is nicely balanced and was very much the middle bear in our testing with just the right amount of rum to coke.
