With an average price of $36,000 per bottle, this very fine and beautiful spirit is not to be missed.

In July 2019, the £140 million new distillery and visitor experience, on the Easter Elchies estate near Craigellachie, made the shortlist for the Stirling Prize for excellence in architecture. It was designed by Rogers Stirk Harbour + Partners. In 2019 the distillery won the 2019 RIAS Andrew Doolan Best Building in Scotland Award, and was nominated for the Stirling Prize.

The distillery has 36 stills, comprising 12 wash stills and 24 spirit stills.

What Makes A Macallan Whisky

Macallan was founded in 1824 by Alexander Reid, a barley farmer and school teacher. The distillery was one of thefirst to receive a legal licence in Scotland.

Located on a 390-acre estate in the Scottish Highlands and by the River Spey, Macallan is a Speyside whisky: a single malt Scotch distilled in Strathspey. Speyside whiskies are known for their lightness and sweetness, more approachable than peat-heavy Islay whiskies, and with unique apple, pear, honey, vanilla, and spice notes.

Distillation takes place in 25 copper stillsthe smallest to be found in Speyside, holding 3,900 litres each. This reduced size allows the maximum surface contact between the alcohol and the copper, lending the drink adistinct richness and body.

Only 16% of the distilled spirit is used. By picking just the finest cut, the distillery can ensure that famously smooth and viscous mouth-feel and that fruity aroma and flavour.

Next, the question of barrels. At Macallan, the emphasis is firmly on the casks. In fact, they are the only Scotch distillers with a designated Master of Wood whose job it is to source the barrels from trees in the US and Spain, after which they are dried, shaped, and seasoned.

Today, Macallan spends more per cask than any other distillery.

In terms of colour, Macallan whisky is quite lightbut dont let that put you off. Many whiskies get their golden hue from artificial colourings and so Macallans lighter shade is actually proof of its superior quality.

A bottle of 64-year-old Macallan whisky in a Lalique Cire Perdue decanter was placed at an auction in 2010. At the time of its sale, it was the most expensive whiskey ever sold and no less than the Guinness World Records testified to the feat. The craziest part of the sales was that the proceeds were given to charity.

What Does Macallan Do Differently

The Mac uses much smaller stills than the average size at most distilleries. While at first this might seem limiting, it actually produces much more concentrated low-wine. The smaller batches are easier to control, so the master distiller has a much easier time being precise in their measurements and cuts. Smaller batches also means greater interaction with the copper of the pot stills, which adds greater flavor.

Im particularly fond of the 14 year carribean cask, which is finished in rum barrels. The Balvenie line is a great chance to compare the effects of cask aging on a whisky, especially when held up side by side with a Macallan Sherry Cask.

Knob Creek Cask Strength Rye

This Cask Strength Rye Whiskey from Knob Creek is another San Francisco World Spirits Competition winner, earning Best Rye Whiskey back in 2018. Its the first limited rye that Knob Creek has released , with each bottle indicating that it was barreled in 2009.
