Don Ramon Cristalino Tequilas
All the cristalinos Ive seen so far have been, as the name implies, crystal clear. This isnt the case with Don Ramons cristalino tequilas, however. The first thing you notice is that the anejo has an almost imperceptible pale straw color, and the color of the reposado is just a little more noticeable. This is a decision made by the maestro tequilero as a reflection of the qualities of the original aged spirits.

I recently reviewed and rated the first mezcal from Casa Don Ramon, a distillery previously only known for its tequilas. What Is The Difference Between Reposado And Aejo
The answer is time.
Both spirits are tequila, made from agave. But reposados and añejos are very different different in the fermentation process, color, and even flavor.
Reposado means rested and añejo means vintage or aged. So it makes sense that añejos are aged longer than reposados after the distillation process. And this aging process does add depth and complexity to flavors.
Another difference is price. It stands to logic that reposados, with less time between distillation and consumption, are a bit less expensive than añejos. But the richness of an añejo, when sipped properly, is usually worth the extra expense.
Heres your tequila cheat sheet.
- Añejo means vintage or aged and reposado means rested.
- Añejo tequila is aged for a minimum of one year but not more than 3 years, while reposado is aged for a minimum of 2 months but not more than a year.
- Añejo is kept in special small barrels. Reposados are kept in all types of barrels.
- As añejo is aged, more complex flavors are imparted to the tequila. Reposados typically retain a mellow oak flavor.
- Reposados are a light straw-yellow color, especially when compared to the dark amber or caramel color of añejo tequila.

How To Drink It
This actually seems to be the biggest mystery among the uninitiated nobody seems to know how to drink tequila outside of margaritas and shots.
You can apply most of the same rules to tequila that you would to whiskey or scotch. If drinking something good, an aficionado will drink 3-5oz. out of a snifter served at room temperature, or on the rocks. Thats it. Theres no need to shake the glass or sniff it, the aromas will become more prevalent as you are drinking. One drink should last you most of the night .
Remember, the good stuff is to be enjoyed, not pounded. If the flavor is too intense for you, salt about an inch of your glass and have a slice of lime on hand as a quick chaser. A good tequila should have a warm kick to it, and it should start in your chest
When taking a shot, always remember to raise your glass before drinking if you are with company. Its not required that a full, heavy hearted toast be delivered upon every shot, but its generally considered a courtesy to give your fine drink and even finer company the nod. If everyone is taking a shot , then a good customary toast is, in unison, Parriba! Pabajo! Pal Centro! Y Pa Dentro! . Once again, if the flavor is too intense salt, shot, lime.
If you want something different , make yourself Sangrita by combining orange juice, tomato juice, and cayenne powder. Take this sweet/spicy mixture in alternating shots with your tequila of choice, no salt or lime needed.
