Cream Cheese I havent found a substitute for this as it changes the consistency when you dont use it. But you can use whatever brand youd like.

Shredded Cheese You can use whatever kind you want. We have made this using sharp cheddar, white cheddar, colby and pepper jack but I truly believe you can use whatever kind of cheese that melts well that you enjoy.

This recipe is ridiculously simple, and can be made as is or it can be changed up to fit what you are craving at the moment.

Change to a pepper jack for a spicier beer cheese dip, or use mozzarella for a milder cheese dip. Try the dip multiple times with different cheeses!

Its like having a dozen recipes in one!

You could also add herbs or seasonings if you wanted to make it your own as well.

What Beer Should I Use In This Beer Cheese Dip

The stoutness of the beer will have an effect on the final taste, so use the type of beer you like. The stronger/stouter the beer, the more beer flavor the dip will have.

If you dont like drinking stout/heavy/bitter beer, definitely dont use it in this recipe.

I used Shiner Bock and even though its not my fave to drink, I enjoyed it in the dip!

For a standard beer cheese sauce, I really prefer a sharp shredded cheddar cheese. Its important that no matter what cheese you use, you shred your own.

Why should you avoid pre-shredded cheese when making any cheese sauce? Well, pre-shredded cheeses are coated to prevent sticking and clumping in the packaging. This impacts the outcome of how well your sauce holds together .

Other options for this beer cheese dip would be:

  • Smoked Cheddars or Other Smoked Cheeses
  • Spicy Pepper Jack

For this recipe I used-

  • 1, 12 oz. Low Carb Beer
  • 8 oz. Softened Cream Cheese
  • 8 oz. Block of Shredded Cheese

I always like to add salt and pepper and sometimes depending on what I used the sauce for, I may add other spices like my all purpose BBQ rub, this Cajun BBQ dry rub, or even myhomemade Tajin seasoning blend with some pepper jack cheese too!

  • Butter and flour: create a roux that thickens the dip. Make sure to fully incorporate the roux into the milk before adding the cheese.
  • Milk: helps thin the sauce so its easy to dip. If your dip becomes too thick after adding the cheese, thin it with a few tablespoons of milk.
  • Beer: we are using a lager but you could also use a pale ale, blonde ale, or wheat beer. Just avoid stouts and sours!
  • Cheese: we love the combination of mozzarella and cheddar it melts smoothly and gives great flavor! But you could swap out the cheese for what you have on hand gruyere, fontina, monterey jack, etc.
