Aged for a minimum of 14 years in bourbon barrels and finished in Oloroso sherry casks , this rarefied Irish whiskey is luxury in a glass.

With apricots, honey, and toasted nuts on the nose, it shows up soft and velvety on the palate with a long, lingering finish, and it certainly deserves to be enjoyed straight. Rivaling some of the top bourbons and Japanese whiskeys in quality, this is the bottle you break out after a successful dinner party. Plus, at around $100 , its a splurge you can justify.

Conor Mcgregor Unveils Proper No 12 Whiskey

Proper No. Twelve Triple Distilled Irish Whiskey 750ml

MMA fighter Conor McGregor has launched Proper No. 12, a blended Irish whiskey created with former Bushmills distillery manager David Elder.

The whiskey is produced by the mixed martial artists company Eire Born Spirits at the Old Bushmills distillery in Ulster, Northern Ireland.

McGregor said: We created close to 100 blends and ultimately selected what we knew was the one and only Proper whiskey blend.

I respect other Irish whiskeys, but I am coming in strong, with passion and with purpose.

Named after Dublin postal district 12 in which McGregor grew up, the whiskey is said to evoke hints of vanilla, honey and toasted wood.

While Proper No. 12 will initially be sold exclusively across the US and Ireland, further expansion is planned in 2019.

As part of the brands One For All initiative, US$5 from every case of Proper No. 12 sold up to US$1million annually will be donated to local community first responder organisations in the state or country the sales take place.

Single Pot Still Whiskey

Single pot still whiskey is made from a mixture of malted and unmalted barley completely distilled in a pot still within a single distillery. This differs from single malt whiskey through the inclusion of raw, unmalted grain in the mash. This style has also historically been referred to as “pure pot still” whiskey and “Irish pot still whiskey”, with older bottlings and memorabilia often bearing these names. Single pot whiskeys were the most common style of Irish whiskey until the emergence of blends in the 20th century.

Proximo Spirits Is Purchasing Proper No Twelve

Conor McGregor just got even richer. The UFC star and his business partners sold their majority stake in Proper No. Twelve Irish whiskey to Proximo Spirits in a deal that is worth up to $600 million. Proximo Spirits, which also owns Jose Cuervo and Bushmills, in addition to other brands, already had a 49 percent stake in Proper No. Twelve Irish Whiskey. Now, it owns a much bigger stake — the size of which is unknown still.

As McGregor’s business partner Ken Austin told Shanken News Daily, it was the plan all along for Proximo to eventually buy a majority stake in the company.

“When we started this business with Proximo, we basically laid out, I’ll call it certain hurdles, that would allow them to buy pieces of the company over time,” Austin told Shanken News Daily. “We hit a milestone and it gave Proximo the opportunity to own a significant stake.”

McGregor celebrated the sale in an Instagram post, noting that “Proper Twelve is my baby for life.”

Launching Proper No Twelve

Whiskey Review: Proper 12

Part of the answer almost certainly lies in the lesser-known individuals involved in the brand. Proper No. Twelve is owned by Eire Born Spirits, a company co-founded by McGregor, his manager Audie Attar, and Ken Austin. Having previously worked for E& J Gallo and Seagrams, Austin is no stranger to the alcohol industry nor is this his first celebrity spirit collaboration. In 2013, he founded Tequila Avíon with rap star Jeezy. Pernod Ricard bought a majority stake in the brand for a reported $100 million in 2014, then acquired the remainder for an undisclosed sum in 2018. More recently, Austin teamed up with Dwayne The Rock Johnson for Teremana tequila, which launched in the U.S. in March 2020.

From the beginning, Austin knew a few things would be crucial to the success of Proper No. Twelve. The branding, packaging, and whiskey itself all had to be unimpeachable, he says, as many would be hoping for McGregor to fail because of his divisive reputation. I call him the Howard Stern of fighting, Austin says.

If you were going to look up Irish whiskey in the dictionary, there would be a picture of Conor McGregor there because he epitomizes what being Irish is, Austin says.

Best Single Malt: West Cork 8

While single-malt Scotch has become increasingly expensive in recent years, there are a number of single-malt Irish whiskeys that still represent terrific values. West Cork produces a gorgeous single-malt that sees Irish barley and local spring water going into a hand-built copper pot still, with the resulting distillate matured for eight years in first-fill, flame-charred bourbon barrels. This leads to far more depth and character than fans of single-malt Scotch may typically associate with Irish whiskey. The well-balanced palate features pretty notes of dried apple and honey segueing to a baking-spice finishall at an approachable 80 proof.

An Industry In Decline

In addition to the introduction of blended whiskeys and the Irish distillers’ failure to account for its appeal to changing tastes, there were a number of additional issues which placed further pressure on the Irish distillers: the Irish War of Independence, the subsequent civil war, and trade war with Britain prohibition in the United States , which severely curtailed exports to Irish whiskey’s second-biggest market widespread counterfeiting of Irish whiskeys in America and Britain protectionist policies introduced by the Irish Free State government, which significantly capped whiskey exports in the hope of taxing domestic consumption and finally, over-expansion and mismanagement at several Irish distilleries. Together, these factors greatly hampered exports and forced many distilleries into economic difficulties and out of business, and by the early 20th century Scotland had surpassed Ireland to become the world’s largest whiskey producer.

Production reached a nadir at about 400,000500,000 cases per annum during the consolidation period, down from a peak of 12 million cases around 1900.
