    Simple syrup is equal parts water and sugar. The key is to heat the water warm enough to dissolve the sugar into the water.

    One thing to remember is that if you use 1 cup of both water and sugar, you will not end up with 2 cups in the end. Because of the dissolving, it will be more like 1 1/2 cups of simple syrup.

    As I mentioned above, I like to prepare the simple syrup a day or so in advance so its out of the way. As far as assembling the drink ingredients, I recommend doing that up to 4 hours before the guests arrive. This chills the ingredients so the drink stays cold longer, plus makes the right before the party prep easier. I love these make-ahead margaritas for entertaining!

    How To Make Lime Simple Syrup

    Its easy to make simple syrup once you try it, youll never grab bottled simple syrup again!

    • Combine the sugar and lime zest. Stir to combine in a small saucepan over medium-high heat.
    • Add the other ingredients. Squeeze in the lime juice and the water. Whisk to combine.
    • Heat. Whisk the mixture over medium heat until the sugar melts and the mixture turns into a clear liquid.
    • Cool. Remove from heat to cool completely. Once cool, transfer to glass bottles with lids and refrigerate until use.

    Where Does My Recipe Come From

    I don’t drink a lot of margaritas, but about 5 years ago, my friend Kate noted that her dad “makes a killer margarita,” and of course, we all had to get the recipe. She said:

    “I always go back to this. My dad has it written on a manila file folder. The ‘serves 5’ makes me laugh. That’s 4 shots of tequila per person, and my parents rarely drink.”

    It makes me laugh too! Although, a pitcher of margaritas sounds perfect for an evening with friends, don’t you think?

    According to Kate:

    “Apparently before they had kids, my dad was quite the margarita maker. My aunt and uncle have described how he would put ice in the blender to crush it for the drinks. Then they completely stopped drinking alcohol while we were under 21.”

    Kate’s dad, Ron, had lost the recipe that he liked. So he looked up several recipes, wrote the ingredients in a grid to compare amounts, and settled on this recipe, written on a manila folder for safekeeping.

    I’ve scaled this recipe down a bit, but I keep the same ratios. I simply juice my limes to see how much juice I have, and add the right amount of ingredients from there. But read on – I have an actual recipe for you as well.

    Also, it tastes really delicious. Its well-balanced, so youre not getting a punch in the face from the tequila like you do in some margaritas. Its nice and smooth, so you can sip it easy all night long.

    Its a little different than some basic margaritas in the sense that it calls for Cointreaua higher-end orange liqueur. You can use triple sec if thats what you have on hand since thats an orange liqueur, but your end result will taste different. Why? Most triple sec brands have an alcohol content between 15%-30% while Cointreaus is 40%.

    First and foremost, juice your limes. I typically do this over a liquid measuring cup with a fine mesh strainer on top of it to keep pulp and seeds out of the final juice.

    So Im gonna be real with yall for a second. I usually am not a margarita drinker. For me, as basic as it sounds, give me a dry red wine and some dark chocolate and Im good to go.

    However, Ive been getting tired of it. Without being able to go on date nights and go to a bar for a fun drink, Ben and I have been buying smaller bottles of different liquors to try and experiment and make our own mixed drinks!

    And this margarita has quickly become my all time favorite.

    Oh the burning question, why is it even called a skinny margarita? Classic margaritas are actually already made with minimal ingredients, so the biggest thing with a skinny margarita is to cut the sugar count and if possible, make it sugar free!

    Sugar free? Well, refined sugar free at least! Were big on all-natural sweeteners and try and stay away from the weird fake sugar products at all costs. Thats why youll still see a handful of grams of all-natural sugar in our recipe.

    We decided not to use a low-calorie sweetener such as stevia, because in our honest opinion, it really takes away from the flavor and authenticity of the drink.
