A classic Islay scotch subjected to a Highland treatment, i.e. secondary aging in Amoroso sherry butts, this bottle is, at first, big, peaty, and smoky, says Shanahan, but then, you start to see this wonderful new balance created. You get these fruit kickers coming through without being too cloying, but theyre added to the peaty notes of the scotch from the isles.

The sherry-cask fruitiness softens yet also highlights the peat, reminding you of the earthy elements in the scotch, he concludes. Dont be afraid to pair this one with food. Those heavily peated, oily, viscous scotches love seafood or meat, says Tardie. One of my favorite pairings is oysters and peated scotch.

Balvenie 12 Doublewood Review

Slightly red caramel

NOSE Complex tropical and orchard fruit opens up. It leans a bit heavy on the tropical side with honey, vanilla, and a nice dessert sweetness giving support. A few dashes of malt and sweet cocoa add more dimension and excitement.

PALATE Muddled tropical and orchard fruit laced with caramel and honey dance across the tongue followed by light notes of wood, malt, dark sweetness, red licorice and a hint of melon. The flavor takes on a noticeably darker character.

FINISH Malt and wood and fruit and char and something intriguing that I cant quite pinpoint pleasantly linger long after the dram is gone.

BALANCE, BODY & FEEL There is a nice harmony to this whisky and its carried on a medium body and a smooth oily texture.

OVERALL The Balvenie 12 DoubleWood is one of my favorite kicking-it-around-the-house sipping whiskies. It has enough complexity to keep it interesting and fun, but light enough to fit into almost any occasion. That warm fruit and honey nose that slips into darkly sweet and fruit palate and fades out in equal parts sweet and rustic puts a smile on my face every time. It also pairs well with food and makes great cocktails if youre so inclined. Its just an all around great whisky.

Pappy Van Winkles Family Reserve Bourbon 20 Year Old

Grab this, hoard this, and only ever serve it to people who you know will appreciate it. From its beautiful copper color to its sophisticated nose, it starts strong and then never lets you down. Its silky mouthfeel reveals dark chocolate, cinnamon and walnut under a cloud of elegant smoke. Finally, I want to leave one final interesting resource here on this page: a proper tutorial on how to make an Old-Fashioned. I personally can not make one, I still have to practise many times before mine is getting there so I could not show you. So, this is a great example of a skilled bartender creating an Old-Fashioned.

The recipe from the video can be improved by using a bigger ice-cube but those are details. In general I enjoyed the video and think that the bartender explains it well.

The Bimber distillery is based in London and is a new addition to the single malt industry. The first Bimber casks were laid down in 2016 and their first release, Bimber the First, followed in 2019. Perhaps their most ambitious endeavour to date, the Spirit of the Underground series is a collection produced in collaboration with TfL to celebrate the London Underground. The first release is set to be available in May and will consist of four single cask bottlings representing four of the most major tube stations: Waterloo, Kings Cross St Pancras, Baker St, and Oxford Circus. Bimber has hit the ground running with this release at the first launch will include 3 of the busiest tube stations in London, and as a result the most tourist focused. This series is targeting a huge array of people, many outside of the typical whisky buyer and at £125 per bottle is more likely to be bought by this new demographic. Whilst there is not yet a definite method of sale, it has been advised by Bimber that joining their mailing list will be the best way to find out how to buy these bottles when they are launched.
