Rum is one of the most accessible and well-known spirits globally. Originally, it was produced in the Caribbean in the 17th century before it was discovered that when left to ferment, sugar, fruit, syrup, and molasses created robust and potent alcohol, and began shipping off around the world. Rum has a strong connotation to the seven seas, the tropics, smugglers, and pirates alike, but did you know that the origins of rum in Australia started as the settlers unofficial currency?

How Molasses Is Used To Make Rum

Today, any grade of molasses can be used to make rum and distilleries may use a combination of them depending on the flavours that they wish to produce.

The molasses is then mixed with water and yeast so that it may ferment. Usually, the yeast is of a certain strain but occasionally wild yeast is used instead by artisanal producers. For instance, Jamaican rum will often use dunder, a yeasty foam that can be taken from previous fermentations.

Slow fermentation will ensure a greater amount of byproducts and impurities that contribute to more complex flavours. Meanwhile, fast fermentation will result in crisper, lighter properties often desired in white rum.

The syrup then undergoes a distillation process using either column Coffey or pot stills after it has properly fermented. We cover these steps in our guide to how rum is made.

Collecting Your Rum Distillate

Collecting your rum distillate is the most satisfying part of this entire process. This step is a mixture of art and science, as it takes an experienced distiller to get this process just right. That being said, dont let this deter you if youre a newcomer to distilling. Everything comes with practice and after you run a few batches with your still youll definitely be able to dial things in by taking notes and making the necessary changes.

Very sweet with strong caramel and what I guess could best be described as a very sweet vanilla. Maybe a hint of what reminded me of chocolate candied cherry.

In the mouth, comes on very sweet, very thick and syrupy, and surprisingly very smooth. The spiciness kicks in with some oak on the finish, but still pretty smooth. To me though, it seems the smoothness comes only as the result of sugar.

I tried looking this up on the added sugars list but it isn’t on there. I’m guessing based on the sweetness there is a lot of sugar added to this rum. While smooth, unless you are into sipping maple syrup, this rum is too sweet to enjoy except as a mixer. At that it does a pretty decent job. In Coke with a splash of lime juice it did very well. But I’d buy Kraken over this.

Not all rum production depends on molasses. Indeed, former French colonies are celebrated for their rhum agricole, which uses the sugar cane juice instead.

As France has produced its own sugar from sugar beets since 1811, the French Caribbean market crashed and its sugar refineries quickly fell into debt. Therefore, they quickly adapted by fermenting the primary ingredient rather than the byproduct.

As we explain in our guide to the different types of rum, rhum agricole features a distinctively herbaceous flavour profile and lighter body thanks to its use of sugar cane juice.

Initially, French rhum was regarded as inferior compared to its British and Spanish peers as it had previously been banned to protect the French brandy market.

However, after a phylloxera outbreak devasted French vines in the mid-19th century, rum production significantly improved as its demand boomed.

Finally, some craft rums may be made from turbinado sugar. Similarly, an ingredient best avoided is dehydrated sugar cane juice, which is sometimes used to make cheap rum.

We get it: all the different types of rum out there can get a little bit confusing. That said, when it comes to the difference between spiced rum and dark rum, the distinction is actually pretty similar! It all comes down to flavoring.

Spiced rum has flavor added to it. It is infused with lots of spices, such as cinnamon, cloves, and cardamom. There are many brands that get creative and play around with the spices, adding in things such as pepper and anise. Those spices are what lead to the darker color of this variety.

Spiced rum commonly makes an appearance in rum punch, although you can also sub it in for a lighter rum to add a bit of flavor to a cocktail.

Dark rum, which is sometimes referred to as black rum, can be aged for many years in order to achieve its dark color, which can range from amber to a dark brown shade. As previously reported, Terry is definitely not a rum and Coke fan however after one sip of Kraken and Coke, Clint could not get the glass away from her. The explosion of spice when sampled straight up balances out the sweetness of the Coke making this a refreshing cocktail.

Captain was surely a disappointment as a mixer. This spiced rum has nothing to cut the sweetness of the Coke. The entire drink fell flat leaving you wondering if there was any alcohol used.

What Drinks Can You Make With Black Cherry Rum

Black cherry rum eases into rum cocktails with simple mixers. Drinks such as rum and cola or Cuba libre, which is just rum and cola with lime, benefit from black cherry rums added sweetness. Replace either all or half of the rum in these drinks with black cherry rum. Black cherry rum also mixes well with lemon-lime and club sodas.

Imported from Guyana & Trinidad, Cloven Hoof rum is the real deal. A blend of Guyanese & Trinidadian rum bases with added spices including cassia, anise, and clove which is a nice touch given the name. After all, they say that the devil is in the details.

Taste notes: This is spicier than many rums and has an undeniable heat. The undertones of caramelised fruit and brown sugar in both the taste and smell of this rum make it a decadent, almost dessert-like drink with a firm kick.

At 37.5% its average in strength and should be served over ice with an orange twist to complement its complexity.

What Is The Future Of Spiced Rum

Well, as we approach the tail end of 2019, as we’re going into 2020, it is just going to explode. Possibly, for me, for the signs I’m seeing, possibly even quicker than gin exploded. Probably back in 2015, 2016. Because some of these people now have got this well rehearsed routine of launching products, they’ve had it with the gins, or brands I should say, they’ve had it with their gins. Now they know what works, what they’re doing. Now they’ve got so many diverse mixers, we are just gonna see this explode. What else are we gonna see? We’re gonna see different spiced rum brands pop up with different flavours, with different spices. I’ve seen one recently using pear, we’re using apple so we’ve got things like that coming. And, we have by no means seen the last of the mixers that gets launched. I’m willing to bet that some of these tonic brands, they are gonna come in on the whole spiced rum thing as well because the whole rum and tonic thing isn’t great but the whole soda thing, these the Sisters Sodas just work very very well. So I can expect even more.

Another UK-based rum Pull the Pin is based in Devon. Owned and operated by Kerry Carter and veteran Tom Foster, it was named with that history in mind.

This is a brand known for producing incredibly high-quality rums, and their spiced rum is no exception. Unusual combination notes of butterscotch and tobacco stand alongside the traditional tastings of cinnamon and brown sugar.

Taste notes: Opening with the sweetness of butterscotch and brown sugar, plus a nip of spice from cinnamon and vanilla. Mid-palate unveils woody notes combined with fresh tobacco. The finish has a buttery, almost oily characteristic as more butterscotch envelops your tastebuds. Delightful

American craft distilleries are making excellent spiced rums these days. “One of my favorites is called Lake House Spiced Rum,” says Demi Natoli, bar manager of Nashvilles White Limozeen. Lake House is made by Indianas Cardinal Spirits. “This rum is particularly cool because they naturally infuse all of their baking spices, including black pepper, cardamom, cinnamon, orange peel and vanilla,” she says. “The majority of spiced rums add artificial flavors to hide a crappy base spirithowever, Lake House does not add anything of that nature.”

What exactly is it? So I thought Id do a video just to answer a few questions. Why Ive kind of deep dived into it and what we can expect in the future.

How To Make Spiced Rum

Its very easy to make your own spiced rum at home! Start with a 750 mL bottle of any type of rum. We recommend gold rum, so you get that dark, spiced rum color, but mild flavor with room for your added spices to shine.

Next, pick your spices. You really can use anything you like, but dont go crazy the first time. Heres what we suggest for starters:

  • Three allspice berries
  • Half of a cinnamon stick
  • Half a tablespoon of dried orange peel

Place all dry ingredients into a tight sealing pitcher or jug. Fill with rum. Let sit at room temperature, out of direct sunlight, for 2-3 days. Thats it! Youre ready to drink. Once youve made your first batch, you can experiment with things like rosemary, anise seeds, and herbal teas.

How Do You Make A Dark And Stormy When You Dont Have Goslings On Board

As Ken suggests, maybe substitute Kraken or Captain Morgan Spiced rums for the dark combining with your favorite ginger beer Just be mindful not to call it a Dark & Stormy. We wouldnt want anyone to get in trouble with the patent office.

Barritts has been our ginger beer of choice for many moons but we use Bundaberg from Australia, on occasion, for a creamier cocktail. For this test, we began as testers should, drinking the rum neat to get a baseline, then creating the cocktails using an ounce and a half of rum, four ounces of ginger beer and a wedge of lime.

NeatLooking back at our 2015 review we enjoyed the Captain over the Kraken because it led with the cloves and cinnamon a spiced rum should have. This time we found the Kraken to be far more enjoyable neat with a creamy vanilla palate, then a satisfying spice that lingered while the creamy vanilla hit the throat followed by a warming spice finish. The Captain, on the other hand, leads with a strong coffee note before an overwhelming cloves finish. Funny how things changed.

BarrittsThe vanilla notes of the Kraken pair well with the Barritts, the subtle hints of spice from the rum and ginger beer keeping the vanilla in check. In contrast, the Captain smells and tastes like a rum and Coke. Its very sweet with no evidence of ginger or spice. Even the lime cant break through the sweetness.
