While you may not have heard of this drink, it’s one you won’t forget. Every time you make one, you get to say “Yaka Hula Dickey Dula,” and that alone is a reason to mix it up. The taste is pretty amazing, too. It’s a fascinating combination of rum and dry vermouth accented with pineapple. That’s a bit unusual, but the pairing works very well.

Ingredients:

- Nutmeg Sprinkle
Mixing Instructions: Shake and strain rum, pineapple juice and lime juice over crushed ice. Float a splash of Grenadine. Add a dash of bitters and a touch of nutmeg. Raise glass and toast.
How Is Rum Made
Rum is made using one of three methods:
Directly fermenting sugar cane juice
Creating a concentrated syrup from sugar cane juice and then fermenting
Processing the juice into molasses followed by fermenting
The most important step is properly harvesting the sugar with the cane cut close to the ground. Then while the sugar content is high it must be milled quickly, boiled, rendered down, and the juice squeezed out.
Distillation typically happens in pot stills. Depending on the type of rum it may go through the distillation process twice, raising the alcohol content. Ageing can be from a few weeks up to thirty years!

- 2 oz. Blue Chair Bay Coconut Rum
- 3 oz. Orange juice
- 2 oz. Pineapple Juice
- Garnish: Lime wedge and Jalapeño slice
Mixing Instructions: Muddle jalapeño slices in a shaker. Add rum, lime juice, and pineapple juice. Shake and pour into a rocks glass over fresh ice. Dash of cinnamon on rim if wanted and garnish with lime wedge and jalapeño slice. Raise glass toast.
