Next to Jameson, Bushmills has been half of the twin icons of Irish whiskey. While various expressions of Bushmills have come and go, the standard-level Bushmills aka Bushmills Original has been with us literally for hundreds of years. We last reviewed the iconic Bushmills way back in 2008, and we figured the time was nigh to take a fresh look at this classic, which is a typical blend of single malt and grain whiskeys, triple distilled and bottled with no age statement.

Bushmills says its recipe hasnt changed in over 100 years, and it sure does feel familiar and unsurprising at this point particularly in the face of an Irish whiskey industry that has been hard at work elevating its offerings.

The nose is mild and easy, hinting at fortune cookies, sesame seeds, and a slight apple note, all set against a backdrop of rustic earth. The palate is surprisingly dry for Irish, with a woody edge that is rimmed with honey rather than infused with it. Notes of pretzel dough give it a certain chewiness, and the finish doubles down on that, with a cracker/biscuit note that sees some gentle spice notes mixed in. Quite mild, the whole affair is very much innocuous and straightforward and best used as a mixer if you find Jameson too sweet.

    The Bushmills Single Malt 10 Year Old is a great whiskey from the Bushmills Distillery. Even though the companys core product is a blended whiskey, this dram is of an excellent quality as well. So, creating mainly blended whiskey does not mean that one is not able to produce fantastic single malts as well.

    This one is slightly sweet on the nose with the aromas of fruits, some honey and hints of spices. On the palate the malty sweetness comes through quite clear. Furthermore, it shows fruity flavours, melted chocolate, vanilla and just a very mellow sherry note. Towards the end it is becoming dry, crisp and clean. The finish is of about medium length. Overall, this Irish single malt is a little different to the typical Scotch single malt. It appears a bit lighter and sweeter.

    The Bushmills Single Malt 10 Year Old matured most of the 10 years in ex-bourbon casks, which are made of American white oak. They tend to provide mellow aromas and smooth flavours. Afterwards the whiskey was filled in ex sherry casks. Those are made of European oak and were used at the Iberian Peninsula. Because those casks are seasoned with sherry, they lead to a deeper colour of the whiskey and to a stronger character. The combination of those two kinds of barrels are the secret of a rich and complex single malt whiskey.

    Bushmills Whiskey is produced in small batches and each cycle requires 40,000 litres of water. The mash takes 6.5 hours and then fermentation lasts for another 58 hours in the washbacks.
