Egg Whites In Your Whiskey Sour
Yes, you read that correctly. If you want to elevate your whiskey sour, an egg white is a way to do it! Oh no, you say, is this a repeat of eggnog?!
No, I promise its not. First of all, the egg isnt one of the main ingredients. There is usually less egg white included than anything else. Really all it does is add a touch of binding and frothing power to the drink.
The History Of The Whiskey Sour
CharlieOnTravel on Flickr
The oldest known mention of a whiskey sour dates back to a bartending guide from 1862, though itâs thought to have existed for at least a century before that. This drink has been popular for so long because it requires only four ingredients: whiskey, lemon, water, and sugar. . However, half a decade later, many bartenders were once again ditching the pre-made sour mix in favor of fresh lemon juice. Today, some people prefer that the simple syrup be prepared ahead of time, claiming a smoother mix.
Despite its simple ingredient list, a perfect whiskey sour can be elusive the drink is easily put off balance by a poor ratio of its components. Too much syrup and the drink tastes too sweet like a sour candyand the taste of the whiskey itself is overwhelmed. Because of this, a well made whiskey sour is often considered a sophisticated drink choice, while a poorly made version of the same drink is more commonly associated with rowdy young drinkers.

If Youd Like To Add An Egg White
Yes, you can put egg whites in cocktails. No, its not gross. In fact, an egg white gives your cocktail a nice creamy texture – which is especially great for Whiskey Sours. Just add your egg white to your shaker first, then pour in every other ingredient, and give everything a 12-second dry shake. Thats just a strong shake without any ice, to get everything airy and integrated. Once youve done that, do a second, normal shake with ice, and enjoy your supernaturally fluffy cocktail.
Whats The Best Whiskey To Use
This is a matter of personal preference you can absolutely use whatever whiskey you normally drink in your cocktail. But its typically made with bourbon whiskey , specifically an 80-proof bourbon. Bourbon is a preferred option as its slightly sweeter than other whiskeys, usually with a touch of vanilla.
Whatever whiskey you choose, opt for at least a mid-range liquor. A better whiskey will give you a better drink you will taste the difference!

Those elements of sweet, sour and silky create an eternal nest of newly hatched ideas, like Tim Wiggins use of falernum and grapefruit liqueur in his version at Retreat Gastropub and Yellowbelly in St. Louis. Whiskey Sours are all about texture, and the weight of the two liqueurs makes a velvety cocktail thats the perfect balance of sweet and sour, says Wiggins. I look for velvety texture and good balance in a Whiskey Sour.

While most corn mash, there is some rye added which makes for a nice rush of spice and helps keep the bourbon base strong. Peppermint, honey, pepper, and even a bit of citrus make for a smooth blend with lemon and sugar.

Bourbon: Choosing a bourbon for this cocktail shouldnt be difficult. I recommend a good value bottle, something in the price range of $15 to $25. Next time youre at a cocktail bar you like, ask the bartender which specific bottles of any given spirit they have in their well bar. This is a great way to find out whats good, both for your home bar and your budget.
Lemon juice: Next up, fresh-squeezed lemon juice. Ill say it again because this is so important: fresh-squeezed lemon juice. Gone are the days of using cheap mixes. If you want the absolute best whiskey sour you ever did taste in your life, then you need the real-deal fresh juice. Simple as that!
Simple syrup: For the sweetener, use a simple syrup . There are several whiskey sour recipes out there that call for a heaping bar spoon of sugar. Youre free to go this route, but simple syrup combines so much better, so I prefer and recommend this.

If you do want to use egg white the steps are as follows:

How Do I Mix A Whisky Sour Vegan
As a vegan alternative to protein, water from a can of chickpeas is suitable. This water is also called Aquafaba. Simply replace the protein from my recipe with 2cl of water from a can of chickpeas and process it in exactly the same way as the protein.
In the water there are similar proteins as in the egg white, which binds the cocktail and creates a beautiful foam crown.
If you dont want to use canned chickpea water, you can also buy bottled Aquafaba. Fee Foam you can get for example in this shop.
As an alternative to fresh eggs, egg white powder is also suitable. This has a longer shelf life and can be easily mixed with water if required. One teaspoon corresponds to about half an egg white. When mixing, it is best to put the powder in the shaker last so that it mixes well with the other ingredients.

Expert Twist On The Whiskey Sour
We once again turned to Hayley for her expert twist on the whiskey sour, and she gave us one based on another well-known variation.
From the whiskey sour came many incredible variations. At first many were made by simply splitting the base ingredient, the whiskey, with something else. Take Sam Rosss Midnight Stinger that uses half bourbon and half Fernet Branca for the base. From there, others went on to change the type of sweetener used to add extra complexity, like in the Penicillin that uses a ginger honey instead of simple syrup.
A cocktail that in my opinion does not get consumed nearly enough is a cocktail called the Camerons Kick which incorporates both of these techniques. It first appeared in The Savoys cocktail book and is a whiskey sour made using both Scotch and Irish whiskey with Orgeat as the sweetener. This little twist is simply that with some added bitters and grapefruit.

History Of The Whiskey Sour
The whiskey sour made its official debut in Jerry Thomas’ 1862 “The Bon Vivant’s Companion” , which was the first published bartending guide. However, you can trace the cocktail’s roots to a century before that.
In general, sour drinks were initially created to fight off scurvy among British Navy sailors during the 1700s. Most often, this meant adding lime to the rum rations . Not only did it ward off disease, the rum or gin helped preserve the perishable fruit juice on long voyages.
From there, the addition of a little sugar enhanced the citrus-liquor combination. The result was a more drinkable and very tasty beverage. These eventually became known as the sour family of drinks, which have remained popular the whiskey sour remains the most notable.

While theres no agreed on birthday for the Whiskey Sour, its acknowledged that its first printed recipe appeared in that famed tome of 19th-century cocktail wisdom, How to Mix Drinks, circa 1862. Its also much easier to get a well-made version of the Whiskey Sour these days. Its one of those drinks that has a simple recipe, and therefore is easily fucked up, says Kenneth McCoy of Ward III, which carries more than 400 whiskeys and makes quite a few Whiskey Sours on any given night. In the 80s, there were super sweet sours drenched in grenadine. I can see how people have had some bad ones.

What Is Sour Alcohol
Sours are one of the oldest families of original drinks, and Jerry Thomas described them in his 1862 book How to Mix Drinks. Sours are cocktails made with a base liquor, lemon or lime juice, and a sweetener . Some sour drinks contain egg whites as well. Sour ingredients taste very strong when mixed together, so they should be added slowly to the other ingredients to avoid making the cocktail too tart.
Lemons and limes are acidic fruits that contain a lot of vitamin C. When those acids are combined with sugar, they create a sour flavor that can be used to make cocktails more interesting.
Originally, sours were meant to be drunk quickly because they contained a large amount of alcohol. Today, they are popular mixed drinks that add a touch of acidity to otherwise sweet or bland cocktails. Because sour ingredients are so flavorful, just a little bit goes a long way. That’s why most recipes call for only a few drops of citrus oil or juice per drink the rest can be reserved for another use.
There are two types of sours: straight and blended. Straight sours are simple cocktails without any other ingredients except for ice, water, salt, and alcohol. They get their name from the fact that you simply mix the ingredients together and drink them as fast as possible! Blended sours have at least three ingredients and usually contain milk, cream, or eggs as well.
What Alcohol Goes In A Whiskey Sour
Traditionally, an 80-proof bourbon is used as the basis, which lends a hint of vanilla and wood to the drink without dominating the sweet vs sour battle that is taking place in the glass. We used Basil Haydens 80-proof whiskey to make our traditional Whiskey Sour, but any mid-range, 80-proof bourbon would suffice.

Sweet And Sour Mix Recipe
There are a few ways to make a fresh sour mix. They all begin with simple syrup, which is nothing more than sugar and water. These recipes can be adapted to suit your personal taste or the drinks you’re making at the moment. You can also double or triple them to create a larger batch.
- Method 1: Make simple syrup by combining 1 cup each of sugar and water in a saucepan over medium heat. Stir until the sugar is completely dissolved. Reduce the heat and simmer for about 5 minutes. Remove the pan from the heat and stir in 1 cup each fresh lemon juice and lime juice. Allow it to cool before bottling. Store it in the refrigerator.
- Method 2: Combine 1 cup each of sugar and water in a cocktail shaker or a bottle with a tight seal. Shake until the sugar is dissolved to create a simple syrup. Add 1 cup each of lemon and lime juices, bottle, and refrigerate.
- Method 3: Combine one part of pre-made simple syrup with one part lemon or lime juice . This makes a great last-minute sour mix if you already have the syrup in stock. It’s also convenient when making a large batch of simple syrup because you can divide it to create sour mix at the same time.
No matter which method you choose, you can adjust the lemon and lime juice ratio to fit your specific taste. Some people prefer 1 cup lemon to 3/4 cup lime for general use.
How To Make A Whiskey Sour From Scratch
Place whiskey, lemon juice, simple syrup and egg white in a cocktail shaker. Dont add in the ice just yet. Shake vigorously for 30 seconds. This will incorporate the egg white properly. If you are making more than 1 drink, do not increase amount of egg whites, that is not necessary. 1 egg white will be enough for 2 drinks .
Add ice and shake again, for around 15 seconds more, this to chill the drink. Strain into a glass using a fine-mesh sieve. Garnish with a lemon slice and serve!
Serve immediately with a slice of lemon, and a marachino cherry if you feel like it, as thats the traditional way of serving it. I just have bad associations with these cherries, so I dont like them as decor. Its just me, not the cherry.

To Egg White Or Not To Egg White
Have you ever seen that amazing layer of foam resting gently at the top of a cocktail? Yeah, you can thank egg white for that. To some, using raw egg whites in a cocktail is a novel concept .
Bartenders use egg whites in cocktails, like the whiskey sour, to give it a rich, creamy texture along with a smooth head of foam. To stay on the idea of fresh ingredients, use organic eggs . If youre curious about it altering the flavor, just know that egg white is flavorless. It also helps to reduce the acidity from the citrus and bind the flavors together. It enhances the presentation of your whiskey sour, too. Remember, were not settling for anything less than an ooh! from you and from your guest.
If you still feel like shaking up your cocktail with raw egg white is just too much to stomach, then feel free to leave it out!
