Making Your Rye Whiskey Mash

  • Gather all your necessary equipment and ingredients.
  • Place your cooking pot on your heat source and add 4.5 gallons of water. Heat the water to 165 °F
  • Once your water has reached the desired temperature remove it from the heat source and immediately add the rye malt and flaked maize.
  • Stir continuously for 7 minutes. After 7 minutes, stir every 30 seconds until the mash has cooled to 152 °F .
  • Once the mash has reached 152 °F, stir in the malted barley.
  • The mash now needs to be stirred every 20 minutes until it cools to 70 °F. This process can take several hours. It is helpful to set a 20 minute timer. Every 20 minutes the mash needs to be stirred for 30 seconds.
  • Once the mash has reached 70 °F it is time to add the whiskey turbo yeast.
  • Aerate the mixture by pouring it back and forth between the cooking pot and the fermentation bucket for five minutes. After five minutes seal the fermentation bucket with an airtight lid and place in a cool dark area.

    Collecting The Hearts And Separating The Tails

    Now, the toxic elements have mostly evaporated and you can keep the heat at 175 to 185°F . At this temperature, ethanol evaporates and you can collect the hearts of your DIY rye whiskey.

    Slowly increase the temperature and collect the output in several small containers. The alcohol content will slowly decrease. Initially, you will get some great and complex aromas that will make your rye whiskey especially tasty. Once the temperature reaches 205°F , fusel oils will start evaporating. These will not only add a bad taste to your whiskey but are also toxic. So make sure to dispose these so called tails. Your distillation run is now complete and you can turn off the still and clean it for the next use.

    After getting rid of the toxic forshots and tails, it is on your nose to decide which parts of the distillate you want to keep and which you want to discard. If youve collected and numbered the output in several small containers, you can now soak in their aromas and decide if they should be part of your home made moonshine rye whiskey or not. The first portions may have a strong pungent smell and you might want to get rid of some of those as well as some at the end. Overall, it is quite common that around 20-30% of the total distillation output are discarded. Blend all the parts you want to keep together.

    And rye whiskey? Its a whiskey that uses a rye mash or a rye and malt mash. In the United States, regulations stipulate that the mash must be at least 51 percent rye in order for it to be called rye whiskey. In Canada, regulations do not specify a minimum percentage of rye.

    Once your batch has been distilled it is time to store it in an airtight glass container.

    Remember that the first 5% of your yield is easiest evaporating alcohol and should be thrown out. This part of the batch can contain ingredients such as methanol which can be dangerous to consume. This is known as collecting the foreshots.

    The next 30% of the yield is considered the head. While it is less toxic than the foreshots, it also contains some toxic alcohols and should also be collected and thrown out. You may notice this part of the yield has a distinct smell reminiscent of acetone.

    Youve made it this far! At this point, youve completed the heavy lifting of producing your whiskey mash water for your rye whiskey! Now its time to distill and separate all of that alcohol content into a purified form. Just like making mash, distilling is as much an art as it is a science.

    The process of distilling the fermented whiskey mash will make for a purer and more concentrated spirit. This step separates out all of the undesirable types alcohols such as acetaldehyde, acetone, and methanol .

    Distilling Rye Whiskey At Home

    Once the fermentation process is finished, strain your mash through a cheesecloth to remove any solid particles that may interfere with the distillation process.

    Siphon the wash into the still.

    Slowly heat the wash in the still to a temperature of 120 to 140°F . During the first part of the distillation, toxic byproducts like methanol and acetone are removed from the wash. So make sure not to increase the heat to quickly to best separate the bad from the good elements. Reaching 150°F should take around 45 minutes.

    My final choice in the USA is a big step up in the world of rye. It is more expensive, but gives you a full on rye experience as it is made from 100% rye. This was created for the tenth anniversary of the Balcones distillery. Made with several different varieties of rye this whisky is complex and spicy with plenty of power from a heightened ABV. It is chocolatey with orange zest and honey, cinnamon and baked apples on the nose. The palate is even more complex and full-bodied with chocolate and tobacco joining the flavours. The finish is dark brown burnt sugar and hints of char and dry oak. Its one of my favourite rye whiskies.

    Best Under $2: Old Overholt

    Region: Kentucky | ABV: 40% | Tasting Notes: Vanilla, orange, cinnamon

    A favorite of bartenders and budget-conscious whiskey drinkers, Old Overholt has stood the test of time. Case in point: the brand boasts that it was the most popular spirit in the country after Prohibition was lifted. This rye starts with a cereal sweetness and a touch of vanilla, then finishes with a bracing hit of white pepper. And while youll often see it as the stiffer half of a Boilermaker, this rye can also be stirred into a fine Manhattan or a spicy Old Fashioned.

    Fermenting Your Rye Whiskey Mash

    Leave your mash to ferment in a cool dark place for about 10 days. You should notice the airlock will stop emitting gas.

    If you are unsure whether your mash is ready for distillation, you can remove a small amount of liquid and place it on a white plate. Add several drops of iodine. If the mash is ready to distill it will not turn blue. Discard your test sample and do not add it back into your mash.

    Whiskeys origin lies somewhere between 1,000 and 1,200 AD when traveling monks migrating across Europe, introduced the distillation practice into Scottland and Ireland. Because of the lack of vineyards in these countries, the monasteries turned to fermenting grain mashes and then distilling them into whiskey.

    For the next 400 years, whiskey spread throughout the Celtic countries, being referenced by kings and warriors in historical texts. In 1536, King Henry VIII dissolved the monasteries who had been distilling the majority of whiskey up until that point. This made monks independent and required them to now make a living for themselves. They saw distilling as a way to make that living. In 1608, the first officially licensed whiskey distillery Old Bushmills Distillery was founded in Northern Ireland.

    What Does Rye Whiskey Taste Like

    Rye whiskey is characterised by its overall spicy flavour profile thats derived from its primary ingredient. It can also be described as quite peppery with herbal notes reminiscent of liquorice or anise. Similarly, its grain is somewhat more pronounced than other whiskey mash ingredients.

    Since it follows the same overall production process as other American whiskeys, rye can share some properties with them. For instance, the low distillation strength ensures that the grains flavour is preserved.

    Meanwhile, the use of freshly-charred new oak barrels is standard throughout all American whiskey and will yield similar results. Charring the wood opens its grain and allows the distillate to extract more flavours of caramel or vanilla.

    Of course, not all rye whiskey tastes the same. Continuing with the above, producers can choose the extent to which the barrels are charred as well as how long the rye is aged in them.

    Ageing rye whiskey will round out its flavours and produce additional complexity. It will help mellow the rye somewhat, but since its a very flavoursome grain, it will still retain a significant presence. Conversely, young rye whiskey will have a distinctive peppery grain flavour.

    Similarly, rye can use any combination of grain in the remaining 49% of the mash bill. Producers can add more rye or various proportions of wheat, corn, and malted barley.
