Hayman’s is spicy, it’s my winter London dry gin with an excellent aftertaste, says James DeFrance, bar manager at Refectory Restaurant in Columbus, Ohio.

You may also have read about, seen or tasted Navy Strength Gin. There is some debate around the authenticity of the term Navy Strength Gin as a traditional category of gin, with some claiming it was actually only coined in the 1990s by a marketing team for a high-strength new gin! Regardless, the tradition it refers to is interesting, and certainly appears to have a basis in truth, according to Forces.net.
So whats the story behind Navy Strength gin? Well, from the 18th Century on – for about 200 years, in fact – the British Royal Navy were issued with rations of gin and rum to drink during their long journeys. The gin and rum were stored in wooden barrels below deck – along with the ships store of gunpowder.
To ensure that gunpowder would still burn when lit even if the gin leaked into the barrel by accident, the Navy demanded that the alcohol content of these rations had to be 100% proof – thats 57.1% ABV in modern terms!
Hence these days, the term Navy Strength is used for any high-strength gin with an alcohol level of 57% or more.

What Exactly Is Gin
You might be surprised to discover that there are quite tight laws that control not only what gin is made of, but also how it is made and even what it tastes like!
Tight laws control what spirits are allowed to call themselves gin
Heres what the current legal definition of gin in the E.U. states – globally, the definitions are also very similar:
Gin must be a neutral spirit distilled from something natural like wheat, barley, potatoes or grapes.
The flavours of a gin come from its botanicals , and, crucially, all gins must contain juniper in fact, the predominant flavour must beof juniper, otherwise the drink cant be defined as gin, by law.
There must be at least 37.5% of pure alcohol in the total volume of liquid .
Within the overarching category, there are three traditional types of gin: London Dry, Plymouth Gin, and Old Tom gin – see below for the differences between each of these. However, some modern, innovative gins no longer fall into any of these categories!
Flavoured gin, gin liqueurs and sloe gin are all different from traditional gin in a few significant ways – see below for more details about this!
Theres a lot of debate in the drinks industry right now around the legal definition of gin and whether it is too loose or too restrictive. While less famous than Bombay Sapphire, those looking for something more juniper-forward should look towards Bombay Dry Gin.

- Chill your martini glass in freezer for 10 minutes or fill with ice cubes and cold water to chill.
- Place ice cubes in a metal shaker top with gin and shake very very very well.
- Empty water from glass if used.
- Pour vermouth into chilled glass and swirl to coat glass then discard vermouth or use for the next glass.
- Strain very well shaken gin into glass and garnish with olives.
- Sit back and relax.

What Does Bombay Sapphire Taste Like
Bombay Sapphire opens with a touch of juniper, ripe citrus, and hints of spice in the fragrance. The palate is exceptionally smooth and allows the botanicals to open up one by one and mix in the most lovely way with juniper slightly at the forefront. What Is Bombay Sapphire Gin Made From
Bombay Sapphire was first released in 1987 but was inspired by a recipe from 1761. Like most gin, it is a neutral grain spirit that is triple distilled and infused with botanicals. How Bombay uses the botanicals is unique. Instead of steeping the flavoring ingredients in the alcohol, the distillery uses a vapor infusion extraction.
The distillery originally employed two Carterhead stills from the 1830s and added two copper pot stills when production increased. Above the distillate, copper baskets hold the proprietary blend of botanicals. As the alcohol heats up and evaporates, the steam hits the botanicals, infusing it with flavor before it condenses back into a liquid that is cut to bottling strength. This approach is designed to give the gin a more delicate flavor.
Bombay was one of the first gin brands to celebrate their botanicals with full disclosure. Though the actual recipe is a well-kept secret entrusted to their “master of botanicals,” Ivano Tonutti, they do reveal what the ingredient list includes. It is an international affair that includes Italian juniper berries and orris root, Spanish almonds and lemon peels, grains of paradise from West Africa, Chinese licorice, cassia bark from Indo-China, angelica from Saxony, Moroccan coriander, and cubeb berries from Java. The botanicals are nicely balanced and add a crispness to the spirit.
In 2014, Bombay Sapphire opened a new distillery just outside of London, England. It is open to the public for tours and events.

With a combination of ten botanicals and a bold and complex taste, Sipsmith is a classic near-perfect gin. Its a brand that somehow manages to remain a classic while still pioneering the craft gin movement. Sipsmith uses a single shot method of distillation, meaning that its only diluted with water, not an additional neutral spirit, and was the first to reintroduce copper stills after almost two centuries.
Its a distillery thats far younger than its classical branding would suggest. Launching in 2009, Sipsmith has already helped to pave the way for an uncompromising good gin thats rich, smooth and balanced.
