How To Drink Japanese Whisky

In Japan, whisky is consumed neat, with a splash or water or soda, or as a highball; its not typically used in other cocktails because the addition of other ingredients distorts the integrity of the spirit. “Japan has a cultural tradition of mizuwari, cutting the whisky with water to open it up,” says Weston. “It also lowers the ABV, which lets more of the aromatic and flavor complexities come through.”

Highballs are made by adding plain or flavored soda or juice added to whisky and ice. “Its a whisky and soda, but so much more,” says Weston. “Its a performance, because the bartending culture is also about presentation, quality and design, right down to the bar tools, glassware and water source .”

Of course, its your prerogative to enjoy your whisky however youd like, but we recommend Suntory Toki Blended as a more affordable choice for highballs and other cocktails.

Kujira Ryukyu 20 Year Old Japanese Whiskey

Founded in 1952, Kumesen Syuzo started on distilling alcoholic beverages, unique to Okinawa islands of Japan, also know as Ryuku islands. Then around 1989, this innovative distillery started to age them in oak barrels, creating a unique kind of ji-whisky in its own category, thus named it the Ryukyu Whisky. With 20 years maturing in bourbon casks, Kujira as a single grain whisky provides a wonderful taste profile that has distinguished itself from its malt counterparts and creates a refreshing choice for spirits lovers.

Best Splurge Japanese Whisky: Akkeshi New Born Foundations #4

14 Best Japanese Whisky Brands 2021

This petite , esoteric offering from Hoddaikos Akkeshi Distillery; their head distiller learned his craft in part from Chichibu under “Rockstar of whisky,” Ichiro Akuto, who helped with the design and construction of Akkeshi. The distillerys climate and terrain are similar to that of Islay and it’s the only place in Japan where peat grows naturally, so Akkeshi uses it in their barley smoking process. Number 4- part of a series aged in different types of wood including ume, Sherry, Port, sake, and white oak- is a blend of malts and grains including rare Hokkaido barley malt, or Ryofu. Aged in Sherry casks for 13 to 30 months, its an evocative sipping whisky with suggestions of caramelized banana, bittersweet chocolate, and spice.

Taru 12 Yr Tsutsumi Shochu

Tsutsumi is a distillery thats not trying to hide what its product actually is: an aged shochu, not a whisky. But why not make a stop here on your whisky journey to see what 12 years maturing in sherry casks does to this spirit? The southern distillery has been around for almost 150 years, and it has used sherry casks to mature its shochu for about a third of that time. This is a single barrel release, with sweet notes from both the rice used in the mash bill and the sherry influence on the shochu, along with some dried fruit and spice. Consider it another one for fans of sherry bomb whiskies to try.

Akashi Single Malt Sherry Cask

Akashi produces both blends and single malts, including this limited-edition annual release. If you enjoy Scottish sherry cask-matured whisky like the Macallan or the GlenDronach, this bottle is one to check out as well. The whisky spends its life maturing in two different types of sherry casksfive years in Pedro Ximenez casks followed by a finish in Oloroso casks. The two different types of sherry wood impart the liquid with a range of rich, fruity flavors, from prune to apricot to spiced vanilla.

Best Under $: Nikka Coffey Grain

Japanese Whiskey Alternatives

Nikka is another major whisky producer in Japan. Coffey Grain is named after Aeneas Coffey, the inventor of the continuous still, and is made mostly from corn as opposed to the barley used for single malts. This gives the delicious whisky a creamy texture with a sweetness that should appeal to bourbon fans.

“This whisky is from the Nagano prefecture in Japan,” says Michael Brooks, co-owner of Bed-Vyne Wine & Spirits. This blend is made from a mash bill that is mostly corn, with some malted barley and rye as well. It has aromas of vanilla with hints of baking spices, and the palate is lean with pear and quince notes. This is a great summer sipper and excellent for making cocktails because of its 45 percent alcohol level,” he says.

Best Single Malt: Hakushu 12 Year Old

Drizly;

In Japan, single malt essentially means the same thing as in Scotlandwhisky made at one distillery from malted barley. Hakushu is produced in the Japanese Alps, and the whisky produced there is just as gorgeous. It has a woodsy and herbaceous nose that expands to include delightful fruit notes that are backboned with a light peat quality, says Crystal Chasse, beverage director of McCarren Hotel and Talk Story Rooftop. The water source for this whisky comes from the mountains deep in the forest near the distillery. This secret ingredient makes this whisky very approachable for a peated whisky. It is unique and delicious.”

Buying Whisky In Tokyo

I would like to buy some Japanese whisky but, for various reasons, can’t do that duty free at Narita.

Is there a good whisky shop or department store you can recommend where prices aren’t excessive?

(Ideally I’d like a bottle of the Yamazaki single malt Sherry Cask 2013, but I’m told that after all last year’s publicity it is pretty much sold out?

Failing that I have been recommended the Yamazaki 12 year old single malt is pretty good).

Thanks for any advice

Prices are pretty much “fixed” at department stores. Cheaper prices may be available at BIC Camera or Donki, if they carry your specific selection, but unlikely.

Yamazaki Single Malt 12 years

Liquors Hasegawa at the Tokyo Railway Station underground mall is a good source. I tried several of the large department stores but it seems that the best Japanese Whisky like Yamazaki 12 years and up are sold out quickly. Liquors Hasegawa seems to have at least some stock. And they now take credit cards.

The Best Bottles Of Japanese Whisky You Can Actually Find At Every Price

Japanese whisky distilleries say that demand has far outpaced supply over the last few years, resulting in less aged whisky and higher prices. Complicating things further, some disreputable companies are reportedly sourcing whisky from other countries and labeling it Japanese whisky.

To that end, its helpful to get an overview of the Japanese whisky landscape. There are two main companies producing Japanese whisky. Suntory, owner of three distilleries, is the largest. Nikka is next in line, with two equally distinctive distilleries. There are also several other smaller operations making Japanese whisky some are even distilling rice whisky, which many regard as essentially over-proof shochu.

In addition to their single malts, Nikka and Suntory produce very high-quality blends. In fact, blending is considered to be the most important step in the production of Japanese whisky. Some distilleries like Yamazaki use enough stills of different shapes and sizes to literally make dozens of different distillates, which are then aged in countless barrel types before being blended into the final product.

Ready to take on this complex, evolving category? Here are 15 bottles of Japanese whisky to try now, if you can find them.
