When it comes to fermenting the mash of the grains, some of the previously fermented mash is added to start the process off in this new batch. The Cocktail Bar Standard Aka Using An Egg White
- 0.75 oz. fresh lemon juice
- 0.75 oz. simple syrup
- 1 egg white
Add all ingredients to a shaker tin. Dry shake ingredients without ice for five seconds to whip the egg. Add ice, seal tins and shake hard for 10 to 12 seconds. Strain into coupe or martini glassitll come out white at first, and the color will emerge over the course of a minute under a paper-smooth head of foam. Express a lemon peel over the top of the foam for aroma and discard and decorate the foam with a few drops or dashes of Angostura Bitters.
The smoothest and most elegant way to make a Whiskey Sour is to make it with egg white. Now, if you were disinclined to try it before, I doubt I just sweetened the pot with the promise of a raw egg, but hear me out: Just like when you eat them, egg whites dont taste like anything really, but serve here to give the whole cocktail a velvety texture, a pretty white head, and most importantly, to bind to the tannins in the spirit, smoothing out the rougher edges of the whiskey.
A necessary note: egg whites are largely safe, but if youre nervous or immunocompromised, feel free to use in-shell pasteurized eggs. If youre vegan, you can use aquafaba, which functions more or less identically. If all you have is a carton of pre-cracked, pre-separated egg whites, perhaps consider making it as below.
How Is Whiskey Made
While there are several styles of whiskey, most stick to the same basic production process. There are quite a few little changes that can impact the finished product, however, which explains why the global whiskey industry is so diverse.
Whiskey begins with plain old grainâwhich, as mentioned earlier, may be barley, corn, rye or wheat, depending on the whiskey style.
With malt whiskey, production starts with the malting of the grain. Malting involves soaking the grain in water in order to cause germination, which means the grain starts to sprout. Once germination begins, the grain is then dried with heat before itâs ground up. Not all whiskeys are malt whiskeys, however, so in those cases, the grain is ground up right off the bat.
Once itâs ground, the grain is mixed with hot water and stirred in order to extract its sugars, which will eventually be converted to alcohol. This creates a thick material known as wort.
Next, yeast is added to the wort, which is what actually converts the sugars produced during the mashing process into alcohol. This leads to the creation of yet another new substance, known as wash or distillerâs beer.
After distillation, whiskey is ready for maturation. Certain types of whiskey must be aged longer than others, and some governing bodies require whiskies to be aged in specific types of casks, which can directly impact flavor .

Add 1/2 cup of fresh peach juice, 1 egg white, juice of 2 lemons, 4 ounces of whiskey and pinch of cinnamon to your shaker, add ice and shake, shake, shake until frothy and cold . Serve ice cold in a cocktail glass garnished with a lemon twist. Makes 2 cocktails.

And you might want to skip pouring over ice if you are adding eggs, many drinkers feel ice cubes, and egg froth doesnt mix. Ice can also cause the egg proteins to break apart too quickly. Instead, try shaking with ice and pouring straight.
You will want the egg whites to be shaken with all the other ingredients*. Otherwise, you miss the point. Shaking blends the eggs and froths them up!
*There is some argument about this method. There are those who say you should dry shake the eggs first to froth them up, wet shake the other ingredients separately, and then combine. I say no. Blending them together is half the fun! But it is up to you.
