In a company email in 2014, Bacardi confirmed that their products do not contain animal products and are vegan:

We dont use animal-derived ingredients in any of our products, nor as a lubricant in the process equipment for making the beverages or packaging material. None of the individual ingredients contain any animal products

So it is hardly surprising but Bacarii can be considered vegan.

Rum Made From Sugar Cane Juice

Rhum Clément

Not all rum production depends on molasses. Indeed, former French colonies are celebrated for their rhum agricole, which uses the sugar cane juice instead.

As France has produced its own sugar from sugar beets since 1811, the French Caribbean market crashed and its sugar refineries quickly fell into debt. Therefore, they quickly adapted by fermenting the primary ingredient rather than the byproduct.

As we explain in our guide to the different types of rum, rhum agricole features a distinctively herbaceous flavour profile and lighter body thanks to its use of sugar cane juice.

Initially, French rhum was regarded as inferior compared to its British and Spanish peers as it had previously been banned to protect the French brandy market.

However, after a phylloxera outbreak devasted French vines in the mid-19th century, rum production significantly improved as its demand boomed.

Finally, some craft rums may be made from turbinado sugar. Similarly, an ingredient best avoided is dehydrated sugar cane juice, which is sometimes used to make cheap rum.

Rum Basics: Fermentation And Distillation

When sugar cane juice or other sugar-based liquids are allowed to rest, yeast in the air is attracted to the natural sweetness of the liquid. The process of fermentation occurs as sugars are converted by yeast into alcohols, at approximately the strength of wines.

in a typical fermentation of rum, water and yeast are mixed with molasses in large vats to begin the process of converting sugar to alcohol

In a modern distillery, fermentation takes place in large vats where select, often hybridized yeast can interact with the sugars in the liquid for a designated period of time. This can be as short as 24 hours or as long as three weeks, depending on the strain of yeast used and the style of rum being produced.

Lighter bodied rums are typically fermented quickly, while rich, full-bodied rums are often fermented much longer to create more complex flavor profiles.

To further concentrate these alcohols, the process of distillation isolates much of the alcohol components by evaporating and condensing them into a second holding tank.

The resulting distilled liquid contains mostly alcohol, plus some other ingredients that provide unique flavors.

In some cases, additional distillation cycles are used to further purify the alcohol. The more these alcohols are isolated, the fewer flavor components remain in the solution.

Malibu Is Distilled In Barbados Probably

There is some rum in Malibu, and that spirit is distilled in the Caribbean at West Indies Rum Distillery Ltd. Though in truth, tracking down exactly where Malibu is distilled isnt easy. Pernod says its distilled at the famous West Indies rum distillery in Barbados, a claim also backed up by the legit-seeming Ministry of Rum . But the West Indies distillery itself has a dead website, and Malibu representatives did not respond to requests for clarification.

How Is Rum Made

Pineapple Breeze | Malibu Rum Cocktail | Booze On The Rocks

The current legal definition in the United States is as follows:

Rum is an alcoholic distillate from the fermented juice of sugar cane, sugar cane syrup, sugar cane molasses, or other sugar cane by-products, produced at less than 190 proof in such manner that the distillate possesses the taste, aroma, and characteristics generally attributed to rum, and bottled at not less than 80 proof and also includes mixtures solely of such distillates.

Rum is made much like other spirits. The most important step, though, is harvesting the sugar properly. Williams suggests, To get the best results, the cane should be cut close to the ground It must then be milled very quickly after harvesting, while the sugar content is high. And then it must be boiled, rendered down quickly once the juice, the vesous, is squeezed out, because otherwise it will rapidly ferment.

Although there is no world standard for the distillation process, pot stills are the preferred method for rums with fuller taste.

Modern Methods Of Making Rum

Batch Process: The Traditional Pot Still

Many artisanal rums are produced by small companies in small quantities. Many producers believe that pot stills allow them to produce the most desirable spirit.

a traditional copper pot still with two retorts

The traditional pot still is a centuries-old method of distilling fermented product in relatively small batches.

The fine art of the distiller is the key to success for the traditional pot still method. The disadvantage is that each distinct batch may vary to some degree and high volume production is not always feasible.

The use of pot stills is not uncommon in some territories that retain traditional methods of production, such as Jamaica, Barbados, Guyana and St. Lucia.

Craft distillers typically choose pot stills and hybrid batch stills to give them more control over the process of making artisanal rum. The lesser efficiency and smaller quantities of rum produced often lead to higher production costs compared to the more efficient factory column stills.

The separation of heads, heart and tails in a batch still is a function of time. The first, lightest vapors to condense are heads . Subsequently, the heart of the rum batch is collected for storage before the final stage is discarded for other uses.

a Continuous Column Still produces rum by separating the lighter alcohol compounds from the heavier non-volatile compounds in the fermented wash.

Where Sugar Cane Is Grown For Rum

malibu coconut rum bottle and cocktail beside it

As mentioned above, rum is made in across a large geographical area. Given that the sugar cane is usually locally sourced by the distilleries, it can yield in different flavours according to the soil and climate where it is grown.

That being said, there are a few distilleries in isolated areas that import molasses from other places.

For instance, much of the rum distilled in the Caribbean use molasses imported from Brazil save for a few exceptions. However, the aforementioned rhum agricole must rely on local sugar cane juice.

Nevertheless, where the sugarcane is grown will also contribute to the rich variety of different flavours that rum can produce.

Is All Rum Vegan

Although almost every brand of Rum will be vegan, there are exceptions.

Some will contain honey but if it is clear, and there is no sign of the word honey in the name or on the label, then it is highly likely to be vegan.

Honey is problematic because it exploits bees for the production of their food. When humans remove it, bees are at risk of starvation.

This goes against every cruelty-free rule that vegans stand for, so any rum made with honey should be avoided.

One example of a brand that uses honey is Cayo Grande Club Ronmiel, a Spanish brand.

Not A Serious Rum Really4out Of 10

There are much better coconut rums out there. First thing its like 42 proof so its almost all water and sugar so I cant consider it a true rum, more like a liqueur. With that in mind you cant expect much as far as quality. Opening it you get a sugary coconut smell with no hints of alcohol. Drinking it is much the same you get a very distinct extract of coconut taste with a side of a large portion of sugar cane and thats about it. I prefer other coconut rums that dont use coconut extract because its just not anywhere near comparable to a natural coconut flavor. Which is why this rum loses points because it is beat out by a large amount of competitors. Notes -Not a liquor more a liqueur -Smells of coconut and sugar -Tastes like coconut EXTRACT and sugar cane-There are better rums for the price that use a natural coconut and at higher proof-Very fact manufactured taste

How To Make Spiced Rum

Its very easy to make your own spiced rum at home! Start with a 750 mL bottle of any type of rum. We recommend gold rum, so you get that dark, spiced rum color, but mild flavor with room for your added spices to shine.

Next, pick your spices. You really can use anything you like, but dont go crazy the first time. Heres what we suggest for starters:

  • Three allspice berries
  • Half of a cinnamon stick
  • Half a tablespoon of dried orange peel

Place all dry ingredients into a tight sealing pitcher or jug. Fill with rum. Let sit at room temperature, out of direct sunlight, for 2-3 days. Thats it! Youre ready to drink. Once youve made your first batch, you can experiment with things like rosemary, anise seeds, and herbal teas.
