Quinoa: Fair Quinoa Vodka

Quinoa is most often seen bulking up a grain bowl or sitting beside a main course on your dinner plate. But a two-year joint research project between French distillers and Andean farmers resulted in this superfood finding its way into a bottle. Fair Vodka is a delicate spirit with a light body and a toasty, earthy flavor.

How Is Vodka Made

Vodka is made through a process that involves fermentation, distillation, dilution and filtration. It starts by creating a mash that is left to ferment until ethanol has formed. From there, the raw spirit is distilled to purify it and filter out any unwanted elements that would affect the products flavor, texture or overall characteristics. This process also removes the water that was added earlier, greatly increasing its ABV.

Many brands distill their vodka multiple times to create, what they believe, is the highest quality product possible. For instance, Ciroc, a French vodka, is distilled five times and Absolut Elyx is distilled twice. Not all turn to multiple distillations, though. Grey Goose cites its quality French ingredients as the reason for distilling its vodka only once.

Some alcohols, called rectified spirits, are bottled and sold at this stage of the production process and are so high in alcohol, they are meant to be mixed with water or another liquid before being ingested. One example is Everclear, which can reach 190 proof and is even banned in some states.

Finally, the vodka is bottled and shipped to be imbibed around the world. How do we like it in our neck of the woods? With cranberry or tomato juice, of course.

Strain The Mash Or Liquid Into Your Fermentation Vessel

If a mash was made, strain the liquid with a fine mesh strainer from the mash into your cleaned and sanitized fermentation vessel. Try to splash the liquid and pour it from a distance so that it is well aerated. Yeast needs air initially to grow and start a quality fermentation.

As an alternative, ferment the mash without straining. However, the fermented mash should still be aerated in some manner, possibly with an aquarium air pump and an aeration stone. The mash will also need to be strained before it is added to the still, and it may be more convenient to ferment the smaller volume that results from a strained mash, as the fermenting mash may overflow the vessel.

If juice is to be fermented, aerate by pouring from a height through a sieve or strainer into the fermentation vessel.

Collecting Your Potato Vodka Distillate

Collecting your vodka is probably the most satisfying part of this entire process. This step is part art, part science. It takes a sensitive and experienced distiller to get this process just right.

If you miss the mark slightly on a few of these steps, dont get discouraged. Youll still have a good quality product and youll only get better with practice.

Raw Ingredients And The Typical Flavour Profiles They Impart To Vodka

Wheat: subtle aniseed and pepper, lemon zest. Rye: nutty sweetness, rye bread, brazil nuts.Maize/corn: buttery, corn-on-the-cob.Barley: bready, lightly nutty, brioche sweetness.Potato: creaminess of texture and fuller flavour often slight vegetable notes.Grape: strangely, Cîroc, the leading grape vodka has a slight lemon zest character.

Grain, especially wheat, dominates vodka production as the preferred base with the use of potato also well established. So predominant is the use of grain that the latest EU regulations stipulate, “To take into account consumer expectations about the raw materials used for vodka, especially in the traditional vodka producing Member States, provision should be made for adequate information to be provided on the raw material used where the vodka is made from raw materials of agricultural origin other than cereals and/or potatoes.” Meaning vodkas made from grape and other non-traditional ingredients must declare this on their labels.

Potato varieties used for vodka production are specifically chosen due to their high starch content, typically 25% compared to 17% for eating potatoes. Small potatoes are favoured for distilling, as they are higher in starch than bigger potatoes which are swollen with water. Even with these high starch varieties, it takes 16 tonnes of potatoes to make 1,000 litres of spirit at 96.4% alc./vol.

Choose And Set Up Your Airlock

An airlock is a mechanism that will allow CO2 to escape without letting O2 to get in. Five gallon batches of strained mash can be fermented in a 7.5 gallon food-grade bucket or in 6 gallon carboys.

Lids can be affixed to buckets, as can drilled rubber stoppers to carboys, but when using a lid or a stopper, never seal the vessel completely, as pressure from carbon dioxide production will create explosive pressure. Therefore, affix an airlock to lids and drilled rubber stoppers. If possible, avoid fermentation in an open bucket.

Where Is It Made

Vodka can be made anywhere. The most notable countries include Russia, the Baltic states of Estonia, Latvia and Lithuania, as well as Eastern European countries such as Poland and the Ukraine. Generally speaking, these countries usually make old world or traditional vodkas, which are more robust and flavorful. The base ingredient is more noticeable here.

Scandinavian countries like Finland and Sweden produce more neutral, modern style vodkas. Larger brands, such as Smirnoff and Skyy in the United States, also fall under this umbrella. While American craft distilling has taken off with whiskey production, many brands have tried their hands at vodka. Producing an unaged spirit is a great way for these producers to make some money while they wait for their whiskey to age. All this is to say that you shouldnt assume that all American vodkas are in the modern family.

How Vodka Is Made

The name vodka comes from the Slavic word voda or woda, meaning water. Vodka can be made from a variety of ingredients, and every distillery has its own way of ensuring a unique product, whether it is distilled four times or filtered twice, or maybe the base ingredient is different from the traditional vodkas. Some people say vodka is flavourless or that every vodka tastes the same, but they could not be more wrong. If you are one of those people, I recommend you read this post and try to take part in some vodka tasting hopefully, you will then understand the differences between the many brands and learn to appreciate the spirit.

Ingredients

There are five components when making vodka: vegetables or grain , water, malt meal, yeast and flavourings .

Most commonly, vodka is made from potatoes, corn, rye, barley or wheat. There are a few exceptions, such as Black Cow Vodka, which is made from cows milk. The whey is fermented into a beer using a special yeast that converts the milk sugar into alcohol. Or there is also Ciroc Vodka, which is made from grapes by distilling wine five times.

Water. Pure demineralised water is added at the end of the distillation process to lower the alcohol levels. The legal EU minimum ABV strength is 37.5%, but it is not unusual to have vodkas of up to 50% ABV. In the USA, the minimum for vodka is 40% ABV.

Yeast. It contains enzymes that allow food cells to extract oxygen from starches or sugars, producing alcohol.

What Exactly Is Vodka

Low Ingredient Vodka Cocktails

Vodka, according to the US Alcohol and Tobacco Tax and Trade Bureau or TTB, is a spirit which is, to be without distinctive character, aroma, taste, or color. But this, my friends, is a gross oversimplification. There are many vodkas on the market that have distinctive character, aroma, taste, and yes, sometimes color.

A better definition would be that vodka is a spirit made from any agricultural productmost commonly grains or potatoes. It typically is distilled to 95% ABV . Water is added to dilute the spirit down to bottling proof. Vodka is typically filtered prior to bottling, often with charcoal, and it is usually clear and unaged.

How To Make Infused Vodka

There is a printable recipe at the end of this post.

  • First, wash and peel your oranges. I used 3 or 4 from large oranges and tangerines. Place the fruit aside to eat later and put all the peels inside a jar. This jar needs to have a lid and be large enough to hold the amount of vodka youre wanting to infuse. I used a gallon-sized jar since I was using up a half-gallon of vodka.
  • Slice 2 or 3 vanilla beans lengthwise and slightly open to expose the aromatic paste inside. I used the tip of my knife to loosen some of it but didnt remove it. Place these with the orange peels.
  • Pour the vodka over the peels and vanilla beans.
  • Before you add the lid, give it a stir. Add the lid and set it in a cool, dry, and dark space for a couple of weeks. I just put mine in the garage pantry. I have it a swirl every couple of days.
  • When the vodka has turned a golden color, its time to strain it. Youll need another large jar or large measuring mixing bowl and a cheesecloth. If you dont have a cheesecloth, you can use a smaller strainer or colander lined with coffee filters.
  • Once youve got your liquid and solids separated, youre going to need a funnel, and the bottle youre going to store your newly made orange vanilla-infused vodka recipe.
  • Pour liquid slowly into the bottle. Seal and add the label.

In early 2020, Gigi Hadid posted a recipe for spicy vodka pasta sauce on her Instagram Stories, and I was instantly inspired. Pasta is one of my all-time favorite dinners, and considering the fact that I eat it in some form at least two or three nights a week , I consider myself a pro when it comes to cooking delicious sauces.

But I have to admit, for a long time, I hadn’t tried a spicy vodka pasta sauce before. At the end of 2019, I finally paid a visit to Carbone in New York City, a traditional Italian restaurant that serves a spicy vodka rigatoni dish costing a cool $32. It’s worth every penny hands down, one of the top five pasta dishes I’ve had in my life. I never thought I’d be able to re-create it at home, and I certainly never thought it’d be Gigi Hadid who helped me get one step closer to that dream. So when I saw Gigi’s step-by-step spicy vodka pasta recipe on her Instagram Stories, I knew I had to give it a go.

What Makes Liquor: 10 Expected Base Ingredients

Simple 2 Ingredient Black Russian Cocktail | Grey Goose Vodka

Its easy to imagine a black-and-white photograph of a guy in a ratty cap sitting next to a wash bin full of old shoes. The caption: Shoe whiskey, hard times. But while alcohol can be made from a ton of stuff in a pinch, shoes are not on that list. Necessary for the production of any kind of alcohol is one common element: sugar.

In the absence of oxygen, Saccharomyces yeast strips oxygen from sugar molecules, leaving behind ethanol, aka potable alcohol, which we then distill to make spirits. For centuries, man has relied on this reaction to ease his pain, steel his confidence, stock his medicine cabinet, and generally endure centuries of plague, warfare, and reality TV.

Along the way, weve also figured out that you can get fermentable sugars in a lot of places, meaning you can make liquor from a lot of stuff. From the obvious, and likely earliest, things like grapes , we discovered that certain grains could produce fermentable sugars if we just coaxed them a bit . Even vegetables have proven to be a reliable source of fermentable sugars.

  • Barley: after being malted, it has fermentable sugars, usable in beer or as a base for whiskey
  • Carrots: the high sugar content makes it a prime candidate for fermentation into carrot wine
  • Mares milk: any milk can be fermented, but people living in ancient Russia figured out that mares milk was higher sugar Vermont Spirits currently makes a milk-based vodka
  • Bananas: used in both Kenya and Uganda to make a kind of banana beer

The Real Difference Between Grain Vodka And Potato Vodka

With many liquors, there’s only one way to make them, and one set of ingredients to use. Cognac, for example, you’re not going to be found made out of anything besides grapes . However, vodka is an exception to the rule and can be distilled from a number of ingredients including barley, wheat, rye, potatoes, or corn . Some vodkas from eastern Europe even use grass to make their vodkas.

The leniency for the beverage is because the federal regulations for vodka itself is pretty lenient. While cognac has to come from a certain region of France, vodka just needs to be a clear spirit distilled to 190 proof. This provides for a good amount of leeway in the manufacturing process. Enough leeway, in fact, that some distilleries are experimenting with making vodka out of salmon and old newspapers. Yes, you read that correctly.

Two of the most popular ingredients used in the distillation process for vodka are grains and potatoes. But what’s the difference between the two?
