How To Stretch Pizza Dough

  • Working on a floured surface, with floured hands, softly pat down the risen ball of dough into a circle, rotating it as you do.
  • Using the tips of your fingers, push down gently around the perimeter of the pie, rotating it as you do, to create the edge.
  • Pick up the dough and lightly pass it back and forth between your palms, trying to rotate it each time you do, using gravity to help the dough stretch. At about 12 inches in diameter, the pizza is ready to go.
  • Return the pizza to the floured surface, making sure that the side that you first pressed down on remains facing upward, and gently slide the pie back and forth a few times to make sure that it does not stick. Add a little more flour to the surface beneath the pie if it does.
  • Gently slide a lightly floured pizza peel beneath the pie, or place it carefully on a floured cutting board or the back of a baking pan. Make sure again that the dough can slide back and forth. If it does, the pie is certified for topping.

    Modification For Indoor Oven

If you do not have a pizza oven that can get a stone to 700 degrees, the next best option is to use your oven and a pizza stone. This method is inspired by Ken Forkish, a legend in wood fired pizzas.

Total cooking time : 8 minutes

  • Position your pizza stone to the third slot from the broiler . Preheat your oven and pizza stone to 550 degrees F for 30 minutes.
  • Then put the broiler on high for 10 minutes. This adds more heat to get the pizza stone to 600 degrees F. You dont want the stone on the top slot as the amount of heat may crack the stone.
  • After 10 minutes, turn off broil and adjust the heat back to 550 degrees F and then place the pizza directly on the stone. Cook for two minutes, and then rotate the pizza 180 degrees using a turning pizza peel or tongs.
  • Let cook an additional 4 minutes and then turn the broiler on high. Cook an additional 2 minutes under broiler or until you see the mozzarella melted and the base of the dough cooked.
  • Remove, add finishing salt and then serve.

A Few Tips For This Recipe

    • Plan ahead and dont rush the process. You can make this recipe all in one day, but you need to start the dough first thing in the morning .
    • Make sure you have the right equipment. We love using our Breville pizza oven for this margherita pizza recipe, but a standard oven will do. You for sure want a food scale, a pizza peel, and a pizza stone at minimum.
    • Dont swap the 00 flour for all-purpose flour, bread flour, etc. This recipe calls for the exact type of flour they use in Italy for pizza known as doppio zero flour or double zero flour. Most European markets carry it, and sometimes if were lucky well see it at Whole Foodies, but we find it easiest to just . Its extremely finely ground flour and will give you that delicate crust that will really make you fall in love with this recipe.
    • Make sure that your pizza peel is dry and generously floured before you lay down the dough and assemble each pizza. There is nothing worse than trying to shimmy a pizza onto your pizza stone, only for it to ball up into a sad-looking calzone and waste all of the ingredients
    • Keep it simple on your first try. Sure, we love getting creative with toppings , but if its your first time making homemade pizza, stick with the original recipe and at most add salami to a pie or two. The process of assembling each pizza and baking is a fast one, but the more you practice, the more youll get the hang of it.
