Where Does Tequila Come From

Tequila is a distilled spirit made from the blue agave plant, and it only comes from Mexico. To be called Tequila, by law, it must come from one of five Mexican states: Jalisco , Guanajuato, Nayarit, Michoacán or Tamaulipas.

There are other spirits distilled from agave, but those are called either Mezcal or Destilado de Agave. Similar to the rule in the US for bourbon whiskey, all Tequilas are Mezcals, but not all Mezcals are Tequila. Tequila is classified according to the length of time the spirit was aged. As Tequila ages, it goes from a young Blanco to a more mature Añejo. During the aging process, the Tequilas color and flavors deepen, and the spirit develops a smoother taste.

Let’s Talk About Aging Tequila

The amount of aging and the amount of agave used to make a tequila are what create the different varieties. Each variety has a different type of flavor, aroma, and price point.

In 1977, the Mexican government issued a law that determined that a drink could only be labeled tequila if it was produced in a particular area of Mexico and was made from the Agave Tequilana Weber, commonly known as “blue agave.”

The Mexican government contended that tequila is a cultural product that should only bear that name if distilled from the blue agave plant indigenous to a specific climatic region of Mexico. Most agree that this is the case, and in 2002, UNESCO recognized the;Agave Landscape and Ancient Industrial Facilities of Tequila as a World Heritage Site. I dont drink only cheap tequila, of course, especially when Im writing about some all-inclusive resort and its an open bar. If you want to know my favorites if money is no object, those would be Don Julio 1942 and Clase Azul in the nice porcelain bottle. The 99,000 Horas from my home state of Guanajuato is quite good too and is a terrific value. Cuervos Reserva de la Familia makes a great gift because the artistic box changes each year and it is consistently good, but I personally would have trouble parting with a hundred bucks to purchase it myself.

Despite what the marketers want you to believe, there is very little correlation between price and quality. This is very clear every time you see the winners from spirits competitions where there was a blind taste test. If you see a bottle at the duty-free shop thats $250, you can bet that $200 of that is usually going to marketing and packaging. Those bottles seldom rank the highest in judging competitions. You can often do just as well by spending far less.
