If there are still starches in your mash, the iodine will turn blue. This means that conversion is not yet complete and your mash needs more time. If the mash returns to its normal color, it means that there are no starches present and you are ready to ferment.

While I dont recommend using that super expensive bottle of whiskey your husband bought that has been quietly aging at the back of your liquor cabinet, I do suggest you use a decent quality bourbon whiskey for whiskey mixed drinks.
Dont go crazy spending tons of money because the apple cider and simple syrup will mask the flavor of the whiskey a bit, but you can definitely tell when you use the cheap stuff.
Just ask the clerk at your local liquor store for a suggestion, there are some really great options out there for any budget!

Simple Syrup In Old Fashioned
I dont keep sugar cubes on hand, so I used a half teaspoon of sugar, saturated it with orange bitters, then added a 1/2 teaspoon of water and a strip of orange zest. They were muddled together until the sugar was dissolved, and then I added the whiskey. If you have simple syrup on hand, that could take the place of the sugar and water. You can adjust the amount of sugar to your tastes, but I found that 1/2 teaspoon was plenty sweet enough for me.

I finally chose a fun vanilla scent but I was *this* close to getting something a bit more tropical. I guess Ill hold off on that option till summer. AKA a lifetime away now.

Making moonshine is a three-step process. The first step is making your mash. This step is important because for a grain-based recipe like this one you need to complete a mash conversion.
A grain conversion is essentially when your grains turn from a starch into a fermentable sugar. There are many ways to achieve this. Most moonshine recipes use a malted barley. However, this recipe uses a high temperature enzyme to help with that process.
In addition to these additives, your mash also needs time and temperature in order for conversion to take place.

- Heat a gallon of apple cider, adding 5 pounds of brown sugar when the temp hits 110 °F and a packet of brewer’s yeast when the temp hits 115-120 °F.
- Add the remaining 4 gallons of apple cider, seal the container’s lid, and store the mixture away for 6-10 days.
- To make apple-infused brandy, heat a mixture of apples, cinnamon, and sugar over medium heat.
- Combine white wine, brandy, and your apple mixture in a glass container, then seal the container and store it away for 3 weeks.
