I have long been curious about sugar plums I had a daughter in dance for many many years and had the privilege of watching the Nutcracker multiple times the dance of the Sugar Plum fairy always comes to mind whenever I hear Sugar Plum spoken or written.

Recently my friend Melissa at ChinDeep posted her recipe for Sugar Plums. She made a beautiful video to go with her recipe, featuring that same song that holiday song that plays over and over until I just had to go in the kitchen and MAKE some sugar plums.

I know, this recipe has no plums. I did a little research and discovered that the real sugar plums of old didnt contain any fruit at all. Back then, Sugar Plums were confections made of sugar, seeds and almonds and they were also a:

So I freely admit this recipe below is definitely not authentic. I cant apologize, though, because these little balls of deliciousness have quite stolen my heart the spiced rum adds a delightful twist. They are like Christmas-time energy balls. I incorporated the wonderful spiced rum that we bought at Old New Orleans Rum distillery after an amazing tour .

Does Rum Have More Sugar Than Other Spirits

Not too long ago, we talked about dosagethe addition of a bit of sugar to the final product to determine sweetness levels. It was actually surprising to realize that within all the refinements and rustic precision of sparkling wine production, something so simple as a spoonful of sugar might have a necessary place in the quality of the final product. Lesson learned.

However, we definitely had no idea this was the case for rum. Like corn-heavy bourbon, sugar cane-derived rum is a perceptibly sweeter spirit. And like bourbon, its often described with terms that might fit on a dessert menu: caramel, fig, banana, tropical fruit, vanilla, brown sugar, the list goes on. But we always thought these were just perceptions of flavor that suggested sweetness, especially since no actual sugar can make it through the distilling process. As with bourbon, distilled rum is theoretically sugar-free. Best diet ever!

Here comes the mind-blown/the-more-you-know moment: finished rum is not necessarily sugar free, including many rums you know and love. Thats right, rum can actually have a dosage all its owna small amount of sugar thats added to the finished product to achieve a desired flavor profile.

Not that this impeaches the overall quality of a rum you know and love. Just remember, next time you polish off a tumbler of 23 year, you might wanna brush your teeth.

How Is Rum Spiced

After the distillation process, the manufacturer adds whatever spice they want to make this flavored rum. Spices will lose flavor if added before distillation, rendering the distiller’s imagination meaningless.

Usually, the spices are added near the end of the aging or after the rum has aged to prevent the barrel’s wood from imparting undesired flavor qualities. Depending on the distiller’s choice, the aging can take anywhere from one to six months.

Most jurisdictions require all rums to age for at least a year, and some of the finer Jamaican rums typically age for upwards of five. With modern, mass-produced rums, different ages of rum are blended to create a more consistent flavor, and caramel may be added at the end to create a uniform color from batch to batch.

One of the only things that hasnt changed throughout the ages is that rule that rum is made from cane sugar. The 1771 edition of Encyclopedia Britannica included this definition:

Posts: 1 Kirkland Spiced RumI saw Kirkland Signature Spiced Rum at my local costco yesterday. I think it said it was from St Croix so I assume Cruzan is making it for them. Anyone know for sure? I didn’t grab a bottle yet to try it out but I sure will, just have to drain one that I have in my cabinet to make room

Says it is made from the 1st pressing of pure virgin sugar cane and is distilled 5 times before natural flavorings and caramel coloring is added. Heres How To Make Your Own Spiced Rum

I use a large kilner jar for this, make sure jar is sterilised first.

  • Put all your spices into the jar and add the rind of the orange, remember you only want the zesty outer peel not the bitter white pith.
  • Bash the ginger to release juices and add to jar.
  • Add the sugar and pour on that golden rum.
  • Seal the jar and give it a good shake. Put in a cool dark cupboard and shake every day for the first few days to get the sugar to dissolve completely.
  • After this leave it in there to mature and infuse and become all gorgeous and spicy, 1-2 weeks max.
  • Pour the rum through cheesecloth or kitchen towels/coffee filter into a jug and decant into a pretty bottle and label.

We get it: all the different types of rum out there can get a little bit confusing. That said, when it comes to the difference between spiced rum and dark rum, the distinction is actually pretty similar! It all comes down to flavoring.

Spiced rum has flavor added to it. It is infused with lots of spices, such as cinnamon, cloves, and cardamom. There are many brands that get creative and play around with the spices, adding in things such as pepper and anise. Those spices are what lead to the darker color of this variety.

What Spices Are In Spiced Rum

The aforementioned caramel does play a role, but the specific combination of spices that go into mass market rums are often a closely-guarded secret. Captain Morgan doesn’t give away their recipe for their Original Spiced Gold offering, but they do admit that it features hints of rich vanilla, brown sugar , and “warming spices with just the hint of oak.”

Much like how there’s no one way to make rum, there’s no universal law for how it should be spiced. Aromatics like anise, cloves, and cardamom can often enter the mix, while other more common spices like cinnamon, peppercorns, and nutmeg may appear. Fruits also have a role to play, with certain homemade spiced rum preparations calling for orange as well.

How To Spice Rum At Home

Not only is it possible to spice your own rum at home, it’s also even easier than you’d think. As you may have gleaned from the previous section, there’s a decent chance you already have what you need sitting in your spice rack. There are a few different rum-spicing recipes floating around, which seem to incorporate things like allspice berries, cloves, cinnamon, vanilla beans, nutmeg, orange peels, and cardamom. Of course, most of the fun to be had when infusing your own rum comes from experimentation, and there are certainly worse things to learn to make by trial and error.

Ideally, you’ll want to use 750ml of a moderately aged rum. Adding spices won’t magically turn a light rum into a dark rum, but you don’t want anything that’s aged long enough for the oakiness to really seep in, as it means you’re not working with a blank canvas. From there, it’s all about combining the ingredients with your rum in an airtight, lidded jar, making sure to scrape the seeds away from your vanilla bean before both components are added in. Then, shake and store somewhere that won’t get too much direct sunlight.

Based on what you read earlier about how long rum is aged, you’ll be pleasantly surprised to learn that it only takes two days for your homemade infusion to properly mature. Once those 48 hours are up, pour the whole thing into a new bottle and you’re good to go.
