Basic Moonshine Mash Recipe

Moonshine is a type of alcoholic beverage made from the fermented sugar of malt grains such as oats, cornmeal, or wheat. Moonshine is a powerful alcoholic beverage with a simple formula, which has helped it to become famous over the years as something that can be created by both amateur and professional distillers. Even though there are a plethora of great moonshine recipes out there, here is a basic one that can be customized to suit the items you have on hand or your personal taste preferences.

When you combine flour and water, you get a combination known as a mash. Mashes are also utilized in the production of other alcoholic beverages, such as whiskey.

Prior to distilling, you can strain the mash to remove any solid husks or plant debris that has accumulated.

The alcohol may be removed from the water using a distillation process, and you can enjoy your own superb handmade whiskey as a result of using either the mash or the wash. Tips for making moonshine mashes include the following:

  • It is difficult for corn meal to filter out of a wash, and a cornmeal mash can cause the bottom of a copper still to burn. The greatest alcohol proof is found in the first product produced in a distillation batch. Using a hydrometer, you may check the progress of your yeast fermentation and the amount of alcohol in your mash.

Tips For Advanced Distillers

Advanced distillers should consider adding 2tsp of gypsum to the mash water and adjusting the pH of mash water to somewhere between 5.8 and 6.0 before adding any ingredients. After adding gypsum, add citric or tartaric acid to adjust the pH of the mash water downward. If the pH needs adjusted upward, add calcium carbonate .

A second trick for advanced distillers is using tincture of iodine to determine if all starches have been completely converted into sugar. Drip a few drops of the clear yellow liquid from the top of the mash onto a white plate. Drip a drop or two of the tincture of iodine onto the sample on plate. If it turns blue, there is still starch in the mixture. Rest it longer. Discard the sample.

Origins Of Moonshine Mash

Moonshine arose from the days of the American Revolution. The government to gain money for an extended war effort started a federal tax on alcohol. Since most soldiers returning home, were none too happy about a new tax, right after they fought to get away from an oppressive taxing British rule they began to make their own homemade spirits avoid the tax and enjoy their liquor.

Moonshine Mash is actually corn whiskey to be exact. Bad moonshine could cause you to go blind. Carefully made moonshine could cure a common cold and even fuel a car back in the day. No one knows who the first was first to produce whiskey from corn mash. Corn was harvested in the hot summer months. They would make the whiskey from the corn in the autumn and store it in barrels, then wait til spring to consume it.

When large producers started to ship the whiskey, the mixture would sit in the barrels longer, slowly undulating on the ride there turn the whiskey a golden color, mellow out the flavors, and blend them together, thus aged whiskey was born. Eventually, the corn liquor became bourbon. It has been over 200 years since the first farmers of America started to make this iconic drink.

Most corn whiskeys were made deep in the mountains of Maryland all the way down to Florida. Todays moonshines are made using copper tubing, a pressure cooker, drill set, enormous metal pots, cheesecloth, and cornmeal. Using these items you can build a decent still to make your own corn whiskey.

However, ethanol can be dried to 95% ABV by heating 3A molecular sieves such as 3A zeolite.

Stir the mash every single day, at around the same time of day, according to the directions in this recipe. The fermentation process might take anywhere from 5 to 10 days depending on the circumstances. You will see continual, fairly quick blipping at the beginning of the fermentation period, and towards the conclusion of the fermentation period, you will notice sluggish blipping and finally a complete cessation of activity. If you are not utilizing an airlock, plan on starting the run at least a week before the scheduled start time.

Diluting And Aging The Whiskey

At this point, you have moonshine high ABV whiskey. In order to get it resembling something like you’d find at the store, you need to age the whiskey and dilute it down to 40% – 50% ABV.

  • 1Use a proof and tralle hydrometer to test the ABV of your moonshine. You want to know how strong your moonshine is, both for aging and as an indication of how well your distillation went.
  • Be sure not to confuse the proof and tralle readings on the hydrometer. Your proof will always be two times the amount of the tralle.
  • 2Age the whiskey. If you do decide to age your whiskey, you want it to go into the barrel at around 58% to 70% ABV. Aging will make the whiskey smoother and give it its distinctive taste. Whiskey will only age in barrels. When it is bottled, whiskey will stop aging.
  • Whiskey is generally aged in oak barrels. The barrels can be carefully charred or toasted first, or can be sourced from another distiller that’s kept another spirit in the barrel for added flavor.
  • If you want to add oak flavor to your moonshine but don’t want to have to spring for a barrel, you can also add toasted oak chips to your whiskey. Toast your oak chips over low heat in the oven for an hour, until they are aromatic but not yet charred. Remove and cool. Transfer to whiskey container and steep for 5 – 15 days or longer, depending on your tastes. Strain the whiskey through cheesecloth or a clean pillowcase to catch all the wood chips.

    Basics Of Pot Distillation

There are two basic types of pot distillation:

The first involves a traditional pot still, which has no cooling in the neck or column. The distillate produced is lower in proof than that produced by a reflux still with a fractionating or splitting column. This is the traditional method of distillation and requires multiple runs. The distiller will save up enough low wines from the first runs or stripping runs to fill the still for a second run. If a triple distillation is desired, the product from second distillations are collected until enough spirit is saved to fill the still for the third spirit run, and so on.

The second type of pot distillation is performed in a reflux still equipped such that the column can be cooled during distillation. This type of still is far more efficient and can produce a high proof, high quality spirit in a single run.

    A Brief History Of Moonshine:

The depression, prohibition, and limited access to the mountainous region of Appalachia gave rise to an almost forgotten yet legendary beverage called moonshine. Moonshine used to be a generic term for homemade whiskey. The term was coined due to the fact that early bootleggers often made their whiskey in the middle of the night, under the light of a full moon out of sight of neighbors and the law. These days it actually refers to a robust commercial market of high proof, unaged, and often flavored spirits, such as the products made by Ole Smoky. There is no standard recipe for moonshine it can be made from any combination of grains in any type of still. However, moonshine made in the mountains of Appalachia was traditionally un-aged corn whiskey and was made in copper pot stills.
