0.75 oz Basil infused Blanc Vermouth like Dolin Blanc*
0.75 oz Aperol
Glassware: Rocks or Wine Glass
Garnish: Orange twist and large basil leaf
- In an ice-filled mixing glass, combine the rum, vermouth and campari.
- Stir well, and strain into a rocks glass over a large cube of ice.

Given the oily signature of this sipping rum, the pairings for me are rather obvious. You could easily drink this velvety spirit with an equally luscious dessert: given its not a sweet overkill for you.
Pour a few drops of Ron Zacapa 23 on top of your tiramisu and then enjoy a glass side by side with the Italian dolce a heavenly treat without a doubt.
If you want to contrast and challenge your palate, I would recommend a fresher choice with citrusy top notes, like a key lime pie. Or you could alternatively consider pairing this with a freshly cut ceviche, where the tangy acidity perfectly matches with the rum.
Hands down, the Ron Zacapa 23 is a cigar lovers dream-come-true rum. Smoky, woody, lusciously sweet, velvety in texture, creamy in the finish. Me personally, Id probably choose a Cameroon wrapped cigar.

As you would expect for a rum that sets you back roughly a hundred bucks, the presentation is stellar. The bottle of Ron Zacapa XO is very distinct with a drop-like silhouette, a graciously looking, ornate golden band around the neck, and a rather sturdy and heavy cork to seal. Needless to say, the box is beautifully designed as well.
Given the price tag, this XO is an occasional rum. One would probably take this from the shelve for special occasions or as a present for family and dear friends. Ron Zacapa Xos Palate & Mouthfeel

Taking a sip feels like opening up the doors to a whole new world of taste sensation. Theres ample sweetness in the very front. Theres bitterness in the back. Theres abundant spice on the side of the tongue. Furthermore, a lovely saltiness summarizes an ethereal minerality, that adds another layer of complexity, enhancing and elevating the variety of the aromas.
As for the mouthfeel, a warming sensation offers an oily, mouth-coating charme thats very tantalizing indeed. Spicy nutmeg and smooth milk chocolate make a prominent appearance towards the mid-palate. The next layer brings back the thick marmalade, which I had previously encountered on the nose as well as a warming cinnamon spice.
All in all, the olfactory and gustatory qualities are very much aligned: bitter chocolate, a bit of pipe tobacco, a flavorful melange of espresso crema and dried fruits stand out on the palate as well. This time though, its mostly the dates and the prunes that shine.
Towards the finish of every sip, a freshness emerges yet again and perfectly concludes a holistic palate stimulation with dried orange peel, and a whiff of cardamom thrown in there for good measure.
The finish is both mouth-coating and mouth-watering at the same time. You could chew on this rum for an hour, and youd find new aromatic qualities and taste sensations with every sip.

Yeah, kidding. Its still rum. But Ron Zacapa was in fact developed by a chemist. Local Guatemalan doctor Alejandro Burgaleta tinkered with the distillation and stabilization of his rum for some time before finally unveiling the first bottle of Ron Zacapa Centenario in 1976, on the centennial anniversary of the town of Zacapa in eastern Guatemala. The rum quickly became one of the countrys marquee products, a source of pride in terroir and technology, ideally enjoyed in moderation. So yes, a far cry from the days when dreamy-eyed fake physicians suggested you give your throat a vacation and smoke a fresh cigarette.

Zacapa Rum is produced on Guatemala and distributed by Diageo. The land of the ancient Mayans has a diverse geography with several volcanos and diverse microclimates that contribute to the complexity of these rums.

Id personally recommend that you try this XO rum neat. My glass of choice is always a tulip-shaped nosing glass, intensifying and concentrating the aromas towards the nose in a perfect way.

Lets start with a short introduction into Zacapa as it is about the rum that helped to elevate Ron Zacapa from start up bottler into a world renown bottler of rum and producing the top rated, dog-lickin sweet and heavenly Zacapa Solera rum. This 23 is a special bottling that was present at the Pernod Ricard Global Beverage Conclave last year in London. This is not the normal USD3.75 93 proof Zacapa 23, instead, it is a special bottling. In actuality, this is a special case of a silver treasure doll, specially designed to highlight the 23 years old claim.
A very ultra dark amber coloured rum. No other word to describe it, other than to say its very intense!
A very strong raisiny, honey and vinegar profile. Delicious!
A very well balanced rum! I dont find it to be too sweet, but it is extremely pleasant and drinkable. It reminds me more of a full bodied white chocolate white wine than a white rum. It finishes long and warm with no burn and absolutely no aftertaste at all. There is nothing really that some might classify as a bite to this rum, but it is certainly there and if you are a white rum drinker, it could potentially be an issue for you.
Overall I think this rum would be a great rum to mix with white milk-based cocktails such as a Harvey Wallbanger or a White Russian. It would perhaps just work best in the wake of the classic Tom Collins. I think this rum would be best suited as a shot.
Zacapa Rum And How To Drink It
In the highlands of Guatemalas Quetzaltenango department, fields of sugar cane grow in cool mountain valleys, graced by rain showers from May through October and exposed to the sun the other half of the year. This is the home of Zacapa, the pride of Guatemalan rum and multi award-winner at the International Rum Festival.
Zacapas flagship is their Ron Zacapa Centenario 23, a fine spirit blend of rums between the ages of 6 and 23 years old. Like the finest Scotch, Zacapa can be served neat and savored in a tapered brandy snifter with one cube of ice added to release notes of honeyed butterscotch, spiced oak, and dried fruit. The unique complexity of Zacapa comes from a dynamic altitude aging process known as solera. This involves transferring the blended rums, pressed from virgin sugar cane, from one barrel to another.
