History Of The Daiquiri

Although the Daiquiri originated in Cuba, cocktail lore attributes the rum sours creation to Jennings Cox, an American mining executive working near Daiquiri, Cuba at the turn of the 20th century. The exact details of the drinks origin are as cloudy as a blended cocktail but the recipe has stood the test of time.

My mother made Bacardi Rum Cake for Christmas since I was a little girl! And she is bringing her cake for Christmas this year. Bacardi Rum Cake is the taste of Christmas to me and my family. Its beautiful and so so delicious and easy to make because its made with a box cake mix!

If you need an idea for an easy and just so delicious cake try this flavored filled bundt cake.

I baked two Bacardi Rum Cakes two days in a row and heres why

The first Rum Cake I made with my three-year-old grandson Alexander as my sous chef. He brought along his dump truck to put any trash in. He was a wonderful little cook! Cracking eggs, and string the cake, and pouring in all the ingredients into the bowl.

However, the first rum cake is overbaked just a little because we were busy counting the nuts that were not put in the cake, and then, of course, we had to put them in the dump truck one by one and put them in the trash.

I never had so much fun putting things in the trash! I heard the timer and turned it off but just then we had a little three-year-old meltdown so the cake got a little too brown.

The good news is Alexander recovered from his meltdown and had a blast, he and his brother LOVED the cake

And my heart was full to overflowing and the handy dump truck did a good job! Happiness all round!

But, alas, the cake was too overdone!

I am exclusively a rum drinker OP. Its not my original preference, but vodka doesnt agree with my liver. I agree that Coke or Diet Coke with lime is the best way to enjoy Bacardi Gold. If you want something a tad more festive and fun, add a TBS of pineapple-coconut rum to the mix. It makes a Cuba Libre with a tropical twist which feels like you are on vacation. Coke with pineapple-coconut rum alone is way too sweet and it packs no punch since the alcohol content of the p-c rum is much lower.
