The Post Chicken And Beer

The Post Brewing Company in Lafayette was once home to the Veterans of Foreign Wars Post 1771. When the Big Red F Restaurant Group purchased the building and announced that they would be opening a brewery, they decided to name it The Post in order to pay homage to the buildings history.

Bryan Selders is the man in charge of the brewhouse at The Post. You might recognize him from the Discovery Channels show Brewmasters, which featured Dogfish Head Brewery, where Selders previously brewed. He has been a partner with The Post since it opened in 2013 and he is in charge of brewing the Achtertuin Seizon, a beer that won gold in the 2016 Great American Beer Festival under the Classic Saison category.

Aside from serving world-class beer, The Post also operates as a finger-lickin fried chicken joint that serves anything from a 12-piece bucket to a plate of delectable chicken and waffles. They do a special each night for dinner that features items such as a chicken potpie, prime rib or other entrees, depending on the night of the week.

The Post has since opened additional locations in funky buildings in Longmont, Denver, Boulder, Estes Park and Fort Collins.

We start with humanely raised, all natural chicken, brine it for hours, give it a dip in buttermilk, dredge it in seasoned gluten-free flour, and then pressure fry it to crisp golden perfection. We rest it for a few minutes to let the flavors meld and season it with our spicy goodness shaker. All that love, care, and attention to detail makes our bird simply mouth-wateringly delicious.
