  • In a large stainless steel pot bring your water to 156ºF.

  • Dissolve the Campden tablet into the water.

  • Place the mesh bag or cloth into the pot, and slowly stir in the crushed Munich malt.

  • Cover the pot, and maintain 154ºF for 1 hour – wrap in blankets / towels if needed.

  • After 1 hour, remove the bag of grain and squeeze out as much liquid as possible.

  • Bring the pot to a boil.

  • Once boiling, add the Cascade hops and boil uncovered for 1 hour.

  • At the last 10 minutes of the boil, add in the Citra hops.

  • Remove from the stove, and chill the pot to 60ºF as quickly as possible.

  • Carefully transfer the wort to a cleaned and sanitised 5 litre jug, add the yeast, and seal with an airlock.

  • Leave at room temp for 2 weeks out of direct sunlight.

  • Clean and sanitise beer bottles.

  • Add 1 1/5 teaspoons of sugar to each bottle, and then carefully fill each bottle with beer.

  • Leave bottles at room temp for two weeks before transferring to the fridge to chill. Be careful, if the beers over ferment they run the risk of exploding. Box them up to avoid any damage in case this happens.

  • Campden tablet ready to add to the water.

    There are 4 main ingredients in beer: hops, grains or malt extract , yeast and water.

    Once you have attained the reading, you can calculate the alcohol content by subtracting the FG from the OG, then multiplying that number by 131 so, OG FG x 131.

    The Basics Of Brewing Beer

    Lets cover the basics first, the needs to know so you realise what youre getting into. Stripped right back, there are 2 ways to brew beer. One being deemed the beginner method and the other being the professional way

    The basics of beer making is pretty simple on paper. All you need is grains, hops, yeast and water.

    For any alcoholic fermentation you need yeast and sugar. Yeast turns sugar into alcohol and Co2. Meaning that even though you start with a high amount of sugar, you actually end up with a dry product because the sugars have been transformed into alcohol. Trapping that fermentation forces the Co2 into the liquid creating bubbles like in beer or sparkling wine. Allowing the Co2 to escape creates a still product like still wine.

    In the case beer, the sugars are converted from starch in the grains. The water is added to add volume, hops are the flavourings of beer, thats what youre tasting and the yeast does all the heavy lifting, it was kick starts the fermentation.

    Expert All Grain Brewing

    Dont let the word expert put you off once I made beer a few times I started to wonder why I thought it was so hard. In some ways, all-grain brewing is like baking a cake or making a loaf of bread make sure you get the stages correct and you will get good results. The term all-grain basically means all of your sugars that will ferment into beer will come directly from the grain, without taking the short cut of using malt extract. To do so, you will need to undertake a process known as mashing this means keeping the grains at a specific temperature for long enough for the starches to turn to sugars. You will need a very large boiling pan, however.

    Method:

  • Heat half the water to 75°C and pour into a sterilised picnic cool box. Place the grains into the cool box and put the lid on. Leave for an hour. You can use a muslin bag to contain the grains.
  • After an hour, strain the water into a large pan. Heat another 5l of water to 75°C and pour this over the grains. Strain this into the boiler. Repeat with the final 5l of water.
  • Place the hops into a square of muslin cloth and tie up the corners to save mess. Dangle this into the boiler and boil for one hour. Stir occasionally. After an hour, strain into a fermentation bin.
  • Fit the lid and leave to ferment for between four and 14 days, or until your hydrometer gives a stable reading over a few days.

    The One Catch Is That You Need Some Equipment

    Actually, the other catch is that home-brewing geeks insist on using another language to talk about their craft. For example, they say “pitch the yeast” instead of “put the yeast in there” or “racking” instead of “transferring beer from one container to another,” etc. I will not use those terms in this post.

    The easiest thing is to get an equipment kit. The one we were sent was a deluxe kit , but you don’t need to spend that much.     Put bottled beer in a warm , dark place for about two weeks. This will allow the yeast to metabolize the sugar and create carbon dioxide to carbonate your beer. Keeping the beer away from UV light will preserve the quality and flavor of the beer.

    Depending on your beer, the flavor might improve over time.     Brewing yeast can come in dry or liquid form with each having its own advantages over the other. Use of each type is at the discretion of the brewer, but regardless of which type you choose to use, ensure that your yeast is ready for pitching.

    • Dry Yeast Commonly found in ingredient kits, dry yeast will not require activation but should be at room temperature.
    • Liquid Yeast Liquid yeast, on the other hand, will require activation by vigorously shaking the container and perhaps even creating a yeast starter prior to pitching. A yeast starter will simply prime the yeast for fermentation by allowing it to multiply prior to pitching.

    Now that the yeast has joined the party and the mixture is properly aerated, secure an airtight lid on the vessel and securely insert a sanitized airlock or similar blow-off valve that will allow CO2 gases to escape while preventing outside air from entering.

    The initial gravity of the brew can be measured using a hydrometer. Measuring the initial gravity of the brew will let the brewer know how the process of fermentation is going based on the amount of sugar present in the beer.

    We often get asked, How long does it take to brew homemade beer? Thing is, there are so many variables involved that its not possible to give 1 definitive answer that will be accurate for everyone.

    That said, if you have all the necessary equipment , it can take about 3 hours to brew at home.

    Now that thats settled lets go through the brewing process. Remember were using the extract method and that assumes youve purchased a brew kit.

    An Overview Of The Brewing Process

    Brewing consists of five simple stages.

  • Brewing the Beer Pale malt extract and hops are boiled together with water for about an hour to sterilize the extract and release the bittering qualities of the hops. Frequently grains are steeped in the mixture prior to the boil to add additional color and flavor complexity.
  • Cooling and Fermenting The hot mixture is cooled to room temperature and siphoned or transferred to a fermenter where it is combined with additional water to achieve the desired 5 gallon batch size. Once the mixture drops to room temperature, yeast is added to start the fermentation process. Cleanliness and sanitation are very important since the wort can be easily infected by bacteria in this state. An airlock is used to keep the fermenter sealed during fermentation.   • Priming and Bottling Once the beer is fully fermented, it is siphoned to another container to prepare for bottling. Here priming sugars such as corn sugar sugar are mixed with the beer. The beer is siphoned into bottles and each bottle is capped with a bottle capping device.
  • Drinking When the beer is properly aged just put the bottles in the fridge and enjoy! Theres nothing quite like a great beer that you made yourself.
  • This is the five step process for making your own beer. The brewing portion takes a few hours, and bottling and transferring take another hour+ spread out over a few weeks.

    Add The Hops And Whirlfloc Tablet

    How To Make Beer Easy At Home

    Take your hops and place them in a muslin bag in the grains. Tie it off and suspend the bag in the boiling wort for about 90 minutes.

    The purpose of the hops is to counteract the sweetness of malt.

    About 15 minutes after suspending the bag of hops, add a Whirlfloc tablet to sanitize the beer.

    Why 90 minutes? Boiling the hops for this long will effectively get rid of approximately 80% of the DMS content. DMS is a sulfur compound that is a by-product of the fermentation process. The smell of cooked or creamed corn indicates the presence of DMS in your brew.

    It is also important to keep the lid off the brew pot while boiling the hops.

    Covering the brew pot prevents the DMS from escaping, and it will simply end up back in your beer.
