If youre looking for a traditional Whiskey Sour Traditionally, an 80-proof bourbon is used as the basis, which lends a hint of vanilla and wood to the drink without dominating the sweet vs sour battle that is taking place in the glass. We used Basil Haydens 80-proof whiskey to make our traditional Whiskey Sour, but any mid-range, 80-proof bourbon would suffice.

Or Mix Up Single Drinks

You can also use the standard cocktail shaker method with this whiskey sour mix recipe. Place the sour mix and whiskey into the cocktail shaker, add ice, and shake! This is nice if youre planning to store the mix and just get it out for single drinks on different occasions. Bonus: you can also add an egg white to the whiskey sour using that method to get the classic retro foam topping.

An Easy Whiskey Cocktail

As we steer away from the warm summer months to the cooler fall weather, I find myself reaching less for the refreshing fruity cocktails and and more for the drinks that warm you from the inside out. And one of my go-to drinks is a Whiskey Sour.

Sure, you can enjoy this simple whiskey cocktail anytime but to me, the slow sips of that sweet tart taste with the warmth of whiskey are just perfect for fall. Though super simple to make , a whiskey sour always feels like a special cocktail.

Its a great drink to serve guests as well. Friends served us this cocktail last fall, before treating us to some awesome pizzas from their new outdoor pizza oven. And since we recently flipped the calendar to September, I cant get this beautiful cocktail off my mind!

Some whiskey sours include egg whites but I skipped that and stuck with the traditional bourbon sour bourbon whiskey, lemon juice, and simple syrup, shaken and served over ice. No unique twists here, just a simple, timeless classic!

Here are a couple more cocktails that are perfect for fall: This Apple Sangria with Bourbon and Thyme is wonderful for an evening around the bonfire. And friends always love this Cranberry Gin and Tonic!

And you might want to skip pouring over ice if you are adding eggs, many drinkers feel ice cubes, and egg froth doesnt mix. Ice can also cause the egg proteins to break apart too quickly. Instead, try shaking with ice and pouring straight.

You will want the egg whites to be shaken with all the other ingredients*. Otherwise, you miss the point. Shaking blends the eggs and froths them up!

*There is some argument about this method. There are those who say you should dry shake the eggs first to froth them up, wet shake the other ingredients separately, and then combine. I say no. Blending them together is half the fun! But it is up to you.

Personally, this is my favorite version of a Whiskey Sour. I first experienced it in a little speakeasy in Rochester, NY. Its hidden behind a padded door. Its dimly lit. The bartenders wear bowties. And they prepare drinks the old-fashioned way.

I ordered a whiskey sour and was presented with this frothy white mixture that I stared at in horror for a moment or two. Until I tried it and realized Id been doing Whiskey Sours wrong my whole life.

So definitely give it a shot. Its worth it.

Diluting And Aging The Whiskey

How to Make a Whiskey Sour

At this point, you have moonshine high ABV whiskey. In order to get it resembling something like you’d find at the store, you need to age the whiskey and dilute it down to 40% – 50% ABV.

  • 1Use a proof and tralle hydrometer to test the ABV of your moonshine. You want to know how strong your moonshine is, both for aging and as an indication of how well your distillation went.
  • Be sure not to confuse the proof and tralle readings on the hydrometer. Your proof will always be two times the amount of the tralle.
  • 2Age the whiskey. If you do decide to age your whiskey, you want it to go into the barrel at around 58% to 70% ABV. Aging will make the whiskey smoother and give it its distinctive taste. Whiskey will only age in barrels. When it is bottled, whiskey will stop aging.
  • Whiskey is generally aged in oak barrels. The barrels can be carefully charred or toasted first, or can be sourced from another distiller that’s kept another spirit in the barrel for added flavor.
  • If you want to add oak flavor to your moonshine but don’t want to have to spring for a barrel, you can also add toasted oak chips to your whiskey. Toast your oak chips over low heat in the oven for an hour, until they are aromatic but not yet charred. Remove and cool. Transfer to whiskey container and steep for 5 – 15 days or longer, depending on your tastes. Strain the whiskey through cheesecloth or a clean pillowcase to catch all the wood chips.

    • 0.75 oz. fresh lemon juice
    • 0.75 oz. maple syrup
    • 1 thin slice of ginger

Muddle ginger in the bottom of a shaker tin. Add liquid ingredients, add ice, seal tins and shake hard for 6 to 10 seconds. Strain over fresh ice in a rocks glass, and garnish with a lemon wheel.

Using a different kind of sweetness is a fun and interesting way to mix it up a little and circumvent the need for an egg white. If you used honey syrup instead of simple syrup, it would be called a Gold Rush and has a story all its own, but one of my favorite things to do is to recruit the depth of fresh maple syrup and the spice of ginger, which are a wonderful foil to the bourbon and dont bind to the tannins so much as provide such an interesting side show that your palate doesnt really mind.

For bourbon here, Id say 45 percent ABV is a maximum. Buffalo Trace, as always, is a wonderful choice, but this is great with the less expensive end as well, like Evan Williams Black Label or Jim Beam or even a Tennessee whiskey like Jack Daniels.

Sprouting The Corn And Making The Mash

Sprouting kernel corn is a simple matter of getting it wet and allowing small sprouts to grow. Once the corn is sprouted, it’s ready to be made into a mash. A mash is a combination of warm water and grain. The enzymes in the mash break down the starch in the grain and produce sugar.

  • 1Start the sprouting process by soaking the corn with warm water. Place 10 lbs. of untreated kernel corn in a burlap sack and place that burlap sack in a larger bucket or container. Then, saturate the burlap sack with warm water. Make sure the corn is completely and evenly soaked.
  • Why sprout the corn for whiskey? In short, sprouting eliminates the need for added sugar in the mash, allowing you to get a more authentic whiskey. Also called “malting,” sprouting causes enzymes in the corn to convert starches to sugar.XResearch source Those sugars then become the building blocks of the alcohol in the whiskey.
  • 2Let the kernel corn sprout for 8 to 10 days. Keep the bag in a warm, dark environment, such as a well-insulated garage or basement. Make sure the corn remains damp for about a week and a half. During the sprouting phase, keep the temperature of the corn between 62° and 86° F .Advertisement
  • 3Remove the sprouted ends from the corn. Wait for the sprouts to grow 1/4 in. long, and then rinse the corn in a bucket of clean water. While doing so, remove as many of the sprouted roots as possible by hand. Discard the sprouts. Reserve the corn.

One of the beautiful things about adding an egg white to your cocktail is the rich, creamy texture it imparts. To get a nice, foamy drink, try one of these shaking styles:

  • A Dry Shake: Shake the cocktail first without ice, and then add the ice and shake again.
  • A Reverse Dry Shake: Shake the cocktail with ice first strain the ice out, and re-shake.
  • I prefer the texture imparted by the traditional dry shake, but if you want to get a truly ridiculous amount of foam, the reverse dry shake is the way to go.

Bourbon: Choosing a bourbon for this cocktail shouldnt be difficult. I recommend a good value bottle, something in the price range of $15 to $25. Next time youre at a cocktail bar you like, ask the bartender which specific bottles of any given spirit they have in their well bar. This is a great way to find out whats good, both for your home bar and your budget.

Lemon juice: Next up, fresh-squeezed lemon juice. Ill say it again because this is so important: fresh-squeezed lemon juice. Gone are the days of using cheap mixes. If you want the absolute best whiskey sour you ever did taste in your life, then you need the real-deal fresh juice. Simple as that!

Simple syrup: For the sweetener, use a simple syrup . There are several whiskey sour recipes out there that call for a heaping bar spoon of sugar. Youre free to go this route, but simple syrup combines so much better, so I prefer and recommend this.

What Kind Of Whiskey Should I Use

    Homemade Whiskey Sour

The Whiskey Sour is a very versatile drink you can make it with bourbon, rye, Tennessee whiskey, or even scotch. I like it best with rye whiskey for a little extra spice and edge to balance out the drink’s sweetness, but feel free to try this with whatever whiskey you happen to have around.

If you’re buying specifically for this drink, I wouldn’t go for anything too expensive, since the lemon and sugar will cover the complexities that set those whiskeys apart. For rye, Rittenhouse and Old Overholt are very nice for bourbon, try Four Roses or Wild Turkey.
