From there, the grains are heated in peat smoke, mashed, fermented, distilled, and then left to mature in oak barrels.

Wheat, barley, corn, rye, and other grains are used in addition to barley, corn, and rye. require barley grain to be treated in order to extract the sugars. The Whiskey is aged in wooden casks, which are frequently new or used when aging other alcohols. When distilled, a fermented liquid is added more alcohol by heating it up in a vapor and then condensing it back into a liquid. There are two main types of stills: pot stills and column stills. Depending on the volume of the drink, column stills can reach a concentration of 95% alcohol by volume.

  • Add the Turbo Carbon this is important to absorb impurities produced by the yeast during fermentation.
  • Add the Whisky Yeast and leave to ferment for seven days at 22 28°C. Lower temperatures are fine down to 15C but will double fermentation time. Higher temperatures will increase flavour and aroma production of the yeast.
  • After the fermentation, add Turbo Clear to remove More than 99% of the solids . Don’t worry if the wash remains hazy after treatment with Turbo clear. It’s more important that the wash doesn’t sit on the spent yeast for more than 24hrs rather than trying to remove the last 1% solids, so go ahead and distil the wash one day after adding Turbo clear even if it is still hazy.

What Happens If You Distill Whiskey

When distilled, the liquid is added to the fermented liquid by heating it into a vapor and then condensing it back into the distilled liquid. Distillation takes place as a result of the still being in place. A pot still is the most common type of still, whereas a column still is the least common. The majority of column stills are used for bourbon, rye, and other American whiskeys.

The Three Different Types Of Stills Used In Whisky Production

The second distillation takes place in a pot still. Because there is only a small still head, the pots heating is direct. At temperatures ranging from 180F to 82F, this substance exhibits a high level of heat. The pot still produces a much higher amount of liquid than the wash still. It usually takes 10 to 12 hours for the distillation to come to an end. A third distillation takes place in a Coffey still. The Coffey, despite being an older model, still has a large still head and is heated by indirect fire. It has a temperature of 205F and a melting point of 205F . The Coffey remains a very high-quality product, and it is used in grain whisky production. It is typically completed between the hours of 18 and 24.

There are numerous good yeast options whenfermenting a whiskey wash. You couldalso use a generic yeast like bakers yeast, but youre selling your whiskeyshort and really not saving much money . All good yeast options are listed in the WhiskeyYeast section of our website, including many beer yeasts that live adouble-life.

Its important to choose a yeast with an alcoholtolerance high enough for the wash you want to ferment. Our basic whiskey maltpacks target a wash at 14% ABV, which can be a bit too high for some yeasts. For beginners, its best to start with a Whiskey Distillers Yeast*.

*Note 1: If the yeast doesnt come in a pack withnutrient and glucoamylase enzyme, its important to add these separately.

*Note 2: Our own Bourbon / American Whiskey yeastpack contains nutrient and glucoamylase, but it has a slightly lower alcoholtolerance and may struggle with 14% ABV. This is best matched to our AmericanWhiskey malt packs.

    Still Ownership Myth #:

Another myth is that if you own a whiskey or moonshine still, you are not allowed to keep it in your home, and must keep it outside or in a special building – even if you never operate the still.

This is also false. Federal distilling law does not place regulations on how you must keep or care for a still that is being used for legal purposes like decoration, collection, or safe distilling of water and botanical oils.

Determining The Safety And Taste Of Your Whiskey

When it comes to the whisky youve produced though, you should ensure that your whisky is safe to drink. In a five-gallon batch, you would typically throw out the first one hundred millilitres of alcohol. When making whiskey on a smaller scale this will likely be akin simply throwing out the contents of the first yield. The reason for this being that it can be dangerous to drink due to potentially containing something akin to pure methanol.

Additionally, though, the first yield is likely to be tainted by anything within the still. This typically means the previous things distilled in it. As such, the flavour you are striving toward will be contaminated. Fortunately though, by getting rid of the initial yield you will also be removing the contaminants. The reason for this being that this initial yield will have flushed the contaminants from the system.

    Getting Your Fermentation Just Right

“At first, it will go from the sweetest oatmeal you’ve ever had, to something that is fairly sour. That’s the first sign that you are converting your sugar into alcohol. The absence of sugar means the yeast has done its job,” Katz said, describing the fermentation process. On a larger scale, this should only take a few days. But at home, on a smaller scale without precise temperature management, it could take a little bit longer. Unfortunately, when you’re working from home, it’s an inexact science. Again, a home brewing kit might be able to help you keep things consistent and a little more precise. You probably shouldn’t ferment for more than a week, and you can certainly taste test your product along the way as much as you’d like. Katz even recommends heading to your local distillery to figure out how your mash should taste before you start the distilling process.

How To Make Whiskey At Home

Whiskey is a distilled alcoholic beverage made from fermented grains aged in wood casks. The grains used can be anything from barley, corn, rye, or wheat. They are often cracked open to release sugars that aid in the process of fermentation.

To make whiskey, first malted barley must be mashed to extract its sugars which is then fermented into a crude beer. That beer is then distilled usually two or three times until the resulting spirit is a clear in color and around 60% ABV. This is put in barrels to be in contact with toasted or charred oak to age for at least 6 months before being ready to be bottled and consumed
